1/4 cup coarse salt
1 teaspoon espelette pepper or chile powder
1 teaspoon sugar
2 cups fresh lime juice, plus more for rimming glasses
3 cups tequila
1 1/2 cups orange liqueur
1/2 cup agave syrup
Lime slices, for garnish

Steps:

  • Combine the salt, pepper and sugar on a plate. Lightly dip the rims of 4 rocks glasses into a small amount of lime juice, then into the salt mixture to crust the edges of the glasses.
  • Combine the tequila, lime juice, orange liqueur and agave syrup in a large pitcher with ice. Stir vigorously to combine. Pour over ice in the salt-rimmed glasses, garnish with a slice of lime and serve immediately.

Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

1 tablespoon fine sea salt
1 teaspoon Tajín or 1/2 teaspoon ground cayenne (optional)
Ice, as needed
6 ounces fresh watermelon juice (from about 1 1/2 cups chopped seedless watermelon, blended and strained)
2 ounces tequila, preferably blanco
2 ounces Cointreau (optional)
2 ounces fresh lime juice (from 1 to 2 large limes), rinds reserved
2 to 3 thinly sliced jalapeño rounds (optional)

Steps:

  • Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
  • In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
  • Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

This is the non-frozen version of my watermelon margaritas. These are so amazing and refreshing on hot summer days. To make a virgin version, omit the tequila and use a lemon-lime soda.

½ cup white sugar
½ cup water
3 strips orange zest
2 cups cubed seeded watermelon
¾ cup white tequila
¼ cup lime juice
1 pinch salt or sugar for rimming glasses
1 lime, cut into wedges
2 cups crushed ice, or as needed

Steps:

  • Bring 1/2 cup sugar, water, and orange zest in a small saucepan to boil, stirring constantly. Simmer until sugar is dissolved, about 3 minutes. Remove simple syrup from heat and allow to cool completely.
  • Place watermelon in a blender or food processor. Pulse until pureed.
  • Stir watermelon puree into a large pitcher with simple syrup, tequila, and lime juice.
  • Place a small amount of salt or sugar into a saucer. Rub edge of margarita glasses with a lime wedge to moisten. Lightly dip the rim of the glass into the saucer to rim the glass; tap off excess salt or sugar.
  • Fill rimmed glasses with crushed ice; pour margarita mixture into glasses and garnish with lime wedges to serve.

3 wide strips orange zest
12 ounces watermelon cubes (about 2 cups)
1/4 cup fresh lime juice
3/4 cup white or silver tequila
Lime wedges

Steps:

  • In a small saucepan, bring sugar, water, and orange zest to a boil over high. Reduce to a simmer and cook until sugar dissolves, 3 minutes. Let syrup cool in a bowl. In a blender, puree watermelon cubes until smooth. Strain through a fine-mesh sieve, pressing on solids, into a pitcher (you should have about 1 cup juice). Stir in syrup, lime juice, and tequila. Fill salt-rimmed glasses with ice, then pour margarita mixture over top. Garnish with lime wedges.

800g watermelon, cut into cubes (prepared weight)
125ml tequila
75ml triple sec
2 limes, zested and juiced, plus a wedge for the rim
2 tsp honey
4 tsp sea salt flakes
2 tsp caster sugar
¼ tsp chilli flakes

Steps:

  • Put the watermelon pieces in a freezerproof container and freeze overnight until solid. The next day, prepare the garnish for the rim of each glass. Combine the sea salt flakes, sugar, chilli flakes and lime zest in a small bowl. Set aside.
  • When you want to serve, put the frozen watermelon, tequila, triple sec, lime juice and honey in a food processor or blender and blitz until smooth. Run a lime wedge around the rims of four glasses, then dip in the garnish mix. Pour the drink into the glasses. Serve immediately.
