10 large limes (makes 40 jello shots
1 c vodka
1 large box of watermelon jello
1 c boiling water

Steps:

  • 1. Prepare limes by cutting them in halves and hollowing out the peel. This may sound easier than it is. The trick is to take a paring knife and score around the insides carefully to loosen the citrus. Then spoon it out saving the fruit.
  • 2. Boil one cup of water and add it to jello mix in a large bowl, stirring until it dissolves. Slowly add one cup of vodka and stir.Pour mixture into a cup with a spout (for an even pour). I use a measuring cup. Line up limes on a cookie sheet so they are secure and upright. Pour in jello mixture. Refrigerated over night.
  • 3. Carefully (gingerly) quarter the halves with a sharp knife.

Large Watermelon
12 oz. (360ml) Red Jello
8 Packets Gelatin
4 Cups Hot Water
2 Cups Vodka
2 Cups Cherry Vodka

Steps:

  • Cut large watermelon in half the long way and remove pulp. In a container mix the red jello, the gelatin and the hot water. Stir this mix until all the gelatin is dissolved. Add the vodka to your mix. Place watermelon in a bowl or pan to stabilize it. Pour jello mix into your watermelon Place in fridge for four hours to harden jello. Slice into desired slices.

10 limes, pulp removed 1 box red Jello (I used strawberry because my grocery store didn't carry watermelon flavored, but obviously if yours has watermelon - grab it!) 1 cup boiling water 1 cup cold vodka (Again, if you have melon flavored

Steps:

  • Halve limes and use a paring knife around the edges of the halves to loosen the pulp from the rind. My technique was to do this, and then juice them with my KitchenAid attachment, which helped remove the loosened pulp. Plus, then I got a cup of freshly squeezed lime juice! I also used my (clean) fingers to finally help scrape out the resilient pulp under a running faucet. Set lime halves aside, empty side up.
  • Add 1 cup of boiling water to the Jello powder, and stir for 2 minutes until fully dissolved.
  • Stir in cup of cold vodka.
  • Pour mixture into lime halves, filling all the way to the top.
  • Chill Jello-limes in the fridge for at least 2 hours.
  • Using a sharp knife, carefully cut each lime half in half again, making wedges.
  • Stick in chocolate chips, if desired.

How to make Watermelon Mint Jello Shots

1/4 of a large watermelon
15-20 mint leaves, plus more for garnish (or basil would be good too!)
Juice from 1/2 a lime
1-2 tablespoons honey (depending on how sweet you like it)
2 packets Knox gelatin
3/4 cup vodka or gin

Steps:

  • Carefully hollow out watermelon to create a "boat" to hold jello mixture.
  • Combine watermelon (about 2-3 cups) with mint in a blender and process until smooth. Strain solids through mesh strainer.
  • Pour 1 1/4 to 1 1/2 cups of the watermelon-mint juice into a small saucepan. (Use less liquid for a firmer shot or if you plan to set them out for a long period of time). Add lime juice and honey and sprinkle with gelatin packets. Allow to soak in for a minute or two and heat until everything is dissolved, stirring constantly.
  • Stir in alcohol and pour into the hollowed-out watermelon. Refrigerate for at least 4 hours or overnight. Slice into wedges, garnish with fresh mint and serve!
