1 cup sugar
6 tablespoons (3/4 stick) cold unsalted butter, cubed
1/2 teaspoon coarse salt
1/2 teaspoon vanilla extract
1/2 cup heavy cream

Steps:

  • In a medium saucepan, heat sugar over medium-high until melted and brown at edges, 3 minutes. With a heat-resistant spatula, pull melted sugar toward center until all sugar is melted and caramel is deep amber in color, 3 minutes more.
  • Immediately whisk in butter, salt, and vanilla extract (take care as mixture is extremely hot and will bubble).
  • Whisk in cream.
  • Pour into a heatproof container and let cool. (To store, refrigerate, up to 3 weeks.)

2 pkg. (3.9 oz. each) JELL-O Chocolate Flavor Instant Pudding
1/3 cup sugar
2 cups cold milk
1-1/4 cups water
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350°F.
  • Prepare cake batter as directed on package. Pour into 13x9-inch baking dish sprayed with cooking spray.
  • Beat dry pudding mixes, sugar, milk and water with whisk 2 min.; pour over batter. Place baking dish on baking sheet.
  • Bake 55 min. to 1 hour or until toothpick inserted in center of cake layer comes out clean. Cool 20 min. (Sauce will thicken slightly as it cools.)
  • Serve topped with COOL WHIP.

1 cup butter, cubed
8 ounces semisweet chocolate, chopped
1 ¼ cups white sugar
1 cup unsweetened cocoa powder
6 eggs
1 ½ cups white sugar
¼ cup water
1 ½ teaspoons fresh lemon juice
1 cup heavy cream
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of a 10 inch springform pan, and line with parchment paper.
  • Melt the butter in a large saucepan over low heat. Stir in chocolate, and continue to stir until almost melted. Remove from heat, and stir until melted and smooth. In a large bowl, stir together 1 1/4 cups sugar and the cocoa powder. Whisk in the eggs until well blended, then whisk in the chocolate and butter. Pour the batter into the prepared pan.
  • Bake for about 45 minutes in the preheated oven. The cake is ready when the edges have nicely puffed and the surface is firm except for a small spot in the center that will jiggle when the pan is gently shaken. Cool cake in the pan over a wire rack. Run a knife around the sides of the pan to loosen the cake, then remove the sides of the pan, and invert onto a serving plate. Remove the parchment paper.
  • In a heavy saucepan, stir together 1 1/2 cups of sugar, water, and lemon juice. Bring to a boil over medium heat, and cook without stirring until the syrup is a deep amber color. For an accurate color check, dip a metal spoon into the syrup and lift it out of the pan to check the color. Once the syrup is amber, remove from the heat. Gradually stir in the cream. The mixture will bubble vigorously. If lumps form, stir gently over low heat to dissolve them. Stir in 2 tablespoons of butter.
  • Cut the cake into wedges while warm, and serve with caramel sauce spooned over it. You can also chill the cake and sauce, then warm again before serving.

This is a Wonderful Cake to make...Please note: You can add 1/4 of Rum OR 1/2 C of Bailey's Liquor if you want to make this for Adults only. **USE LONG CAKE PAN

1 box(es) dark chocolate cake mix
1 jar(s) sander's classic caramel or caramel fudge sauce
1 Lrg box(es) chocolate instant pudding
1/4 cup(s) powder sugar

Steps:

  • Follow direction on the box of the Dark Chocolate Cake mix. * 9 x 13" Cake Pan Let the cake completely cool down
  • Take a Wooden Spoon and poke holes into the cake 2" a part using the end of the spoon. Do not push all the way through the cake.
  • Warm up in jar the Sander's Classic Caramel Sauce or Caramel Fudge Sauce and pour over the top of the whole cake. Refrigerate overnight. Make sure all the whole are filled with the Caramel and all over the top of the cake.
  • With electric mixer Prepare the Chocolate Instant Pudding as the recipe states. Mix in the 1/4 cup of powered sugar mix well. note: If you are making this for Adults you can also add 1/2 C of Bailey's Liquor to your pudding. Pour all the Pudding over the top of the cake and put in refrigerator for 2 hours.
  • You will get so many compliments on this cake..It's a HUGE HIT all the time...Enjoy!

