Yield Makes 6 (first course or side dish) servings

Number Of Ingredients 7

1 small garlic clove
2 medium cucumbers (1 pound total), divided
1 1/2 cups plain Greek-style yogurt
2/3 cup chopped mint, divided
1 (3-pounds) piece watermelon, rind removed and fruit cut into 1-inch chunks (6 cups)
2 tablespoons fresh lime juice
Flaky sea salt such as Maldon

Steps:

  • Mince and mash garlic to a paste with a pinch of salt and transfer to a bowl.
  • Peel 1 cucumber, then halve lengthwise and seed. Coarsely grate into bowl with garlic paste. Stir in yogurt, 1/3 cup mint, and 3/4 teaspoon salt to make tsatsiki.
  • Peel remaining cucumber and halve lengthwise. Cut crosswise into 1/3-inch-thick slices.
  • Toss sliced cucumber with watermelon, remaining 1/3 cup mint, and lime juice in a large bowl.
  • Serve fruit with tsatsiki. Sprinkle with sea salt to taste.

1 whole seedless watermelon
1 bunch mint, chopped
1 cucumber, seeded and diced
1/2 cup plain feta, crumbled
1/4 cup or more olive oil
Coarse salt to taste

Steps:

  • Using a melon baller, ball entire watermelon flesh and place in large bowl. Add chopped mint, cucumber, feta, olive oil and salt. Stir gently. Serve.

4 cups ( about 3 pounds) seedless watermelon, cut into 1-inch cubes
2 cups seedless cucumbers, peeled and cut into 1/2 inch cubes
2 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
Kosher salt
1/4 cup chopped fresh mint
1 small bunch watercress, stemmed
1/4 cup pine nuts

Steps:

  • Put the watermelon and cucumbers in a large bowl. Whisk together the lime juice, olive oil and a pinch of salt in a small bowl. Pour over the watermelon mixture and toss to coat. Add the mint, watercress and pine nuts and toss again. Chill the salad for 1 hour before serving.
