1 1/4 pounds ground turkey
1/2 cup plain bread crumbs
1 cup onions, chopped
1 cup barbecue sauce, divided
2 tablespoons Worcestershire sauce
2 egg whites
1/4 teaspoon salt
Fresh ground pepper, to taste

Steps:

  • Preheat oven to 350°F. Line a baking pan or cookie sheet with foil. In a large bowl, combine the turkey, bread crumbs, onions, ½ cup barbecue sauce, Worcestershire sauce, egg whites, salt and pepper and mix well until thoroughly combined. Place meatloaf mixture in the center of the baking pan and shape into a 12 x 4 inch loaf by hand. Spread the remaining ½ cup barbecue sauce evenly over the top of the loaf. Add more if desired. Bake 1 hour and let stand for 5 minutes before slicing.

1/2 cup barbecue sauce, divided
1/4 cup frozen chopped onions, pressed dry
1/4 cup Italian seasoned breadcrumbs
2 large egg whites

Steps:

  • Preheat oven to 375°F.
  • Combine meat, 1/4 cup barbecue sauce, onion, breadcrumbs, egg whites, and seasons of your choice in a large bowl; stir well.
  • Shape mixture into a loaf pan. Spread remaining 1/4 cup barbecue sauce over loaf.
  • Bake at 375°F for 40 minutes or until desired degree of doneness.

Meatloaf is a comfort food classic, and this slow cooker version is as delicious as any cooked in the oven. Mixed with herbs and seasonings, the ground meat is bound with cheese, breadcrumbs, and a whole egg, which help the loaf hold its shape. The slow, moist heat that this slow cooker method provides keeps the lean ground turkey moist and juicy while all the flavors come together. A sweet-and-savory glaze brushed over the meat for the last part of cooking adds more flavor and that characteristic, rich color you expect. Leftovers are surprisingly delicious served cold, but also make a great taco filling when crumbled or can be woven into soups and quiche.

0.333 cup(s) Dried plain breadcrumbs seasoned
0.25 cup(s) Weight Watchers Reduced-fat Mexican style shredded cheese shredded

Steps:

  • Fold a 24-inch length of foil in half lengthwise. Fit into the bottom and up the sides of a 5 to 6-quart slow cooker insert.
  • Put the turkey, bread crumbs, cheese, onion, egg, oregano, salt, and pepper in a medium bowl; using you hands, mix until well combined. Shape the mixture into a loaf and place on the foil in the slow cooker.
  • Cover the slow cooker and cook until the meatloaf juices run clear or an instant read thermometer inserted in the center of the meatloaf registers 165°F, 3 to 4 hours on high or 6 to 8 hours on low.
  • In a small bowl, combine the ketchup, sugar, Worcestershire sauce, and mustard. Spoon the mixture over the meatloaf, spreading it smooth. Cover the slow cooker and cook until the glaze is heated through, about 30 minutes longer. With the help of the foil, lift the meatloaf from the slow cooker and transfer to a platter. Discard foil and cut the meatloaf into 6 slices. Yields 1 slice meatloaf per serving.

1 tablespoon Neelys' BBQ Seasoning, recipe follows
1 teaspoon crab boil seasoning, (recommended: Old Bay)
3 tablespoons soy sauce
1 large egg, lightly beaten
1 1/2 cups Neelys BBQ Sauce, reserving 1/2 cup for the top, recipe follows
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 cup chopped red onion
1 medium red bell pepper, chopped
Salt and freshly ground black pepper
2 cloves garlic, chopped
2 pounds lean ground turkey
1 1/2 cups bread crumbs
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
2 cups ketchup
1 cup water
1/2 cup apple cider vinegar
5 tablespoons light brown sugar
5 tablespoons sugar
1/2 tablespoon fresh ground black pepper
1/2 tablespoon onion powder
1/2 tablespoon ground mustard
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix BBQ seasoning, crab boil seasoning, soy sauce, beaten egg, 1 cup of the BBQ sauce and Worcestershire sauce.
  • In a saute pan over medium-high heat, add olive oil. Add onion, bell pepper, salt and pepper and garlic. Saute until tender. Remove from heat and add to wet mix.
  • Pour mixture into bowl with the ground turkey. Add bread crumbs and mix all together with your hands.
  • Transfer the meat mixture to a cookie sheet or baking pan. Using your hands, shape the meat into an oblong or rectangular shape. *Cook's Note: Alternately, you can pat the meat into a 9 by 5-inch loaf pan and pour 1/2 cup of BBQ sauce on the top of the loaf.
  • Bake for 35 minutes. Remove and add the reserved 1/2 cup of BBQ sauce to the top and continue to bake for 20 more minutes.
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.
