There are only a few simple steps to a perfect watermelon, feta, and mint salad. This easy recipe lays it out.

3 pounds seedless watermelon (about 1 small or 1/4 large), rind removed, cut into 1-inch chunks (about 2 pounds/1kg chunks after rind is discarded)
1 tablespoon (15ml) juice from 1 lemon, plus 4 (2-inch) strips zest, removed with a sharp vegetable peeler
1/4 cup (10g) roughly chopped fresh mint leaves
3 tablespoons (45ml) extra-virgin olive oil, plus more for drizzling
Up to 4 ounces (1 quart) arugula leaves (optional; see note)
Kosher salt and freshly ground black pepper
4 ounces (110g) feta cheese (see note)

Steps:

  • Place watermelon chunks in a large bowl. Finely chop lemon zest. Add lemon juice and half of zest to bowl with watermelon. Add mint, oil, and arugula (if using) and toss until watermelon is evenly dressed. Season lightly to taste with salt and pepper. (The cheese will add saltiness, so go light on the salt at this stage.)
  • Transfer salad to a wide, shallow bowl or a large plate and spread out evenly. Crumble feta over the top. Sprinkle with remaining lemon zest. Drizzle with more olive oil and a few grinds of black pepper. Serve immediately.

180g watermelon
½ cucumber
½ bunch mint
1 tbsp olive oil
100g feta
1 tbsp balsamic glaze

Steps:

  • Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile on to a serving plate. Crumble over 100g feta, the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze just before serving.

3 heirloom tomatoes (preferably green or orange), seeded and cut into 1-inch cubes

The recipe suggests preparing just before eating to prevent it from becoming watery. I haven't tried it but am putting it here for safe keeping.

3 tablespoons lemon juice
2 teaspoons kosher salt
1 teaspoon hot sauce
1/2 teaspoon ground black pepper
10 cups seedless watermelon (from an 8-lb watermelon scooped into balls or cut into 1 1/2 inch chunks, chilled)
2 cups crumbled feta cheese
1 1/4 cups pitted kalamata olives (courseley chopped) (optional)
1 small sweet onion (cut into 1/2 inch dice)
1 cup mint leaf (coursely chopped)

Steps:

1 seedless watermelon, small and ripe
4 ounces feta cheese (or more to taste)
1 cup of fresh mint
1/4 cup olive oil
3 tablespoons balsamic vinegar (the best quality you can find really makes a difference!)
fresh ground black pepper

Steps:

  • Cut watermelon in half and remove watermelon from rind; the easiest way to do this is with a melon baller. Place melon balls into a large mixing bowl. Save the rind to use as the salad bowls for a pretty presentation, scraping out to the same depth all over and cutting a small slice from the bottoms of the outside rinds so that each half will sit evenly on a table.
  • Crumble feta cheese over the watermelon, chiffonade the mint (roll leaves into a cigar and slice thinly across the 'cigar' to get ribbons of mint) and sprinkle over watermelon. Grind pepper to taste over all.
  • To make the dressing, blend or shake the olive oil and vinegar in a jar until emulsified. Pour over watermelon and toss gently. Chill for 30 minutes, spoon carefully into reserved watermelon rind 'bowls' and serve.
