- 1. Place the chocolate chips in a medium bowl. Heat the milk on the stove or microwave until just boiling. 45 seconds - 1 minute in the microwave works for me. Keep an eye on it. 2. Pour the hot milk over the chocolate and stir slowly until all the chocolate is melted and you have a smooth even mixture. 3. In small sauce pan, combine the cream, butter and sugar. Bring it to a boil while whisking so it doesn't burn. 4. Add the ganache into the sauce pan and stir on low heat until smooth. 5. Transfer the sauce to your storage or serving container.

THE BEST CHOCOLATE SAUCE
Use good quality chocolate and cocoa powder. You'll appreciate the difference in this intensely dark and flavorful chocolate sauce. In place of the corn syrup, you can use agave nectar, rice syrup, or golden syrup. Note that it will lend a slightly different flavor to the sauce, but it'll still be absolutely delicious.

- In a cold saucepan, whisk together the cocoa and the sugar until all lumps are removed. Add the salt and the water and bring to a boil over medium-medium high heat.
- Reduce to a gentle simmer; stirring constantly. Simmer for about 30 seconds and then remove from heat. Let cool and then add in the vanilla.
- Pour into a glass jar and allow to cool. {The chocolate sauce will be very thin when it finishes boiling, but it will thicken quite a bit as it cools.}
- Refrigerate until needed.
