CITRUS WALNUT PASTA SALAD
This recipe is from the good folks at Costco. They always make cooking a lot easier.

Steps:
- Preheat oven to 350°. Place walnuts on cookie sheet in a single layer in bake for 8 to 10 minutes checking frequently. Let cool.
- Cook pasta as the package directs, drain and let cool completely. to make the dressing mix all ingredients in a large bowl, stirring with a whisk to blend.
- Add pasta, chicken, cheese, celery, red onion, walnuts chives and parsley to the dressing. Toss gently to mix. Makes six servings.
- If you buy walnuts in sealed packaging they can be stored in their original packaging . Or, open the bag transfer the walnuts to an airtight container to maintain freshness .keep walnuts in an airtight container for up to six months in the refrigerator and up to one year in the freezer
CHICKEN, ROASTED CAPSICUM, FETA AND WALNUT PASTA SALAD
Another great quick and easy BBQ chicken salad! Pecan can be used instead of walnuts. I've allowed 15 minutes cook time for pasta.

- Cook pasta in large saucepan of boiling water until just tender, drain and rinse under cold running water, drain again.
- Drain capsicum, reserving 1/3 cup of the capsicum oil, chop capsicum coarsely.
- Combine capsicum and pasta in large bowl with feta cheese, chicken, walnuts and basil.
- Combine reserved oil with vinegar, garlic and mustard, mixing well.
- Drizzle dressing over chicken mixture, toss gently to combine.

- Cook the pasta according to packet instructions, drain, toss in olive oil and let cool completely.
- Whisk together the dressing ingredients.
- Add salt and pepper to taste.
- Toss the salad leaves in a little of the walnut dressing so that each leaf is covered in dressing.
- Add the crumbled stilton cheese and toss again gently.
- Garnish with the walnut halves.
- Serve the rest of the dressing with the salad.

- Prepare pasta according to package directions; drain and cool.
- In a small bowl, blend yogurt, honey and orange juice concentrate.
- In a large bowl, combine pasta, and remaining ingredients, except mandarin oranges. Add yogurt mixture; toss to coat. Add mandarin oranges and gently toss again. Cover and chill thoroughly.

BABY BOW TIE AND WALNUT PASTA SALAD

- Toast 1/2 cup pasta. (I prefer using the microwave for toasting)spread pasta on a microwave safe plate. Microwave on high checking and tossing in 1 minute intervals until golden. In saucepan of boiling salted water cook toasted and remaining pasta until al dente, 7 - 8 min. Drain and rinse. Set aside in large bowl. In skillet heat vegetable oil over medium heat: cook onion, stirring often until softened about 2 min. Add walnuts cook 2 min stir in green pepper & cook 1 more min. Pour over pasta. Add chopped coriander. Toss to combine. In small bowl whisk together oilive oil, lemon juice, salt & pepper pour over pasta mixture. Toss to combine. Garnish with cherry tomatoes and coriander sprigs.

Steps:
- Cook noodles in boiling salted water until al dente. Drain, rinse with cold water and drain well. Toss with walnut oil. Cover and chill.
- Combine the cheese, milk and sour cream in a blender or food processor and process until creamy. Stir in the garlic salt, if using, and the lemon juice.
- Toss the sauce with the noodles; add walnuts and toss again.
- Season to taste with salt and pepper.
- Serve on a platter or individual salad plates and garnish with the endive and watercress, if desired.
