- Cut a hole in the watermelon large enough for the tequila bottle's neck. Insert the tequila bottle upside down. Refrigerate and let the liquor soak into the watermelon's flesh overnight.
- Cube the melon, and skewer each cube with a wedge of lime sprinkled with salt.

- Fill a highball glass with ice and add tequila, watermelon, salt and a squeeze of lime. Top with soda water. Float a couple of slices of jalapeño on the drink to garnish.
TEQUILA-SOAKED WATERMELON WEDGES
This grown-up fruit dessert borrows flavors from margaritas. Tequila and Triple Sec infuse the watermelon slices, which also get a spray of lime juice and a sprinkling of coarse salt. The longer the watermelon soaks, the more flavorful it becomes -- one more reason to save any leftover slices.

- Arrange watermelon in a single layer in two 9-by-13-inch baking dishes. Bring sugar, water, tequila, and Triple Sec to a boil in a small saucepan. Cook, stirring, until sugar dissolves, about 1 minute. Let cool slightly. Pour syrup over watermelon wedges, and refrigerate for at least 45 minutes.
- Remove watermelon from syrup, and arrange on a platter. Squeeze limes over melon, and season with salt.

This is the non-frozen version of my watermelon margaritas. These are so amazing and refreshing on hot summer days. To make a virgin version, omit the tequila and use a lemon-lime soda.

Steps:
- Bring 1/2 cup sugar, water, and orange zest in a small saucepan to boil, stirring constantly. Simmer until sugar is dissolved, about 3 minutes. Remove simple syrup from heat and allow to cool completely.
- Place watermelon in a blender or food processor. Pulse until pureed.
- Stir watermelon puree into a large pitcher with simple syrup, tequila, and lime juice.
- Place a small amount of salt or sugar into a saucer. Rub edge of margarita glasses with a lime wedge to moisten. Lightly dip the rim of the glass into the saucer to rim the glass; tap off excess salt or sugar.
- Fill rimmed glasses with crushed ice; pour margarita mixture into glasses and garnish with lime wedges to serve.

TEQUILA-WATERMELON PUNCH
To make watermelon puree, put seedless chunks of watermelon in a blender and pulse, then push the puree through a mesh sieve to make it smoother. (Cutting a whole watermelon might make your kitchen look like a Gallagher set, so it's O.K. to use precut watermelon from a supermarket.)
