Steps:
- In a medium mixing bowl, combine the flour, baking powder, salt, sugar, garlic powder, and onion powder, and stir to combine.
- Make a well in the center of the dry ingredients, and add the eggs, oil, and milk.
- Whisk all ingredients together until a thin and slightly lumpy batter forms.
- Fold in the ham, cheese, and green onion if using.
- Pour the batter into your waffle iron according to manufacturers directions.
- When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.
- Serve waffles hot.

- Lay 2 of the waffles on a counter or cutting board. Place a half-slice of cheese on top of each waffle. Spread some mustard over the cheese if using. Fold each ham slice in half, and place on top of the cheese slices. Layer another half-slice of cheese over each piece of ham. Top with the remaining waffles to form a sandwich.
- Heat a nonstick skillet or cast-iron pan over medium heat.
- Grease the skillet with some butter. Place the sandwiches in the pan, and cook until golden on the underside and the cheese starts to melt, 2 to 3 minutes. Flip the sandwiches, and cook until golden on other side and the cheese fully melts, about 2 more minutes. Serve hot or wrap in foil to pack for a school lunch or picnic.
- Make it Your Own: For an Italian spin on this sandwich, swap in prosciutto for the ham and mozzarella for the Swiss.

- In a medium bowl stir together the flour, sugar, basil, baking powder, and salt. Add egg, milk, shredded cheese, and oil. Stir just until moistened. Add batter to a preheated, lightly greased waffle iron and bake according to manufacturer's directions. When done, use a fork to lift waffle off waffle iron. Repeat with remaining batter. You should have 8 4-inch waffles.
- For each sandwich, spread waffles with mustard. Layer ham, sliced cheese, and arugula on half of the waffles. Top with remaining waffles, spread side down.
