Green Bean Casserole With Walnut Bacon Crumble image

Chanterelle mushrooms and a crunchy, sweet, and salty walnut-bacon topping make this holiday side dish a stand-out.

Number Of Ingredients 15

For the topping:
4 slices thick-cut bacon, finely chopped
1 medium onion, diced
½ cup walnuts
½ cup finely chopped parsley
For the beans and sauce:
1 pound fresh green beans, rinsed and trimmed
2 tablespoons unsalted butter
12 ounces chanterelle mushrooms, roughly chopped
Hefty pinch of salt and freshly ground black pepper
2 cloves of garlic, minced
¼ teaspoon freshly grated nutmeg
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup heavy cream

Steps:

  • Preheat the oven to 475°F.
  • Make the topping:
  • In a large cast-iron skillet over medium heat, cook the bacon until it is lightly crisp (it will cook a little more in the oven, so no need to get it extra crispy). With a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Add the onion to the bacon drippings (there should be about 1 tablespoon in the skillet; if there's way more than that, pour out some and save it for future use). Cook the onion until it is soft and tender, about 8 minutes. Transfer it to a bowl.
  • Add the walnuts to the same pan and cook, shaking the pan often, until they are lightly golden, about 5 minutes. Add the walnuts to the bowl with the onion and crumble in the bacon. Add the parsley and toss the whole mixture well. Set aside.
  • Wipe out the skillet (you'll be using it again).
  • Make the beans:
  • Bring a large pot of heavily salted water to a boil. Add the beans and blanch them for 5 minutes. While they cook, prepare a large bowl of ice water. Drain the beans in a colander and immediately plunge them into the ice water to stop the cooking. Drain them again and set them aside.
  • Make the sauce:
  • Melt the butter in the cast-iron skillet set over medium-high heat. Add the mushrooms and a hefty pinch of salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the cream. Cook until the mixture thickens, stirring occasionally, 6 to 8 minutes.
  • Remove the pan from the heat and add the green beans. Sprinkle them evenly with the bacon and onion mixture and bake until bubbly, approximately 15 minutes.
  • Serve immediately.

2 shallots, thinly sliced
6 garlic cloves, crushed
2 tablespoons olive oil

Steps:

  • Preheat oven to 425°. In a large bowl, combine green beans, shallots and garlic; drizzle with oil and sprinkle with salt and pepper. Transfer to two 15x10x1-in. baking pans coated with cooking spray., Roast 15-20 minutes or until tender and lightly browned, stirring occasionally. Remove from oven; stir in 1 teaspoon lemon zest.   • Place beans in a large saucepan and cover with water. Bring to a boil. 2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.
  • Melt butter or margarine with oil in heavy large skillet over high heat. Add beans and toss until heated through, about 4 minutes. Season with salt and pepper. Add walnuts and parsley and toss. Transfer to bowl and serve.

2 tablespoons vegetable oil spread
4 ounces mushrooms, minced
1 cup chopped onion
3 tablespoons flour
1 ½ cups chicken stock
½ cup fat-free half and half
¾ teaspoon salt
1 teaspoon Freshly ground pepper to taste
1 ½ pounds fresh green beans, trimmed
⅔ cup crushed whole grain seasoned croutons
⅔ cup chopped walnuts
2 tablespoons vegetable or soy spread, melted
½ cup minced onion

Steps:

  • Melt spread in a medium saucepan over medium heat. Add mushrooms and onion; cook, stirring frequently, for 10 minutes. Stir in flour; cook and stir for 5 minutes more. Slowly add stock and bring mixture to a boil; reduce heat and simmer for 10 minutes. Stir in half & half and season with salt and pepper; set aside.
  • Preheat oven to 350 degrees F. Cook beans in boiling water for 5 minutes. Drain well then add to mushroom sauce; toss to coat with mixture. Transfer to an 11 x 7-inch baking dish.
  • Stir together all topping ingredients until well blended and sprinkle around the edge of the beans.
  • Bake for 20 minutes or until golden brown on top.

3 tablespoons butter
2 -3 roasted garlic cloves, minced
1 tablespoon fresh thyme or 1 teaspoon dried thyme
2 -3 tablespoons brown sugar (add enough depending on how sweet you like it)
2 1/4 teaspoons soy sauce
2 1/4 teaspoons Worcestershire sauce
4 slices cooked bacon, cut into 1 inch pieces
4 -5 tablespoons walnuts, toasted & sliced

Steps:

  • Place beans in large saucepan and cover with water.
  • Bring to a boil; cook, uncovered, for 8-10 minutes or until crisp-tender.
  • Meanwhile, melt butter in large skillet over low to medium heat.
  • Saute garlic for a couple of minutes until tender being careful not to burn; add the thyme.
  • Stir in the brown sugar, soy sauce and Worcestershire sauce.
  • Cook for a couple of minutes until sugar is dissolved.
  • Drain beans; add to the skillet.
  • Cook and stir for 2 minutes or unitl heated through.
  • Sprinkle with the bacon and walnuts; toss to coat.
