2 teaspoons white balsamic vinegar
½ teaspoon kosher salt
2 cups arugula
2 cups baby spinach leaves
1 cup thinly sliced red onion
1 cup grape tomatoes, halved
½ cup crumbled feta cheese
2 cups bite sized watermelon chunks

Steps:

  • Whisk the olive oil, white balsamic vinegar, and salt together in a small bowl; set aside.
  • Combine the arugula, spinach, onions, and tomatoes in a large salad bowl. Drizzle the vinaigrette over the salad mixture; toss to coat. Add the feta cheese and watermelon to serve.

1/4 cup rice vinegar or white wine vinegar
1 tablespoon grated lime zest
2 tablespoons lime juice
2 tablespoons canola oil
4 teaspoons minced fresh gingerroot
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon pepper
SALAD:
4 cups fresh baby spinach or arugula
3 cups cubed seedless watermelon
2 cups cubed cantaloupe
2 cups cubed English cucumber
1/2 cup chopped fresh cilantro
2 green onions, chopped

Steps:

1 tablespoon honey
4 cups spinach leaves
2 cups seedless watermelon, cut into 1/2 inch cubes
1 cup blueberries, washed and dried
1/2 cup seedless cucumber, sliced (unpeeled)
1/2 cup red onion, cut thinly
1/2 cup feta cheese, crumbled

Steps:

  • Whisk the lemon or lime juice and honey in a large bowl.
  • Add spinach; toss lightly to coat.

Here's what you need: small watermelon, baby spinach, mango, slivered almonds, fresh lemon juice, water, honey, salt, pepper, extra virgin olive oil

1 small watermelon
3 cups baby spinach
1 mango, pitted, peeled, and diced
½ cup slivered almonds
2 tablespoons fresh lemon juice
1 tablespoon water
1 tablespoon honey
salt, to taste
pepper, to taste
2 tablespoons extra virgin olive oil

Steps:

  • Using a sharp knife, cut off the top and bottom of the watermelon to reveal the red flesh and create flat surfaces on both sides. Stand the watermelon upright, and slice off the remaining peel so only the red core remains.
  • Cut the watermelon into roughly 1-inch (2-cm) cubes and transfer to a large bowl.
  • In a small bowl, whisk together the lemon juice, water, honey, salt, and pepper.
  • While whisking, gradually add the oil in a very slow, steady stream to create an emulsification. Set aside.
  • Add the spinach, mango, almonds, and lemon vinaigrette to the large bowl with the watermelon.
  • Toss the salad until well-combined, then divide between serving bowls.
  • Enjoy!

1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon dried oregano
Kosher salt and freshly cracked black pepper
1 cup crumbled feta
1/2 cup toasted pistachios, roughly chopped
8 cups baby spinach
2 cups cubed watermelon

Steps:

  • For the oregano vinaigrette: In a medium bowl, whisk together the olive oil, vinegar, Dijon, honey, dried oregano and some salt and pepper to combine.

4 tablespoons olive oil
1 tablespoon honey
1 tablespoon balsamic vinegar
2 tablespoons fresh lemon juice
1/4 cup finely diced shallot
1 teaspoon peeled and grated ginger
2 cups watermelon balls
3 cups fresh spinach
2 tablespoons of fresh mint or 2 tablespoons basil
1/2 cup feta cheese
salt & pepper

Steps:

  • To make the dressing, combine olive oil, honey, balsamic vinegar, lemon juice, shallots and ginger. Mix well and place in the refrigerator in a sealed container for later.
  • When ready to serve, prepare the salad by combining the watermelon, spinach, herbs and feta cheese. Add the dressing to taste. Toss and then add salt/pepper to taste. Serve right away.
