BANANA-WALNUT SPRING ROLLS WITH CARAMEL-RUM SAUCE



Banana-Walnut Spring Rolls with Caramel-Rum Sauce image

For sauce
1 cup sugar
1/2 cup water
3/4 cup whipping cream
1 1/2 tablespoons dark rum
For Rolls
12 spring roll wrappers
3 small bananas, peeled, quartered lengthwise, trimmed to 4 inches
1/4 cup toffee bits (such as Skor)
1/4 cup finely chopped toasted walnuts
Vegetable oil (for deep-frying)
Powdered sugar
Chinese five-spice powder

Steps:

  • Make sauce:
  • Stir sugar and 1/2 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat and boil until syrup turns deep amber, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 12 minutes. Reduce heat to low. Add cream (mixture will bubble vigorously) and stir until caramel bits dissolve. Remove from heat. Mix in rum. (Can be made 1 day ahead. Chill. Before serving, rewarm over low heat, stirring occasionally.)
  • Make rolls:
  • Arrange 4 spring roll wrappers on work surface (keep remainder covered). Place 1 banana piece diagonally across 1 corner of each wrapper. Brush opposite corner with water. Drizzle each banana with 1 teaspoon caramel sauce, 1 teaspoon toffee bits and 1 teaspoon walnuts. Fold in wrapper corner closest to banana. Roll wrapper over banana once, then fold in sides and roll up as for egg roll, pressing ends to seal. Repeat filling and rolling remaining wrappers. (Can be made 2 hours ahead. Cover and chill.)
  • Pour enough oil into heavy large saucepan to reach depth of 3 inches. Heat oil to 375°F. Working in batches, fry rolls in oil until deep golden brown, turning frequently, about 3 minutes per batch. Using slotted spoon, transfer rolls to paper towels and drain. Arrange 2 rolls on each plate. Sift powdered sugar over. Sprinkle with five-spice powder. Drizzle caramel sauce around rolls and serve.

2 tablespoons sugar
2 (1/4 ounce) packets yeast (approximately 4 1/2 to 5 tsp.)
7/8 cup lukewarm milk
4 cups flour
1 cup butter, softened
1 teaspoon salt
2 eggs, separated
1/2 cup butter
1 1/2 lbs ground nutmeats (we use walnuts, approximately 6 cups)
1 cup sugar
3/4 cup milk
1 teaspoon vanilla
1/3 cup butter (optional)
3 1/2-4 cups confectioners' sugar (optional)
1 egg yolk (optional)
3 tablespoons milk (optional)
1 1/2 teaspoons vanilla (optional)

Steps:

  • Dough: Dissolve yeast in milk with sugar. Add butter, salt, and egg yolks.
  • Stirring to mix. Add 2 cups flour and mix well, add remaining flour. Knead 5 minutes.
  • Divide dough into 3-4 parts, cover and let rise while preparing filling.
  • Filling: Heat all ingredients in a sauce pan until butter melts and sugar dissolves. Remove from heat and let cool.
  • Roll out each portion of dough to an 1/8 inch thickness in a rectangle shape. Spread an equal amount of filling on each portion on dough. Roll up jelly roll fashion and let raise 15-20 minutes.
  • Brush with egg whites before baking. (I accidentally forgot to do this one year and have decided we like it better without the egg wash.) Bake at 350°F for 30 minutes.
  • Once cool, top with icing, if desired.
  • Icing: Cream butter and egg yolk. Then add confectioner's sugar a cup at a time beating on medium speed. Add vanilla and milk 1 Tbls. at a time and beat on high until fluffy.

