This Chocolate Puffed Wheat Square is a classic dessert recipe made with whole grain puffed wheat and a sticky chocolate sauce.

9 cups plain puffed wheat cereal ((not the sugar-coated variety))
2/3 cup unsalted butter
1 cup brown sugar (packed)
2/3 cup dark corn syrup
1/2 cup cocoa powder
1/2 teaspoon vanilla extract
a pinch of sea salt

Steps:

  • Measure the puffed wheat cereal into a large bowl and set aside.
  • Grease a 9-inch by 13-inch rectangular baking pan and line it with parchment paper (if desired).
  • In a medium pan on the stove, over medium-low heat, add the butter, brown sugar, corn syrup, cocoa powder, vanilla and salt.
  • Using a whisk, gently stir the mixture together as everything melts and comes to a soft boil.
  • Remove the pan from the heat and pour the mixture over the puffed wheat cereal. Stir everything together very well with a spatula.
  • Press the mixture into the prepared pan and place in the fridge for about 1 hour.
  • Slice and serve, or store in an airtight container at room temperature until ready to serve.

10 cups puffed wheat cereal
1 cup corn syrup
1 cup white sugar
½ cup butter
6 tablespoons unsweetened cocoa powder
¼ cup brown sugar
1 teaspoon vanilla extract

Steps:

  • Grease a 9x13-inch pan. Place puffed wheat in a large heat-proof bowl; set aside.
  • Bring corn syrup, white sugar, butter, cocoa powder, and brown sugar to a boil in a heavy saucepan. Remove cocoa mixture from heat; stir in vanilla extract. Pour cocoa mixture over puffed wheat cereal; stir until well combined.
  • Press puffed wheat mixture into prepared pan. Allow to cool completely before cutting into bars.

You know those raspberry filled, thinly chocolate coated Viva Puff cookies you can buy? This tastes almost the same, but I haven't figured out how to add that thin layer of chocolate and still be able to cut the squares afterwards without making a mess. I'd love your ideas! (Prep time does not include chill time)

1 cup all-purpose flour
1/2 cup butter or 1/2 cup margarine
2 tablespoons granulated sugar
3 ounces raspberry gelatin powder
1 cup boiling water
15 ounces frozen raspberries, partly thawed
32 large marshmallows
1/2 cup milk
1 cup whipping cream

Steps:

  • Crust: Mix flour, butter and sugar until crumbly.
  • Press into ungreased 9x9 inch pan and bake at 325F for 15 minutes.
  • Filling: Stir gelatin and water together until dissolved.
  • Add raspberries and mix.
  • Chill until syrupy. Pour over crumbs and return to refrigerator.
  • Melt marshmallows in milk in top of double boiler. Cool.
  • Whip cream until stiff. Fold into cooled marshmallow mixture.
  • Spread over firm raspberry jelly and chill until set.

1 (1-pound) package frozen puff pastry, thawed
1 tablespoon granulated sugar
1 (8-ounce) package cream cheese, cut into 8 equal pieces
8 (1 by 1-inch) squares guava paste (about 4 ounces)
1 egg, beaten with 1 teaspoon water
1/4 cup confectioners' sugar
1 teaspoon milk
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F.
  • Sprinkle the sugar on your work surface to prevent the dough from sticking. Roll out each sheet of puff pastry to an 8 by 8-inch square. Using a pizza cutter or sharp knife, cut each sheet into 4 squares.
  • Make the turnovers: Set a pastry square in front of you with 1 of the corners pointing toward you. Place 1 piece of cream cheese diagonally over the center of the bottom of the square. Top with a piece of guava paste. Brush the edges of the square with beaten egg. Fold the upper half of the square over the filling to make a neat triangle. Crimp the edges with a fork. Repeat with the remaining turnovers, placing them on a parchment paper-lined baking sheet as you go.
  • Bake for 20 minutes or until golden brown and puffy.
  • While the turnovers are baking, mix the confectioners' sugar with the milk and vanilla, stirring to dissolve any lumps. Set aside.
  • Cool the turnovers on a rack for 10 to 15 minutes, then drizzle the glaze over them. Serve warm or at room temperature.

1 sheet of ready rolled puff pastry
60 g butter, melted
2 tablespoons soft brown sugar
1/2 teaspoon ground mixed spice
2 medium granny smith apples

Steps:

  • Preheat oven to moderately hot.
  • Cut pastry into 4 squares, place on an oven tray.
  • Combine butter, sugar and spice, brush half the mixture over pastry squares.
  • Peel apples and cut into wedges, remove core.
  • Cut apple into very thin slices, lay on top of pastry squares leaving a 1cm border.
  • Brush squares with remaining butter mixture.
  • Bake for 15 minutes or until apple is tender and lightly golden.
  • Cut each in half for serving.
