CRAB COCKTAIL AMERICANA

1/2 cup mayonnaise
2 teaspoons ground mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon finely grated lemon zest
1 pound jumbo crabmeat, picked through to remove any bits of shell and cartilage
2 medium Roma tomatoes, cored, seeded and chopped (about 2/3 cup)
1 firm, ripe avocado, diced
Kosher salt
4 to 6 small Boston lettuce leaves
Lemon wedges, for garnish

Steps:

  • 1. Whisk together the mayonnaise, mustard, Worcestershire and lemon zest in a medium bowl. Set aside half of the mustard sauce in a small bowl for topping the cocktail.
  • 2. Gently toss the crab, 1/2 cup of the tomatoes and the avocado with the remaining sauce. Season with salt.
  • 3. Arrange the lettuce leaves in 4 to 6 martini glasses. Spoon the crab salad on top. Garnish with a dollop of the reserved sauce, the remaining tomatoes and lemon wedges.

SPICY SHRIMP & CRAB COCKTAIL

2 medium cucumbers, peeled, seeded and chopped
8 radishes, halved and thinly sliced (about 2 cups)
2 cups spicy hot V8 juice (about 16 ounces)
1 cup Clamato juice
1/2 cup finely chopped red onion
1/2 cup ketchup
5 jalapeno peppers, seeded and finely chopped
1/4 cup coarsely chopped fresh cilantro
2 garlic cloves, minced
1/2 teaspoon salt
1 pound peeled and deveined cooked small shrimp
1 pound lump crabmeat, drained
2 medium ripe avocados, peeled and cubed

Steps:

  • Mix the first 10 ingredients. Gently fold in shrimp, crab and avocados. Refrigerate, covered, at least 2 hours or until cold. Serve in martini glasses.

2 cups mayonnaise
2 tablespoons tomato sauce
1 1/2 pounds lobster tail meat, roughly chopped
1 medium onion, finely diced
2 anchovy fillets, finely chopped
2 teaspoons capers, finely chopped
2 sweet gherkins, finely chopped
1 tablespoon parsley, finely chopped, plus more to garnish
1 hard boiled egg, white finely chopped, yolk shaved with side of knife
1 teaspoon Worcestershire sauce
Hot sauce, to taste
1 tablespoon orange juice
1/2 lemon, juiced
Salt, to taste
Pepper, to taste
2 teaspoons mustard
2 teaspoons horseradish
1 teaspoon paprika plus more to garnish
1/2 teaspoon cayenne
1 tablespoon dry sherry
1 tablespoon cognac
1 tablespoon Cointreau
Lettuce, finely sliced
20 shrimp, cooked and peeled
Lemon wedges, to garnish

Steps:

  • Place mayonnaise in bowl on top of crushed ice. Add tomato sauce and 9 ounces lobster meat. In separate bowl, combine onion, anchovy, capers, gherkins, 1 tablespoon parsley, and egg white and yolk. Add this to lobster mayonnaise. Add Worcestershire sauce, several shakes hot sauce, orange juice, lemon juice, salt and pepper, mustard, horseradish, 1 teaspoon paprika, cayenne, sherry, cognac and Cointreau. Combine all ingredients carefully.
  • Season lettuce with salt, pepper and lemon juice. Divide among 10 champagne glasses. Place remaining lobster on top of lettuce then cover with lobster mayonnaise. Garnish with 2 shrimp, parsley, paprika and a lemon wedge. Serve cold.

LOBSTER COCKTAIL

2 cups dry white wine
2 sticks unsalted butter
Kosher salt and freshly ground black pepper
Two 3-pound whole Maine lobsters
1/2 cup mayonnaise
1 teaspoon granulated sugar
2 stalks celery, finely chopped
2 Meyer lemons, juiced
2 sprigs fresh tarragon, leaves stripped from the stems and chopped, plus more for garnish
4 brioche rolls, cut into large pieces
4 ounces micro cilantro

Steps:

  • Preheat the oven to 500 degrees F. Have a large ice water bath standing by.
  • In a shallow saucepan, add the white wine, butter and 2 cups water, along with a pinch of salt. Turn the heat on to medium-high. Once the liquid comes to a low simmer, add the lobsters and cook for about 8 minutes. Carefully remove the lobsters from the water and immediately plunge into the ice water bath; let sit until cool to the touch. Remove the lobster meat from the claws and tails and roughly chop. Keep chilled until ready to use.
  • In a large mixing bowl, add the mayonnaise, sugar, celery, lemon juice, tarragon, salt and pepper, and stir to thoroughly combine. Add the chopped lobster meat and stir to combine.
  • Place the brioche pieces on a sheet tray and put in the oven to toast, tossing every minute or so to toast evenly, about 5 minutes total.
  • Evenly divide the bread pieces in the bottom of stemless cocktail glasses. Top with the lobster salad, tarragon and micro cilantro.

CRAB COCKTAIL

Swap prawn and iceberg lettuce for crabmeat, crunchy raw fennel and avocado, topped with classic Marie Rose sauce

1 small fennel bulb , very finely sliced
juice 1 lemon
2 avocados , diced
small bunch dill , finely chopped
2 Baby Gem lettuces , leaves torn
500g cooked crabmeat (use a mixture of brown and white)
lemon wedges, to serve
rustic bread , toasted and thinly sliced, to serve (optional)
3 tbsp mayonnaise
2 tbsp ketchup
½ tsp Worcestershire sauce
few drops Tabasco sauce
zest 1 lemon
large pinch of cayenne pepper , plus a little extra to finish
½ red chilli , finely chopped

Steps:

  • Put the fennel in a large bowl of ice-cold water with a squeeze of lemon juice. Leave for at least 30 mins to crisp up. Drizzle more lemon juice on the avocados to stop them browning. Whisk together all the ingredients for the Marie Rose sauce in a bowl with seasoning. Set aside to chill in the fridge.
  • Just before serving, drain the fennel and toss with the remaining lemon juice, dill and some seasoning. Layer the lettuce, avocado, fennel and crab in 4 x half-pint glasses - or tumblers or jam jars. Add a spoonful of sauce to each, then repeat the layers until the glasses are full, finishing with the Marie Rose sauce. Sprinkle a pinch of cayenne pepper over each cocktail and serve with lemon wedges and toast, if you like.

I used to work at Jack Astor's and this dip was one of their best selling appetizers. This is great for parties and simple to make, and people won't think it wasn't simple! I'm making it for my Christmas party tomorrow, so I will try to have a picture of it.

2 (6 ounce) packages cream cheese, softened
1 medium onion, minced
1/2 red bell pepper, minced
2 garlic cloves, minced
10 white mushrooms, minced
1 cup shredded cheddar cheese
1 (6 ounce) can crabmeat (I used Victoria brand)
cheddar cheese (for topping)
nacho chips (for serving) or toasted pita bread, cut into triangles (for serving)

Steps:

  • In a small pan, saute onion and garlic.
  • Next saute bell pepper, then mushrooms.
  • Let cool.
  • In a bowl soften cream cheese with a spoon.
  • Add cooled vegetables, crab meat, and cheese.
  • Store in container in fridge until ready to serve.
  • SERVING INSTRUCTIONS: Place dip in a oven proof shallow bowl.
  • Spread dip evenly in bowl and top with more shredded cheddar cheese.
  • Warm slightly in microwave.
  • Bake in oven at 350 degrees, until slightly bubbling and the top is starting to turn golden brown.
  • Sprinkle with chopped parsley and parlsey sprig.
  • Place bowl on a serving plate and surround with nacho chips and pita points.