½ cup white sugar
¼ cup brown sugar
1 tablespoon ground cinnamon
¼ cup crushed walnuts
1 Golden Delicious apple, diced
1 cup butter, softened

1 (12 fluid ounce) can or bottle caffeinated citrus-flavored soda (such as Mountain Dew®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Roll 1 can of crescent rolls out on a cutting board. Make one single piece of dough by rolling the dough with a rolling pin to a 9x13-inch rectangle; make sure the seams don't separate. Repeat with remaining can of crescent rolls. Set 1 dough sheet atop the other to make a double crust.
  • Mix 1/2 cup white sugar, brown sugar, cinnamon, crushed walnuts, and diced apples in a bowl. Sprinkle evenly over the dough.
  • Roll the dough lengthwise, so you end up with a long tube. Cut into 1-inch slices. Place the rolls into prepared dish facing up.
  • Melt butter with 1 1/2 cup white sugar in a saucepan over medium-high heat. Cook and stir until sugar dissolves completely, about 5 minutes. Remove saucepan from heat and whisk citrus-flavored soda into the butter mixture; pour over cinnamon rolls.
  • Bake in preheated oven until golden brown and no longer doughy in the middle, about 30 minutes. Set aside to cool slightly, 5 to 10 minutes. Flip the rolls out of the baking dish onto baking sheet and allow the sticky sauce to drip over the rolls.

Steps:

  • Combine dates, walnuts, 3 tablespoons honey, orange peel, and cardamom in processor. Blend until paste forms.
  • Preheat oven to 375°F. Line rimmed baking sheet with parchment. If using 17 1/2x12 1/2-inch phyllo sheets, place stack of 8 phyllo sheets on work surface. If you're looking to wow your crowd this Thanksgiving, consider these festive eggplant rolls. Courtesy of reader Christine Vartanian Datian of Las Vegas, these decadent rolls of Japanese eggplant strips, ricotta and walnuts are colorful and tasty, with an added crunch. Ms. Datian said the dish is influenced by her Armenian heritage. Sometimes she substitutes almonds or pecans for the walnuts and sour cream for the ricotta, depending on her guests, but her preference is the combination of walnuts and ricotta, layered on the strips of Japanese eggplant. She serves it as both an appetizer and a main course, next to a fig and basil salad and with a variety of California red and white wines. She garnishes the dish with parsley and green onions to add more color. "It's very, very pretty," said Ms. Datian. "The ricotta and the walnuts with the crunch factor -- people like it, and children like it too."

6 Japanese eggplants, sliced lengthwise in 1/2-inch slices
Kosher salt
1 1/2 cups ricotta cheese
1/2 cup finely ground walnuts, (about 1 cup whole walnuts ground in a food processor)
2 cloves garlic, finely grated or chopped
2-3 tablespoons olive oil
1 teaspoon dried dill
1/2 teaspoon sea salt
1/2 teaspoon nutmeg
Juice and zest from 1 lemon
Canola oil
8-10 cups mixed salad greens
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
¼ cup candied walnuts
1 handful basil

Steps:

  • Wash eggplants, cut off and discard stems. On a cutting board, using a mandoline or sharp knife, slice each eggplant lengthwise in long pieces, 1/2-inch thick. Sprinkle eggplant slices with Kosher salt and place in a large colander to drain for 15 to 20 minutes. Discard liquid.
  • In a medium bowl, combine the ricotta cheese, walnuts, garlic, olive oil, dill, sea salt, nutmeg, lemon juice and lemon zest. Mix all ingredients until smooth in texture and set aside. (Ricotta filling should be chilled until ready to use.)
  • In a large deep skillet, pour ½-inch canola oil and heat over medium heat until oil is hot. Blot the pieces of eggplant with paper towel to remove any water droplets and fry eggplant slices in batches until golden brown on both sides, about 90 seconds per side. Remove from pan to drain flat on paper towels.
  • Place slices of eggplant on a tray or dish and spread a tablespoon or two of the ricotta filling across each slice; roll up pin-wheel style and repeat until all eggplant slices have been filled and rolled.
  • In a medium bowl, toss the salad greens with olive oil and balsamic vinegar. Arrange the mixed greens on four serving plates and serve with eggplant walnut ricotta rolls. Toss torn basil leaves over the salad. Garnish salad with candied walnuts.

