6 tablespoons butter
⅓ cup all-purpose flour
3 cups chicken broth
½ cup milk
½ cup light cream
1 cup finely chopped cooked chicken

Steps:

  • Melt butter in a pot over medium-high heat. Whisk flour into butter until mixture forms a smooth paste, about 1 minute.
  • Whisk chicken broth, milk, and light cream into butter mixture; cook and stir until mixture comes to a boil and thickens, 5 to 10 minutes. Reduce heat to medium, stir in cooked chicken. Return soup to a boil and cook until chicken is heated through, 5 to 10 minutes.

We were at a restaurant, and my husband exclaimed, "You can make better soup than this!" A challenge! We began discussing what we'd add and take out, and soon came up with this comforting soup.

2 medium onions
2 celery ribs
4 cups water
3 boneless skinless chicken breast halves (6 ounces each)
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons butter
1 can (14-1/2 ounces) chicken broth
1 large carrot, chopped
1 medium potato, peeled and chopped
2 teaspoons chicken bouillon granules
1-1/2 teaspoons dried basil
2 cups uncooked wide egg noodles
1-3/4 cups milk, divided
1/3 cup all-purpose flour

Steps:

  • Chop one onion and one celery rib; set aside. Cut remaining onion and celery into chunks; place in a Dutch oven. Add the water, chicken, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until a thermometer reads 170°. Remove chicken and strain broth; set both aside. , In the same pan, saute chopped onion and celery in butter until tender. Add the canned broth, carrot, potato, bouillon, basil and reserved broth. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until vegetables are tender., Add noodles. Return to a boil; cook for 6-8 minutes or until noodles are tender. Cut chicken into chunks; add to soup. Stir in 1-1/4 cups milk; heat through., Combine flour and remaining milk until smooth; add to soup, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened.

3/4 c all purpose flour
1 c warm milk
1 pt hot chicken stock (may use swanson's)
1 c warm cream (may use half and half)
1 qt chicken stock
1 1/2 c chopped cooked chicken
1/4 Tbsp salt (3/4 teaspoon)
dash(es) pepper

Steps:

  • 1. In a large pot, combine butter and flour, blending well. Add warm milk, the pint of hot chicken stock and the warm cream.
  • 2. When it begins to thicken, add remaining ingredients and cook over low heat until hot.

6 tablespoons butter
1 cup yellow onion, chopped
1 cup carrot, thinly sliced and chopped
2 stalks celery, chopped
1/2 cup flour, all purpose
6 cups chicken stock, reduced sodium
3/4 teaspoon salt, to taste
1/8 teaspoon ground white pepper
2 cups cooked chicken, diced
1/2 cup half-and-half

Steps:

  • In a large soup pot over medium heat, melt the butter.
  • Add the onions, carrots, and celery and saute' until tender, about 10 minutes.
  • Stir in flour and blend. Continue stirring for a minute, careful not to burn.
  • Increase heat to medium-high.
  • Add the stock and bring to a boil, stirring constantly (whisk comes in handy here) until slightly thickened, 8-10 minutes.
  • Taste test and season with salt and white pepper.
  • Add some hot stock to the half-and-half, tablespoon by tablespoon to warm it up before adding to the soup. Stir in the half-and-half and add the chicken to the soup pot.
  • Reduce the heat to low and simmer until all the flavors are blended; 10 minutes longer.
  • Ladle into bowl and serve.

1 (14.75 ounce) can cream-style corn
½ cup shredded, cooked chicken meat
¼ teaspoon ground white pepper
salt to taste
2 tablespoons cornstarch
½ cup water

  • In a medium stock pot combine broth, corn and chicken. Bring to a boil, reduce heat and add pepper and salt. Bring back to a boil.

There's something restorative and satisfying about a homemade chicken soup

1kg pack free-range chicken thigh, skin removed
300ml dry white wine
2 large onions, cut into large wedges
4 celery sticks, quartered
3 leeks, quartered
2 sprigs thyme, plus extra leaves for sprinkling
2 bay leaves
½ tsp ground white pepper (optional)
40g plain flour
300ml pot double cream

Steps:

  • Put the chicken thighs in a very large, heavy-based pan and fry for a few mins, turning frequently to lightly colour them. Providing the heat is low, there is no need to add any oil. Pour in the wine, turn up the heat and boil rapidly to evaporate the alcohol. Pile in the veg and herbs, add 1 tsp salt and the white pepper (or you can use black pepper). Pour in 2 litres boiling water. Cover the pan and simmer for 45 mins until the chicken and veg are tender. Take out the bay leaves and thyme sprigs and cool for about 30 mins.
  • Remove chicken from the soup, then strip the meat from the bones. Put all but 140g of the chicken back into the pan. Blitz the soup with a hand blender or in batches in a food processor until very smooth, then return to the pan.
  • Blend the flour and cream together with a couple of ladles of the soup, then stir the creamy mixture into the rest of the soup and heat, stirring continuously until thickened. You can blitz again if it looks a little lumpy. Chop the remaining chicken and stir into the soup. Scatter with thyme leaves, to serve.

3/4 cup butter
1 cup warmed milk
1 1/2 quarts hot chicken broth
1 cup warmed half-and-half
1 1/2 cups shredded cooked chicken breasts
1 teaspoon salt
1/4 teaspoon white pepper

Steps:

  • Melt butter in saucepan.
  • Add flour to melted butter; cook for 1 minute over medium high heat.
  • Set aside.
  • Combine milk, 1 pint of broth and the cream in a large pot.
  • Heat but don't boil
  • Add butter flour mixture and stir and cook until mixture thickens.
  • Add remaining 1 quart broth, cooked chicken, salt and pepper.

1 lemon
2 chicken breast halves with skin and bones (about 3/4 pound)
2 3/4 cups chicken broth
10 snow pea pods
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/4 cup heavy cream
2 tablespoons minced fresh flat-leafed parsley leaves

Steps:

  • With a vegetable peeler remove two 2-inch-long strips zest from lemon and squeeze 1 teaspoon juice into a small cup. In a small saucepan simmer chicken and zest in broth, covered, 20 minutes, or until chicken is just cooked through. Transfer chicken to a bowl and pour broth through a sieve into a 4-cup measuring cup. Chill chicken until it is cool.
  • While chicken is cooling, trim snow peas and cut diagonally into thin slivers. In a 2-quart saucepan heat butter over moderately low heat until foam subsides and stir in flour. Cook roux, stirring constantly, 2 minutes. Add broth and cream in a stream, whisking, and simmer, whisking, 2 minutes, or until soup thickens slightly. Remove pan from heat.
  • When chicken is cool enough to handle, discard skin and bones and cut chicken into thin strips. Add chicken and snow peas to soup and simmer, stirring occasionally, 1 minute, or until peas are crisp-tender. Stir in lemon juice, parsley, and salt and pepper to taste.
