- For mint syrup, place sugar, water and chopped mint in a large saucepan; bring to a boil over medium heat. Cook until sugar is dissolved, stirring occasionally. Remove from heat; cool completely., Strain syrup through a fine mesh strainer; discard mint. Refrigerate, covered, until cold, at least 2 hours., For each serving, place ice in a mint julep cup or rocks glass. Add bourbon, lime juice and 1/4 cup mint syrup; stir until mixture is cold. Top with beer.

- Blend until smooth.
- Add ice; blend until smooth.
- Pour into glass.

- Bring sugar and 1 cup water to a boil in a small saucepan, stirring until sugar dissolves, about 5 minutes. Add tea bags and mint to sugar mixture; let steep for 10 minutes. Strain mixture and discard tea bags and mint.
- Combine tea mixture, cold water, orange juice, and lemon juice in a pitcher.

I came across this recipe in a newspaper several years ago. Its refreshing and great for those who wish to abstain from alcohol yet join in the festivities, at Kentucky Derby parties, or anytime.

- 1. Rinse mint leaves and remove any thick stems. Set aside. Put ginger ale in refrigerator to chill. Mix lemon juice, sugar and water in a small saucepan. Heat and stir until sugar is dissolved. Chill.
- 2. Pour chilled lemon juice mixture over mint leaves and refrigerate for 30 -60 minutes. In a large pitcher mix lemon juice-mint mixture, ginger ale, and ice. Stir vigorously until pitcher is frosted and serve.

- Combine the sugar and water in a 3 quart saucepan. Stir the contents until the sugar is dissolved.
- Stir in lime and lemonade concentrate next. Continue stirring and bring to boil just below the boiling point (210 degrees.) DO NOT BOIL!
- Remove pan from heat and chill. Once chilled, add a ratio of 1 part syrup to 5 parts chilled water.
- Transfer beverage to pitcher and enjoy!
- Garnish each serving with mint leaves, lime slice and a maraschino cherry.