1 cup of sugar
1.5 cups of flour (sifted, self-rising)
1 teaspoon of baking powder
1 teaspoon of vanilla extract
1 egg
1 tablespoon of sour cream
2 tablespoons of water
For the filling:
3-4 apples
1 teaspoon cinnamon powder
1 tablespoon of sugar
½ cup of chopped walnuts

Steps:

  • The dough: Cut 1 stick of butter (or shred), mix it with 1 cup of sugar and mash the butter with a fork or knife until it will turn into butter crumbs. Add 1 cup of flour, mix very well with butter and sugar. In a cup mix: 1 egg, 2 tablespoons of water +1 tablespoon of sour cream. Pour into the butter-sugar-flour mixture and knead the dough. The dough will be very tender and fragile. Form out of the dough two balls and put the dough into the freezer for 10 minutes. Filling: Wash, peel and chop the apples into the midsized chunks, add sugar, cinnamon and walnuts. Set aside. Forming the rolls: Take out the dough. Take one ball and gently (!) roll it out with the dough roller. Don't press too hard this dough is fragile. Cut the dough layer into two halves. (This will be your two big rolls that you will cut into the small bite size rolls) on one half of the dough put the apple filling. Put not too much of the filling and put it in a row. Then roll the layer with filling in and cut into the small bite size rolls crosswise. Put the small rolls roses on a baking dish 4-5 inches away from each other as they will become bigger while baking. Repeat the same procedure with the second half of your rolled out dough and with the second ball of dough. ***Tip from Helen*** I used for the second dough ball cream cheese filling. The filling is very simple to make ¾ of a cream cheese pack and 2-3 tablespoons of sugar mixed. When you mux the cream cheese and sugar spread it on each dough layer and roll it in as I wrote before. The rest of the procedure is the same.*** I honestly can't decide which rolls are more delicious: with apples and cinnamon and walnuts or with cream cheese. So bake the two versions usually. It's very delicious, simple and warm fall dessert. Enjoy!

140g walnuts
100g wholemeal flour
400g strong white bread flour
14g sachet fast-action yeast
25g butter
250g roquefort cheese, crumbled
2 medium eggs , beaten

Steps:

  • Place the walnuts in a food processor and pulse to chop finely; leave to one side. Put the flours, 10g salt, yeast, butter and 300ml water in a bowl, stir together and begin massaging the ingredients for a minute. If the mixture seems dry, add more water a tbsp at a time to make a soft but not sticky dough, then knead in the bowl for a further couple of minutes to bring the dough together.
  • Tip the dough onto a lightly floured work surface and knead well for 10 mins before returning to the bowl. Cover the bowl with cling film and leave to rise in a warm place for 1 hr. Briefly knead the walnuts into the dough, then leave to rise in the bowl for a further 20 mins.
  • Tip the dough out onto a lightly floured surface and roll out into a rectangle, approx 50 x 20cm, 1cm thick. Sprinkle the Roquefort evenly over the dough and lightly press in. Place the rectangle width-ways in front of you and roll up the rectangle like a Swiss roll. Cut into 8 equal sized pieces and place them onto a lightly greased baking tray, cut-side down. Cover with cling film and leave to rise for 1 hr.
  • Heat oven to 220C/200C fan/gas 7. Brush each round of dough with the beaten egg and bake for 20 mins. Leave to cool for a few minutes and eat while still warm. These are delicious on their own or served with a soup or a chunky salad with apple in it.

5 oz feta, patted dry if wet, then crumbled
1/4 cup walnuts, toasted and finely chopped
3/4 teaspoon dried Aleppo chile flakes
9 (17- by 12-inch) phyllo sheets (preferably spelt phyllo)
1 1/2 sticks (3/4 cup) unsalted butter, melted

Steps:

  • Preheat oven to 350°F.
  • Blend feta, walnuts, Aleppo flakes, and a pinch of salt in a food processor until a ball begins to form. Form into 27 (1-inch) balls, then roll balls into 2 1/2-inch logs.
  • Leave phyllo sheets stacked and cut lengthwise into thirds, then stack thirds into 1 pile. Cover with plastic wrap and a dampened kitchen towel.
  • Place 1 sheet of phyllo with a short end nearest you on a work surface (keep remaining sheets covered) and brush with butter. Place a feta log in center of phyllo sheet parallel to short end. Fold phyllo in half, enclosing log, and brush with butter. Starting at end with log, roll up pastry to resemble a cigar.
  • Transfer, seam side down, to a lightly buttered baking sheet, then make 26 more rolls in same manner.
  • Brush rolls with some butter and bake in middle of oven until golden, about 25 minutes. Cool on baking sheet on a rack. Serve warm or at room temperature.

