WATERCRESS, CHAYOTE, PAPAYA, AND AVOCADO SALAD



Watercress, Chayote, Papaya, and Avocado Salad image

Tropical Dressing, recipe follows
1 bunch watercress, cleaned
2 chayotes, cooked and diced into 1-inch cubes
1 cup ripe papaya, diced into 1/2-inch cubes
1 cup ripe avocado into 1/2-inch cubes
Salt and pepper
1/2 cup deep-fried green plantain slivers, for garnish
2 tablespoons finely chopped shallots
3 tablespoons lime juice
2 tablespoons orange juice
4 tablespoons sherry vinegar
1 teaspoon honey
1/4 cup olive oil
1 teaspoon freshly grated nutmeg
Salt and pepper

Steps:

  • Place some the dressing in a large bowl and gently toss the watercress with the dressing, lightly shaking off excess. Remove to a serving dish. Toss the chayote with some dressing and add on top of the watercress. Repeat this process with the papaya, and then the avocado, tossing them in the remaining dressing. Season with salt and pepper and top with fried plaintain slivers.
  • In a glass jar with a tight-fitting lid, add all the ingredients and shake vigorously to blend. Refrigerate until ready to use.

550g new potato , scrubbed
800g young broad beans in the pod (to give about 200g/8oz shelled beans)
200g fresh young asparagus
400g young peas in the pod (to give about 100g/4oz shelled peas)
90g pack prosciutto , sliced into ribbons
125g bag mixed salad leaves
100g pecorino cheese, shaved
50g fresh watercress , roughly chopped
6 tbsp extra-virgin olive oil
2 tbsp cider vinegar
pinch sugar

Steps:

  • Cook the potatoes in boiling salted water for 10-15 minutes until tender. Drain and halve when cool enough to handle; set aside. Blanch the shelled broad beans and the asparagus in boiling salted water for 2-3 minutes. Drain in a sieve and cool under running cold water. Drain again, fish out the asparagus, then peel off the hard outer skins from the beans - make a nick in the tops and pop the beans out. Blanch the shelled peas in a separate pan for 1 minute. Toss the asparagus, beans, peas, potatoes and prosciutto together.
  • For the dressing, put all the ingredients in a blender or food processor and blitz until really smooth and bright green. Season with salt and pepper. To serve, toss the salad leaves with a spoonful or two of dressing and arrange on plates. Pile the vegetable mixture on top, season, then drizzle over the remaining dressing and scatter with the pecorino.

1 fresh lemon
1 papaya, peeled, sliced, and seeds removed and reserved
1 teaspoon Dijon mustard
1/4 cup rice wine vinegar
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup extra-virgin olive oil
6 cups mixed fresh watercress and greens, soaked in salt water to remove grit, rinsed and dried in a salad spinner
2 English cucumbers, peeled, quartered lengthwise, seeds removed and sliced into 1/4-inch thick slices
1 pint cherry tomatoes, halved
1 papaya, peeled, shredded into strings and cut into bite-sized lengths

Steps:

  • Microwave the lemon in a small bowl to release essential oils, and set aside until cool enough to handle. Through the feed opening of a running blender add, one at a time, the papaya, papaya seeds, Dijon mustard, vinegar, salt, pepper, and juice from the microwaved lemon. (Note: If you squeeze the lemon with the sliced side against your palm, the seeds are likely to stay in the rind.) Then with the blender still running, add the olive oil in a slow thin stream. Please note that the edible papaya seeds lend a wonderful mustard-y taste to the dressing, but are coarse in texture. If you find the texture to be too coarse for you, strain the dressing before use.
  • Toss the greens, cucumber, tomatoes and papaya strings with enough of the dressing to coat, serving additional dressing on the side.

4 sprigs fresh mint, chopped, 2 tablespoons
A handful of flat-leaf parsley, chopped
1 heart of romaine, coarsely chopped
1 ripe lime, juiced
1 teaspoon sugar
3 tablespoons extra-virgin olive oil, eyeball it
Coarse salt and pepper

Steps:

  • Combine watercress, mint, parsley and romaine in a small salad bowl. Combine lime juice and sugar in a small dressing bowl. Whisk oil into lime juice in a slow stream. Pour dressing over the salad and season with salt and pepper, to your taste.
