WATERMELON BASIL GIN COCKTAIL

Steps:
- Make Ahead: Prepare the simple syrup by heating equal parts water and sugar until dissolved, about 3 minutes. Set aside to cool.
- Cut the watermelon into 1 1/2-inch chunks.
- Place the watermelon, basil and salt in a cocktail shaker. Muddle until well smashed and soupy.
- Add the gin, lime juice and simple syrup. Fill with ice, place the lid on the shaker and shake well-30 seconds or so.
- Pour into a glass and garnish with extra watermelon and basil.

- Chop the watermelon. Add all ingredients to a blender and blend until smooth. Pour into 6 glasses: the foam will rise to the top. Garnish with a lime wedge if desired.
WATERMELON COCKTAIL WITH GIN AND BASIL
Steps:
- Put 1 cup water, 1 cup sugar and a small bunch of basil in a small saucepan. Boil until sugar dissolves, discard the basil and chill. Peel 1 small watermelon (3 pounds), and cut the flesh into large chunks. Purée them in a blender until smooth. Pour the purée through a fine-mesh strainer, and discard the solids. Combine the juice with the chilled basil syrup and about 1/2 cup gin. Serve over ice.
