Number Of Ingredients 11

2 cups chopped fresh or frozen cauliflower
1 cup thinly sliced celery
1 can (14-1/2 ounces) chicken broth
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
1 cup half-and-half cream or evaporated milk
1/8 teaspoon white pepper
2 tablespoons cornstarch
1/4 cup water
2 cups diced fully cooked ham
1/2 cup shredded cheddar cheese
Minced fresh parsley

Steps:

  • In a large saucepan, cook cauliflower and celery in broth for 4-5 minutes or until vegetables are crisp-tender. Do not drain. Stir in the soup, cream and pepper. , Combine cornstarch and water until smooth; gradually stir into cauliflower mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Add ham; cook and stir for 2 minutes or until heated through. Just before serving, stir in cheese. Garnish with parsley.

"Waste not, want not", my Grandma's favorite expression. I know that she would approve of this delicious Clean-Out-The-Fridge soup. For herbs, use your favorites. (a little dill is tasty.) Make it your own, by adding whatever veggies you need to use, green beans, peas, carrots, potatoes, even chopped spinach.

0.667 (14 1/2 ounce) jar classico creamy alfredo sauce or 7 1/2 ounces alfredo sauce, homemade
1/4 cup celery, chopped
1/4 cup onion, chopped
1 tablespoon butter
1 -2 cup milk, depending on thickness desired
cooked cauliflower, chopped bite-sized (or can use cooked potatoes)
cooked ham, chopped bite-sized
1 teaspoon italian seasoning or 1 teaspoon herbs, of your choices
white pepper

Steps:

  • In large sauce pan, melt butter over MED-Hi heat and saute celery and onions to soften.
  • Lower heat to MED-LOW.
  • Add milk and Alfredo sauce; whisking to blend.
  • Add seasonings.
  • When smooth, add ham and cauliflower.
  • Let come to simmer; cook about 20-25 minutes, or until desired thickness is reached.
  • Remove to bowls and enjoy!

CREAMY POTATO CAULIFLOWER AND HAM SOUP

I have a potato soup recipe I love, but I wanted it to be a little less heavy on the carbs (not carb free, but just less). I decided to add cauliflower to replace some of the potatoes, and we couldn't really tell- plus it tasted great. I don't really measure my spices, so do it to your taste.

4 cups chopped cauliflower
3 cups diced potatoes
6 cups water
2 chicken bouillon cubes
1 (8 ounce) package reduced-fat cream cheese, cubed
2 cups carrots, chopped and steamed
2 cups diced cooked turkey ham
2 garlic cloves, chopped fine
Lawry's Seasoned Salt
white pepper
1 dash cayenne pepper

Steps:

  • 1. Bring water to a boil and add potatoes, cauliflower, and chicken bullion. Reduce heat to medium high and cook until very tender, at least 20 minutes.
  • 2. Carefully transfer to a blender or food process, or use an immersion blender. Blend in batches, and return soup to the pot.
  • 3. Reduce heat to medium. Melt in cream cheese. Season and add garlic.
  • 4. Add carrots and ham. Cook till ham and carrots are warmed through.

6 cups chicken broth
2 celery ribs, chopped
1 small onion, chopped
1 medium carrot, chopped
1 large head cauliflower (2 pounds), broken into florets
1/2 cup butter
3/4 cup all-purpose flour
2 cups whole milk
1 cup half-and-half cream
1 tablespoon minced fresh parsley
1 teaspoon salt
1 teaspoon dill weed
1/4 teaspoon white pepper

Steps:

  • In a Dutch oven, combine the broth, celery, onion and carrot. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add cauliflower; cover and simmer 15-20 minutes longer or until vegetables are tender. Cool slightly., Meanwhile, in a saucepan, melt butter. Stir in flour until smooth; gradually stir in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. , In a blender or food processor, process vegetable mixture in batches until smooth; return to pan. Stir in the cream, parsley, salt, dill, pepper and white sauce; heat through.

1 box (4.7 oz) Betty Crockerâ„¢ scalloped potatoes
2 1/2 cups hot water
1 cup chopped cauliflower
1/8 teaspoon ground mustard
1/8 teaspoon pepper
1 can (10 1/2 ounces) condensed chicken broth
1 cup cubed fully cooked ham
1 cup half-and-half
Chopped fresh parsley, if desired

Steps:

  • Stir Sauce Mix, hot water, cauliflower, mustard, pepper, broth and Potatoes in 3-quart saucepan. Heat just to boiling, stirring occasionally.
  • Reduce heat; cover and simmer about 25 minutes, stirring frequently, until potatoes are tender.
  • Stir in ham and half-and-half. Cook uncovered about 5 minutes or just until hot (do not boil). Garnish with parsley.