This recipe has been adapted from an Australian Women's Weekly Recipe. It makes two rolls. It keeps for a month or so if wrapped in plastic cling wrap and placed it in the freezer. You can slice it and freeze in single serves to take in your lunch box. Can substitute pecans for the walnuts or leave them out all together (just add in some extra dates instead). 1 cup dates, chopped (dried pitted dates)
1 cup brown sugar, measure firmly packed
1 1/4 cups water
60 g butter
1/2 teaspoon bicarbonate of soda
1 egg, lightly beaten
1/2 cup walnuts or 1/2 cup pecans, chopped
2 cups self-raising flour (alternately use 2 cups plain flour and 4 teaspoons baking powder)

Steps:

  • Grease 2 - 8cm round x 17cm long nut roll tins. If you do not have nut roll tins you can use a bar loaf tin and cover it tightly in foil- the result is not as quite as good.
  • Preheat oven to 180°C (350°F ).
  • Combine the date, butter, sugar and water in a saucepan. Stir over low heat until the sugar and butter have melted. Bring to boiling point and then remove from the heat.
  • Allow the mixture to cool.
  • Stir the sifted bicarbonate soda, sifted flour, egg and nuts into the cooled date mixture.
  • Spoon the mixture into the greased tins. Replace the lids tightly and bake upright in a moderate oven for 40 minutes.
  • Stand rolls ten minutes before turning out onto wire racks to cool.
  • Serve sliced with butter.
  • Suitable to slice and freeze.
  • As a variation you can use pecan nuts or macadamias in place of the walnuts.

This is a traditional Hungarian Christmas sweet, also made at Easter. Offered to visitors who have to give an opinion as to which of the two they prefer.

1100g plain flour
500g butter or margarine
2x 7g sachets of dried yeast
50 g caster sugar
5 eggs beaten with
3 tablespoons yoghurt or soured cream
600 g ground walnuts (not too fine)
250g sugar
160 g honey
30 ml water
150g raisins or sultanas
tsp cinnamon
grated lemon peel
15 ml (1tbsp) rum (optional)
600 g ground poppy seeds
250g sugar
160 ml honey
15ml (1tbsp) rum (optional)
150g raisins or sultanas
tsp cinnamon

Steps:

  • Rub the butter or margarine into the flour with the yeast. If a food processor is used, divide the quantities into two halves.Blend until it looks like fine crumbs.
  • Add the sugar, eggs beaten with yoghurt or soured cream. Pulse until dough clumps together.
  • Mix and knead well until very smooth. The pastry should be fairly soft. Allow to rest for an hour and a half
  • Take one half on the dough and divide into 5 balls. Roll each ball out on a floured surface to approximately 12in by 8in Spread 1/5 of the walnut filling and roll up. With the seam underneath place on a sheet on non stick baking paper. Brush twice with egg and prick with a fork. leave overnight in a cool place to "marble".
  • Take the other half of the dough and divide into 5 pieces, roll out each as before and fill each with 1/5 of poppy seed mixture. Roll up place on baking sheet covered with non stick paper, paint with egg and prick with a fork.
  • To make the walnut filling, make a syrup with the sugar, water and honey, add ground walnuts and the other ingredients. Allow to cool slightly before spreading on the pastry.
  • To make the poppy seed filling, cook the ground poppy seeds with the sugar, water and honey in a saucepan, remove from heat and add rum cinnamon and raisins.
  • The next day brush the tops of the 10 rolls with egg cook in a preheated oven at 160 Centigrade for about 25 minutes until nicely browned. If the filling is not too wet the roll should not split.
  • When cool it can be kept in a tin for one to two weeks. To serve cut into 2-3 cm slices. Also freezes well.

