It's really tasty, plus it has 26 grams of protein to keep you full. This is a very basic recipe, there are many variations you could create by adding new ingredients to it--just keep in mind that the point value might change...

4 tablespoons kraft fat-free Miracle Whip
1/2 teaspoon black pepper
2 cups lettuce
4 buena vida whole wheat tortillas
16 ounces premium chunk chicken

Steps:

  • Mix the miracle whip and chicken.
  • Top the mixture with lettuce.
  • Season it with pepper or whatever you have a taste for, and place inside tortilla.
  • Enjoy!

1 lb uncooked boneless skinless chicken breast
1/2 cup celery, finely diced
1/3 cup dill pickles or 1/3 cup sweet gherkin, finely diced
1/4 cup reduced-calorie mayonnaise
2 tablespoons reduced-fat sour cream
2 tablespoons fresh parsley, chopped
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • Place chicken in a large saucepan and pour in enough water to cover it; set pan over high heat and bring to a boil. Boil until chicken is cooked through, about 10 minutes; drain. When chicken is cool enough to handle, cut into 1-inch cubes.
  • Transfer chicken to a large bowl and add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper; mix until blended. Yields about 1 cup per serving.
  • For a Waldorf-like chicken salad, stir in 1/3 cup of diced apples and 2 tablespoons of chopped walnuts (for a total points value of 5 per serving).

This is a very flavourful, flexible recipe. If serving immediately, I add baby plum tomatoes but these can make the dressing thin if it's being stored before serving. If you cannot find korma powder, just use 1tbsp + 1tsp curry powder. I use penne for this recipe- if you are counting propoints, it's probably best to weigh the pasta to 150g as it varies so much by volume. This serves 4 as a smaller lunch portion or 2-3 as a main dinner dish.

3/4 cup virtually fat free plain yogurt (200g)
4 tablespoons lowest fat mayonnaise
1 tablespoon korma curry powder
1 teaspoon curry powder (you choose the heat)
1 3/4 cups dry penne pasta (150g)
250 g cooked skinless chicken breasts (about 2 chicken breasts)
1 red bell pepper
1/2 cucumber
1 cup baby plum tomato (optional)
4 spring onions
1 handful fresh coriander (cilantro)

Steps:

  • Put the yoghurt and mayonnaise in a bowl and stir in the korma and curry powder.
  • Cook the pasta.
  • Meanwhile, dice the chicken breast meat, red bell pepper, cucumber and tomatoes (if using them). Finely slice the spring onions.
  • When the pasta is cooked, drain it thoroughly and pour cold water over it for a few minutes to cool it. Drain it again.
  • Add the pasta, chicken and vegetables to the bowl and stir well. Season with salt and pepper if desired.
  • Top with chopped fresh coriander/ cilantro (or if you like coriander as much as I do, mix some in, then sprinkle some more over the top)!

8 medium skinless chicken drumsticks
2 teaspoons jamaican jerk spice
1 lime, juice and zest of
100 g small macaroni noodles
200 g salsa (fresh)
25 g fresh coriander
198 g sweetcorn, drained

Steps:

  • preheat oven to gas mark 4. ut chicken drumsticks into a plastci freezer bag and add jerk seasoning and lime zestv and juice. close bag and massage the drumsticks to coat them
  • remove drumsticks and place on a baking tray cook in oven for 320 minutes or until cooked through (juiceds shoul run clear).
  • meanwhile cook the pasta accvoridng to pack instructions, drain then rinse with cold water until cool. put into bowl with salsa, corrainder and sweetcorn season with black pepper and stir to combine. serve 2 chicken drumsticks with a quarter of the salsa.

8 medium corn tortillas, cut into 4 wedges each
1/2 teaspoon table salt
4 cups romaine lettuce, shredded
1 lb skinless chicken breast, cooked, shredded
1 cup tomatoes, diced
1/2 cup shredded reduced-fat Mexican cheese blend
1/2 cup nonfat sour cream
1/4 cup salsa
1/2 teaspoon ground cumin or 1/2 teaspoon adobo seasoning
1/2 teaspoon hot pepper sauce

Steps:

  • Preheat oven to 400ºF. Coat a large baking sheet with cooking spray.
  • Arrange tortillas on baking sheet; spray tortillas with cooking spray and sprinkle with salt. Bake until golden, about 10 minutes.

1 lb small red potato, scrubbed
cooking spray (1 serving)
2 lbs boneless skinless chicken breasts
3/4 lb green beans
2 medium celery ribs, thinly sliced
4 ounces green seedless grapes, halved (about 1 cup)
1/4 cup fresh lemon juice
1/4 cup reduced-sodium fat-free chicken broth
1 tablespoon Dijon mustard
3 tablespoons fresh tarragon leaves, chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup olive oil

Steps:

  • Bring a large pot of water to a boil over high heat, add the potatoes, and cook until tender when pierced with a fork, about 20 minutes. Remove from the water with a slotted spoon or strainer; set potatoes aside but maintain the water's boil.
  • Meanwhile, spray the broiler rack with nonstick cooking spray; preheat the broiler. Broil the chicken breasts 5 inches from the heat, turning occasionally, until cooked through, about 10 minutes. Set aside.
  • Add the green beans to the boiling water; blanch until crisp-tender (no more than 2 minutes), then drain in a colander set in the sink.

1/2 pound skinless boneless chicken breast halves, lightly pounded 3 cups crusty Italian bread cubes (about 3/4 inch)
1 cup grape or cherry tomatoes, halved 1 cup yellow pear tomatoes, halved
1/2 cucumber, peeled, seeded, and diced 1 1/2 cups chopped fresh basil
10 Kalamata olives, pitted and coarsely chopped 3 tablespoons red-wine vinegar
4 teaspoons extra-virgin olive oil

Steps:

  • Spray a nonstick ridged grill pan with nonstick spray and set over medium-high heat. Add the chicken and cook until browned on the outside and cooked through, about 4 minutes on each side. Transfer the chicken to a cutting board; let rest about 5 minutes. Cut the chicken, on the diagonal, into ¼-inch-thick slices.
  • Meanwhile, combine the bread, grape and yellow pear tomatoes, cucumber, basil, and olives in a large bowl. Drizzle with the vinegar and oil; toss well to coat. Stir in the chicken and serve at once.
