Steps:

  • Melt cheese and butter in saucepan over low heat, stirring almost constantly.
  • Sift sugar and cocoa together, stir into cheese butter mixture.
  • Stir in vanilla and nuts.
  • Spread in buttered pans, cool, cut into squares and store in tightly covered tin or container.

3/4 c butter
2 lb powdered sugar
1 Tbsp vanilla
1 c peanut butter

Steps:

  • 1. melt cheese and butter together (in microwave or on stovetop), stirring until combined
  • 2. add powdered sugar, vanilla and peanut butter and knead until you can no longer see powdered sugar
  • 3. spread in greased pan and put in refrigerator until set
  • 4. cut and enjoy!

1 lb butter or margarine
1 lb velveeta cheese
4 lb powdered sugar
1 c cocoa powder
1 Tbsp vanilla extract
1 1/2 c pecans or other nuts, chopped

Steps:

  • 1. Melt butter (or margarine) and cheese. (May be melted in the microwave or on top of stove. Do not overheat and/or scorch or burn the cheese. I prefer a double boiler on top of the stove as it is less likely to burn or scorch the cheese) After the butter and cheese are fully melted add nuts (if desired), cocoa, and vanilla extract and stir well. Sift powdered sugar into mixture 1/4 pound at a time. Mix well after each 1/4 pound UNTIL NO WHITE SUGAR IS SEEN. The sugar will tend to accumulate in the bottom so be sure and mix all the way to the bottom of the bowl and scrape the sides and bottom of the bowl often. The mixture will get extremely hard to mix by time the last two 1/4 pound(s) of sugar are introduce but be sure to mix well until no white is seen.. After mixing all the sugar put mixture in a 13 X 9 X 2 inch non-greased pan. (I use a throw away aluminum pan) Chill for about two or three hours, until the fudge is firm, then remove from pan and cut into bite size pieces. The fudge is hard to remove from the pan so I use a throw away aluminum pan and cut the pan on each corner and peel the sides away from the fudge. This leaves one large block of fudge which can then be sliced into smaller pieces. Keep refrigerated. NOTE: Any flavoring may be substituted for the vanilla

1/2 cup butter, plus 1 Ts, Divided
1 cup chunky peanut butter
1 (8 ounce) package Velveeta cheese, cubed
2 lbs confectioners' sugar
1 1/2 teaspoons vanilla

Steps:

  • Line a 13" x 9" pan with foil leaving excess foil over sides and grease foil with 1 ts butter. Set aside. In large saucepan, combine peanut butter, cheese and remaining butter. Cook and stirover medium heat until melted and smooth. Remove from heat and gradually stir in sugar and vanilla. (mixture will be thick). Spread into pan and chill 2 hours. Using foil lift fudge out of pan, discard foil and cut into squares.

1 cup cocoa
1 tablespoon vanilla
4 lbs powdered sugar
1 -2 cup nuts

Steps:

  • Slowly melt butter and Velveeta.
  • Can be done in microwave. Add cocoa and vanilla.
  • Mix well.
  • Add powdered sugar and nuts.
  • Mix well.
  • This will be very stiff.
  • The last pound of powdered sugar may need to be added and mixed by hand.
  • Pour into buttered cookie sheet or 2 (9 x 13-inch) cake pans.
  • This makes about 6 pounds of very creamy and delicious fudge. Stores well.

I like to call these "White Trash Fudge Balls!" Using Velveeta to make fudge?!? These were inspired by Paula Deen, who made a version of this on Iron Chef. I was motivated to make them for a cookie exchange. There are endless possibilities for this fudge!!

1/2 lb Velveeta cheese, sliced
1 1/2 cups butter
1 teaspoon vanilla extract
1 cup chopped pecans (or walnuts, peanuts, etc.(optional)
32 ounces confectioners' sugar
1/2 cup cocoa
almond bark (optional)
caramel, any other creative dip you can think (optional)
skewer (trimmed to 4 inches or so)

Steps:

  • Melt cheese and butter over low heat, stirring occasionally.Remove from heat and add vanilla. (You may also add the chopped nuts here, or save them for a garnish, later.).
  • Sift together sugar and cocoa in a large bowl. Add cheese mixture and stir until it becomes stiff. Use your hands to finish the mixing.
  • Once fudge is completely mixed (add more powdered sugar, a little at a time, if needed), pinch small sections off and roll into balls. Set on wax paper-lined cookie sheet. Refrigerate for 20-30 minutes.
  • While chilling fudge balls, melt almond bark in double-boiler, over a low heat. If you have chosen to melt caramels, do so, as well, in a separate double-boiler.
  • Place a skewer in each fudge ball. Then, dip into caramel, then almond bark, finally rolling in nuts. Or, use whatever combination you would like.
  • These can be made a day or two before dipping--store in refrigerator. Enjoy!

2 Tbsp. light corn syrup
2 lb. powdered sugar, sifted
1/8 tsp. ground cinnamon
1-1/2 cups chopped walnuts
1 tsp. vanilla

Steps:

  • Cook and stir VELVEETA, butter, chocolate and corn syrup in large saucepan on medium-low heat 10 min. or until VELVEETA is completely melted and mixture is well blended.
  • Mix sugar and cinnamon in large bowl. Gradually add VELVEETA mixture, mixing well after each addition. Stir in nuts and vanilla.
  • Spread onto bottom of 13x9-inch pan sprayed with cooking spray. Refrigerate several hours or until firm before cutting into 1-inch squares.

10 slices Velveeta Cheese (individually wrapped slices only)
1 cup peanut butter
1 tsp vanilla
1 bag (2 lb.) powdered sugar

Steps:

  • ONLY USE WOODEN SPOON. Over medium heat melt together butter, cheese, and peanut butter and mix till melted and creamy -- DO NOT BOIL. Remove from heat.
  • Add vanilla, then stir in powdered sugar gradually and mix well.
  • Pour into 13 X 9 pan, smooth out. Pat with paper towel to remove excess butter.
  • Refrigerate 1 hr. Slice and enjoy.

1 lb velvetta cheese, melted
2 32 oz. bags confectioners' sugar, sifted or 4 (16 oz) boxes
1 c cocoa powder, sifted
1 Tbsp vanilla
2 c chopped nuts,

Steps:

  • 1. Melt (over VERY low heat)butter & velvetta. Add sugar, cocoa, vanilla & nuts while still on heat. If you remove from heat before finishing, it will start to harden on you & you'll have a fight on your hands getting everything mixed in, I know!!
  • 2. Place foil in a 13x11 pan and butter sides & bottom. Spoon your fudge in & smooth out, (I find spraying whatever utensil I am using, even if it's my hand) with spray oil, it makes the job alot easier. Place in fridge overnight, turn out onto cutting board, remove foil from bottom, and cut into desired size pieces. Store lightly covered.

  • 1. in a large bowl , combine sugar , and cocoa , mix well , set aside .
  • 2. cut cheese and butter into small pieces , and melt until smooth and creamy . being careful that it doesn't scorch . I heat mine in the microwave , for 2 to 4 minutes .
  • 3. take large bowl , with sugar mixture , and make a " well " in the middle . pour hot cheese mixture into the well . add vanilla and nuts ,and stir until completely mixed . dump into pan . you can add a few nuts on top , if you like .