1 medium onion, chopped (1 cup)
1 tablespoon salt, divided
1/2 cup olive oil
2 cups whole milk
2 teaspoons active dry yeast (from a 1/4-oz package)
1/4 cup warm water (105-115°F)
1 tablespoon mild honey or sugar
5 1/2 cups all-purpose flour plus more for kneading and dusting
1 cup rye flour
1/2 teaspoon black pepper
3/4 cup walnuts, toasted, cooled, and coarsely chopped
1 large egg beaten with 1 tablespoon water for egg wash
1/4 cup nigella or poppy seeds

Steps:

  • Line 2 large baking sheets with parchment paper. 3Cook onion with 1/4 teaspoon salt in oil in a 10-inch skillet over medium heat, stirring occasionally, until softened, 4 to 5 minutes. Drain onions in a sieve set over a bowl, reserving onions. Stir milk into onion oil in bowl.
  • Stir together yeast, warm water, and honey in a large bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.)
  • Mix flours, pepper, milk mixture, and remaining 2 3/4 teaspoons salt into yeast mixture with a wooden spoon or rubber spatula until a soft dough forms. Turn out dough onto a floured surface and knead, dusting surface and your hands with just enough flour to keep dough from sticking, until dough is elastic and smooth, about 6 minutes.
  • Pat dough into a 9-inch square and sprinkle with onions and walnuts. Fold dough over to enclose filling and pinch edges to seal. Knead to distribute onion and nuts throughout dough, dusting with just enough flour to keep dough from sticking, about 2 minutes. (Dough will be lumpy; if any nuts or pieces of onion pop out, just push them back in.)
  • Put dough in an oiled large bowl and turn to coat. Cover bowl with plastic wrap and a kitchen towel and let dough rise in a draft- free place at warm room temperature until doubled, 1 1/2 to 2 hours.
  • Punch down dough (do not knead), then halve. Roll half of dough on a lightly floured surface with lightly floured hands into a 12-inch-long log (keep remaining half covered with plastic wrap). Cut log into 12 equal pieces and roll each into a ball by cupping your hand and pushing dough against work surface as you roll in a circular motion. Arrange rolls 2 inches apart on a baking sheet. Cover rolls with a kitchen towel (not terry cloth). Make more rolls with remaining dough, arranging and covering them on second sheet. Let dough rise in a draft-free place at warm room temperature until doubled, 1 to 1 1/2 hours.
  • Preheat oven to 375°F with racks in upper and lower thirds.
  • Brush rolls with egg wash and sprinkle with nigella seeds. Bake, switching position of sheets halfway through, until golden brown, 20 to 25 minutes. Transfer rolls to a rack and cool at least 20 minutes.

2 pkg crescent rolls
4 oz cream cheese, room temperature
1/4 c raspberries
3 Tbsp honey
1/4 c chopped walnuts
1 Tbsp butter, melted
1 Tbsp sugar

Steps:

  • 1. Preheat oven to 375 degrees. Line a jelly roll size cookie sheet with parchment paper.
  • 2. Combine cream cheese, walnuts, honey, and raspberries.
  • 3. Mix until blended.
  • 4. Open two packs of crescent rolls and place a 1 teaspoon of the mixture on the widest part of the triangle.
  • 5. Roll crescent dough away from you until the narrow end is underneath and place on the parchment paper.
  • 6. Repeat 15 more times.
  • 7. Bake 10 minutes.
  • 8. Remove from oven and brush the tops lightly with melted butter.
  • 9. Sprinkle white granulated sugar on top of each one to taste.
  • 10. Place cookie sheet back in the oven 2 more minutes until the dough is a light golden brown color. Yields 16

