This is something my Mom made for us as kids, so I class it as kid friendly. I still make this on a regular basis when I'm looking for some warm comfort.

Yield 2-3 serving(s)

Number Of Ingredients 7

1 medium onion, diced
2 beef hot dogs (there would be 8 in a 1lb pkg)
1 (10 1/2 ounce) can vegetable soup, condensed
1 (10 1/2 ounce) can water
1/3 cup instant rice
1/4 teaspoon black pepper
1/4 cup fresh parsley, minced

Steps:

  • Preheat oven to 350°F.
  • Dice onion and add to a 2 qt casserole dish that has a lid.
  • Slice weiners into 1/2 inch thick coins and add to onion.
  • Mix soup into weiners & onion.
  • Add water and stir until soup is dissolved.
  • Add rice, black pepper, parsley & stir again.
  • Bake for 10 minutes with lid off.
  • Remove from oven & stir.
  • Bake for an additional 25-35 minutes with lid on.

OLD MOTHER HUBBARD WEINER CASSEROLE

This is something my 9 year old and I came up with one night when we went to make dinner and the cupboard was bare! While certainly not gourmet food, it's a real kid pleaser, and I thought it wasn't too bad either. Quick and easy for a weeknight meal when you have little time and nothing thawed! Make it a little more zippy for adult tastes by adding cumin and chopped cilantro or a little curry if you'd like.

1/2 cup minced onion
6 hot dogs
1 (10 ounce) can chicken noodle soup
15 ounces water
1 cup frozen vegetables, of your choice
2/3 cup instant rice
1/4 cup ketchup
1/2 cup grated cheddar cheese

Steps:

  • Slice weiners into pieces and add all ingredients except the cheese to a 2 quart casserole dish, and mix well.
  • Cook in microwave until liquid is absorbed (approx 15 minutes or so).
  • Top with cheese and microwave it again until cheese is melted, or pop it into the oven if you want the cheese to be a little more crusty.

NACHO BEEF AND WEINER CASSEROLE

Unique and really good casserole. My sister was sick and I took this over to them to help out with dinner with other casseroles and this was the first one they grabbed to eat.

1/2 bag(s) nacho cheese doritos.
8 oz rotini pasta cooked and drained
2 tsp olive oil
2 medium jalapeno's seeded and minced
1 red onion chopped
1 lb ground beef
1 can(s) cheddar cheese soup
1 c whipped cream cheese
2 tsp honey mustard
1 pkg velvetta mac and cheese sauce
8 hot dogs
6 slice american cheese cubed
2 c shredded mexican blend cheese
4 clove garlic minced

Steps:

  • 1. Preheat oven 350 degrees.
  • 2. Crush Dorito's and place in bottom of 9 x 13 greased pan.
  • 3. Heat oil in skillet and add jalapeno, red onion, and garlic. Cook 3 minutes. Add beef and cook until browned. Drain
  • 4. In med bowl combine soup, cream cheese, honey mustard, and Velvetta cheese sauce together. Stir in beef mixture and pasta. Add diced American cheese, and hot dogs. Place on top of Dorito's. Bake for 50 minutes. Top with Mexican blend cheese and return to oven for 10 more minutes.

My mom would make this for us every Saturday growing up; we loved it!!! I made it for my husband when we first got married, and he still asks for it all the time... It's SOOO easy!

2 (16 ounce) cans pork & beans
1/3 cup catsup
2 tablespoons brown sugar
10 hot dogs, sliced
1 (1 1/4 ounce) envelope dry onion soup mix
1/4 cup water
1 tablespoon prepared mustard
hot sauce (optional)

Steps:

  • Mix all ingredients together. Bake uncovered for 1 hour at 350 degrees in a 2 quart casserole or equivalent square or rectangular pan.
  • Note: I have also made this vegetarian and vegan by substituting soy hot dogs and vegetarian baked beans and replacing the onion soup mix with dried minced onions, garlic powder and salt.

Of course I added other ingredients that I had on hand to come up with this version, but the results were really amazing. My husband remarked how good they were without my even asking if he liked...

8 bun length hot dogs, divided
2 can(s) pork n beans (15 oz)
2 can(s) butter beans (15 1/2 oz) drained
1 can(s) ginger ale (12 oz size)
1 1/2 c ginger snap cookies ( about 21 cookies)
1 1/2 Tbsp liquid smoke
1 medium red onion, chopped
1 medium yellow or white onion, chopped
1/3 c dark molasses
6 slice bacon cut up & cooked
1/3 c yellow mustard
3/4 c catsup (i prefer heinz)
1 box jiffy corn bread mix ( prepared according to pkg directions)
2 tsp onion powder
1 c brown sugar (firmly packed)

Steps:

  • 1. Preheat oven to 375 degrees F. Spray a 9 X 13 dish with non stick cooking spray and set aside.
  • 2. Cut 6 hot dogs into 1 1/2 inch size pieces.
  • 3. Chop both onions.
  • 4. Cut bacon into small pieces and cook till nearly crisp. Saute onions in bacon fat.
  • 5. Add pork N beans, butter beans, chunk hot dogs, mustard, & sauteed onions, to a large bowl.
  • 6. Add catsup.
  • 7. Add ginger ale.
  • 8. Add Crushed ginger snap cookies,liquid smoke, molasses, cooked Bacon & brown sugar.
  • 9. Stir to blend together.
  • 10. Pour into prepared casserole dish.
  • 11. Prepare Jiffy corn muffin mix according to package directions, but add 2 teaspoons of onion powder to the mix. Allow to rest for 4 minutes, then add spoon fulls of batter over the top of the casserole . Dot corn bread with the remaining 2 hot dogs cut into chunks.
  • 12. Bake in preheated 375 degree F. Oven for 45 minutes.
  • 13. Remove from oven and serve while still hot.
