- Preheat oven to 400°. In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese. Combine eggs and soup; pour over cheese. , Bake, uncovered, 30-35 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

My family loves this and it can be easily changed to suit your tastes. Best of all, it's prepared the night before, so you don't have to spend all morning in the kitchen! Sometimes I use browned breakfast sausage (in the roll) in place of the ham.

- Preheat oven to 375.Heat oil in large skillet. Add hash browns, onion, and bell peppers. Cook until potatoes begin to brown.
- Butter or spray a 9 x 13 inch baking dish. Spread potato mixture in pan. Top with ham. Pour beaten eggs over all and season to taste with salt and pepper. Gently stir to coat all ingredients with eggs and sprinkle with cheese. Refrigerate overnight. Bake uncovered in a preheated 375 degree oven for 35 minutes.