1/4 cup sugar
18 sheets phyllo dough
1 lb unsalted butter, melted
2 cups water
1 1/2 cups sugar
1 lemon wedge

Steps:

  • Preheat oven to 375.
  • Mix nuts, cinnamon, cloves, and 1/4 cup sugar and set aside.
  • Brush 3 sheets of phyllo with butter and stack on top of each other. Sprinkle evenly with thin layer of nut mixture. Repeat with 3 more sheets and another layer of nuts. Roll up like a cinnamon roll. Brush top of roll with butter.
  • Repeat to make 2 more rolls.
  • Cut each roll in 1" slices. Place slices next to each other in baking pans.
  • Bake 30 minutes, until pastry is brown.
  • Meanwhile, make glaze. Combine 2 cups water, 1 1/2 cups sugar and piece of lemon in pot and simmer about 10 minutes.
  • Pour warm syrup over cookies as soon as they come out of the oven.

1/2 teaspoon powdered cloves
1/4 cup sugar
18 leaves of phyllo dough
2 cups (1 pound) unsalted butter, melted
2 cups water
1 1/2 cups sugar
1 slice lemon

Steps:

  • Preheat oven to 375 degrees.
  • Combine nuts with cinnamon, cloves and sugar. Set aside.
  • Brush three phyllo leaves generously with melted butter and stack them on each other evenly. Sprinkle evenly with a thin layer of the nut-sugar mixture.
  • Brush three more sheets of dough with butter, stack them and lay them over the nut mixture. Sprinkle another layer of nuts on the top sheet of dough.
  • Roll lengthwise, jellyroll fashion. Brush top of roll with melted butter. Prepare two more rolls in this fashion, using the remaining sheets of dough and nut mixture.
  • Cut each roll into one-inch slices. Place the slices close together, side by side, in one or more baking pans.
  • Bake about 30 minutes, or until the pastry is crisp and golden brown.
  • While walnut rolls bake, prepare the syrup. Combine water, sugar, and lemon slice in a small, heavy-bottom saucepan and simmer for about 10 minutes, or until a light syrup is formed.

Number Of Ingredients 10

a 1/4-ounce package (2 1/2 teaspoons) active dry yeast
2 1/2 to 3 1/4 cups all-purpose flour
1 cup creamed cottage cheese
1 large egg, beaten lightly
2 tablespoons finely chopped fresh dill
1 tablespoon dill seeds
1/4 cup finely chopped walnuts
1 tablespoon freshly grated lemon zest
1 1/2 teaspoons salt
about 2 tablespoons unsalted butter, melted and cooled

Steps:

  • In a large bowl proof the yeast in 1/2 cup lukewarm water for 5 minutes, or until it is foamy. Add 1 cup of the flour, the cottage cheese, the egg, the dill, the dill seeds, the walnuts, the zest, and the salt and beat the mixture with a wooden spoon until it is combined well. Stir in 1 1/2 cups of the remaining flour, 1/2 cup at a time, and beat the mixture with the spoon until it is combined well. Turn the dough out onto a floured surface and knead it for 8 to 10 minutes, incorporating enough of the remaining 3/4 cup flour, if necessary, to form a soft, slightly sticky dough. Transfer the dough to an oiled bowl, turning it to coat it with the oil, and let it rise, covered with plastic wrap, in a warm place for 1 1/2 hours, or until it is double in bulk.
  • Stir down the dough, halve it, and on a lightly floured surface roll each half into a rope about 1 inch in diameter. Cut each rope into 24 pieces with a sharp knife and form the pieces into balls. Put 3 balls of dough into each of 16 buttered 1/3-cup muffin tins, brush them with the melted butter, and let the rolls rise, uncovered, in a warm place for 45 minutes to 1 hour, or until they are almost double in bulk. Bake the rolls in the middle of a preheated 400°F. oven for 18 to 20 minutes, or until they are golden. The rolls may be made 1 week in advance and kept wrapped tightly and frozen. Reheat the rolls, wrapped in foil, in a preheated 400°F. oven for 25 to 30 minutes, or until they are heated through.