1 cup (2 sticks) butter, cut into pieces
8 ounces semisweet chocolate chips (about 1 1/2 cups)
1 1/4 cups sugar
1 cup sifted unsweetened cocoa powder
6 large eggs
Caramel sauce
1 1/2 cups sugar
1/4 cup water
1 1/2 teaspoons fresh lemon juice
1 cup whipping cream
2 tablespoons (1/4 stick) unsalted butter
Vanilla ice cream

Steps:

  • For cake:
  • Preheat oven to 350°F. Butter 10-inch-diameter springform pan. Line bottom with waxed paper. Stir butter and chocolate in heavy large saucepan over low heat until melted. Mix sugar and cocoa in large bowl. Add eggs; whisk until well blended. Whisk in chocolate-butter mixture. Pour batter into prepared pan. Bake until tester inserted into center comes out clean, about 45 minutes. Cool cake completely in pan on rack. Run knife around pan sides to loosen cake. Release pan sides. (Can be made 1 day ahead. Cover and refrigerate.)
  • For caramel sauce:
  • Stir sugar, water, and lemon juice in heavy medium saucepan over low heat until sugar dissolves. Increase heat; boil without stirring until syrup is deep amber color, about 7 minutes. Remove from heat. Add in cream (mixture will bubble vigorously). Return to low heat; stir until any bits of caramel dissolve. Add butter; whisk until smooth. (Can be made 1 day ahead. Cover and chill.)
  • Cut cake into wedges. If desired, arrange wedges on baking sheet and rewarm in 350°F oven 10 minutes. Rewarm caramel sauce over medium-low heat, stirring often. Place 1 cake wedge on each plate. Drizzle with warm caramel sauce. Serve with ice cream.

1 1/2 ounces good quality semisweet chocolate, finely chopped
1/2 ounce unsweetened chocolate, finely chopped
1 teaspoon unsalted butter, softened, plus
3 tablespoons unsalted butter
3 tablespoons sugar
1 large egg
3 tablespoons all-purpose flour
1/4 teaspoon baking powder
1/2 tablespoon unsweetened cocoa powder
whipped cream, for garnish
cocoa powder, for garnish

Steps:

  • Lightly butter 2 ramekins with 1 teaspoon of butter and set aside.
  • In the top of a double boiler place semi-sweet and unsweetened chocolate and stir occasionally until melted. Remove from heat and stir in 3 tablespoons butter and sugar until smooth. Add eggs, flour, baking powder and cocoa. With an electric mixer, beat at medium-high speed until pale and very thick, about 5 minutes. Place mixture in prepared ramekins, filling about half-full. Cover with plastic wrap and freeze for at least 3 hours.
  • When ready to serve, preheat oven to 375°F Place ramekins on the middle shelf in the oven and bake until edges are set but centers are still shiny, about 10 or 11 minutes.
  • Invert pudding cakes onto plates and serve immediately, garnished with whipped cream or ice cream, and dust with cocoa powder. (Desserts may also be served directly from ramekins).

Warm caramel sauce and a little chocolate syrup spooned into a ramekin's bottom results in a cake with an irresistibly gooey surprise. Plan ahead, because you need to freeze the ramikins for about 70 minutes before baking. Adapted from Country Living magazine.

butter, softened
1 (12 1/4 ounce) jar good-quality caramel sauce
6 tablespoons chocolate syrup (optional but so good)
1 1/2 cups sifted cake flour (or sifted white flour)
1/3 cup dutch-process unsweetened cocoa powder
1 teaspoon baking soda
3/4-1 cup sugar
1/2 teaspoon salt
1 cup strong brewed coffee, warm (I use decaf)
1/3 cup light olive oil
1 1/2 teaspoons pure vanilla extract
1 tablespoon aged balsamic vinegar

Steps:

  • Preheat oven to 400*F.
  • Generously coat six 6-ounce ramekins with softened butter. Chill in the freezer for about 10 minutes, and brush with a second coat of butter. Pour 3 tablespoons caramel sauce into the bottom of each ramekin. Now put 1 tbls. of the chocolate syrup on top of the caramel sauce and transfer to the freezer for 1 hour.
  • Whisk the cake flour, cocoa, baking soda, sugar, and salt together in a large bowl and set aside. Stir the coffee, oil, vanilla, and vinegar together and whisk into the flour mixture just until smooth.
  • Fill each ramekin with 1/3 cup of batter.
  • Bake at 400 degrees F until the cake is set and a toothpick inserted in the center comes out clean, and the caramel has bubbled up the sides, about 20 minutes. Enjoy!
