1 small, cold watermelon, rind and seeds removed
4 to 6 basil leaves
Juice of ½ lime

Steps:

  • Cut the watermelon into quarters, and then roughly chop each quarter into 2-inch pieces.
  • Fill a blender with watermelon chunks until it is halfway full.
  • Add the basil and lime juice to the blender.
  • Cover and pulse on low until the ingredients are mostly incorporated. Once incorporated, blend on high for 10 to 15 seconds.
  • Serve immediately.

4 pounds watermelon, peeled and cut into cubes (12 cups)
1 tablespoon plus 1 1/2 teaspoons fresh lemon juice
2 1/2 teaspoons finely grated (preferably on a Microplane zester) lemongrass
1 1/2 teaspoons finely grated (preferably on a Microplane zester) fresh ginger
Coarse salt
Ice cubes
Garnish: trimmed lemongrass stalks

Steps:

  • Puree watermelon in a blender until smooth. Strain mixture through a fine sieve into a pitcher. Stir in lemon juice, lemongrass, ginger, and 1/8 teaspoon salt. Refrigerate until chilled, about 20 minutes.

  • 2. Force through a food mill to separate seeds from the puree.
  • 3. Alternately place a nylon sieve over a bowl and, using a pestle or outstretched fingers, push to extract the fruit puree, discard the seeds.
  • 4. Combine all the ingredients in a jug, stir well and refrigerate for few hours.

1/2 cup sugar
1/3 cup of fresh mint, coarsely chopped
1 tablespoon grated lemon rind
1 tablespoon grated lime rind
12 cups watermelon, cubed and seeded
3 tablespoons fresh lemon juice
1/4 cup fresh lime juice

Steps:

  • Combine water and sugar in a small saucepan. Bring it to a boil over medium high heat. Cook for about 30 seconds or until sugar dissolves, stirring frequently. Remove from heat, stir in the lemon and lime rind. Let sit for 20 minutes, then strain mixture in a meshed colander over a bowl and discard rinds.
  • Place 1/3 of the watermelon and simple syrup into a blender, process until smooth. Pour puree into a large pitcher, repeat.
  • When done pour in lime and lemon juice, stir and serve over ice.
  • Garnish each cup with fresh mint.
