An absolutely delicious watermelon feta salad recipe. Watermelon is with no doubt the fruit of the summer and this refreshing combination of juicy, chilled slices of watermelon and salty, creamy feta cheese make for a Greek salad summer favourite!

1kg watermelon, seedless and cut into chunks (35oz.)
250g feta cheese, cut into cubes or crumbled (9 oz.)
a bunch of mint, leaves only, chopped
1 small red onion, finely sliced
100g Kalamata olives, pitted (4 oz.)
1 small cucumber, peeled and diced (optional)
1/4 of a cup extra virgin olive oil
2 tbsps lemon juice
1 tsp brown sugar
salt and pepper to taste

Steps:

  • To prepare this watermelon feta salad recipe start by removing the rind and seeds from the watermelon, and cut into triangular chunks. Cut the feta cheese into small cubes, or bigger if you prefer, and place both into a large bowl. Slice the onions into paper-thin slices and place in the bowl with the rest of the ingredients, add the chopped mint leaves and the kalamata olives and set aside. (If you choose to prepare this watermelon feta salad recipe using cucumber too, then peel and slice the cucumber into half-moons and place in the bowl with rest of the ingredients).
  • Prepare the dressing for the watermelon feta salad. In a small bowl add the olive oil, lemon juice and brown sugar and season. Whisk the ingredients to combine, taste and adjust the seasoning.
  • Pour the dressing over the watermelon feta salad and toss to coat.
  • Divide the watermelon feta salad among individual serving plates and serve immediately. Enjoy!

1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon grated lemon zest
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
1/4 cup finely chopped red onion
SALAD:
6 cups fresh arugula (about 5 ounces)
1-1/2 cups fresh blueberries
5 cups cubed seedless watermelon
1 package (8 ounces) feta cheese, cut into 1/2-in. cubes

Steps:

  • For vinaigrette, in a small bowl, whisk the first 6 ingredients; gradually whisk in oil until blended. Stir in onion., In a large bowl, lightly toss arugula with 1/4 cup vinaigrette. Arrange evenly in a large rectangular serving dish., For stars, place blueberries over arugula at the top left corner. For stripes, arrange watermelon and cheese in alternating rows. Drizzle with remaining vinaigrette. Serve immediately.

This slightly sweet and savory watermelon-feta salad has cucumbers, olives and refreshing mint.

1/2 medium watermelon (about 3 pounds)
1 English cucumber, sliced into thin rounds
One 4-ounce block feta, cut into 1/2-inch pieces
1/2 cup pitted kalamata olives, halved or quartered
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
Fresh mint leaves for garnish

Steps:

  • Cut the rind off the watermelon and cut the fruit into 1-inch cubes and transfer to a large serving bowl (you should have about 6 cups total). Top with the cucumber, feta and olives. Pour the oil over top and season with a large pinch of salt and pepper. Sprinkle with mint leaves and gently stir to combine right before serving.

Rather than building tall, this salad builds wide - so use a large platter for the most dramatic presentation. Vinegared watermelon does not keep its crisp, juicy texture well, so be sure to dress it (and eat it) the moment the last basil leaf falls.

Leaves from 1 sprig basil, larger leaves torn
