SAUSAGE VEGGIE BREAKFAST CASSEROLE

1 tablespoon extra-virgin olive oil
4 ounces breakfast sausage
4 ounces sliced cremini mushrooms
1 small leek, cleaned and chopped
1 clove garlic, grated
1/2 red bell pepper, seeded and diced
1/4 teaspoon hot paprika
Pinch of ground mustard
Kosher salt and freshly ground black pepper
8 ounces frozen chopped spinach, thawed and squeezed out
4 large eggs
1 to 2 dashes hot sauce
3 ounces Gruyere cheese, grated
Nonstick cooking spray, for the ramekins

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a medium skillet over medium-high heat. Add the oil to heat, then add the sausage and cook until browned and crispy, breaking up any big clumps with the back of a wooden spoon, 5 to 6 minutes. Remove the sausage to a large bowl, leaving behind any rendered fat. Add the mushrooms and leeks to the skillet with the fat and cook until they are softened, 2 to 3 minutes. Add the garlic and red bell peppers. Sprinkle in the paprika, mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook for 5 to 8 minutes more. Add the mushroom mixture to the bowl with the sausage. Stir together and taste for seasoning.
  • In a blender, add the spinach, eggs, hot sauce, 1/4 teaspoon salt and 1/2 teaspoon pepper. Blend until smooth. Stir the spinach mixture and Gruyere into the sausage mixture a little at a time.
  • Spray four 5-ounce ramekins with nonstick cooking spray. Pour the mixture into the ramekins. Bake until the casseroles are entirely set, 35 to 50 minutes. Let the casseroles cool slightly before eating. Serve warm or at room temperature.

1 large dark-orange sweet potato, peeled, cut into 1/2-inch cubes

1 medium parsnip, sliced
1 medium onion, chopped
1 lb. smoked sausage, sliced
1 (14 1/2-oz.) can ready-to-serve chicken broth
1 (14.5-oz.) can chunky tomatoes with garlic and Italian herbs, undrained
2 teaspoons sugar
1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
1/4 cup chopped fresh parsley

Steps:

  • In 3 1/2 to 4-quart Crock-Pot® Slow Cooker, combine all ingredients except parsley; mix well.
  • Cover; cook on low setting for 7 to 9 hours.
  • Just before serving, stir in parsley.

I don't now where I got this recipe but I'm sure I saved it because it puts a combination of some of my favorite ingredients in my favorite presentation - a one pot meal!

1 lb bulk pork sausage
1 large onion, cut into thin wedges
1 large bell pepper, cut into thin strips
2 garlic cloves, minced
2 (15 ounce) cans black-eyed peas, drained
1 (14 1/2 ounce) can diced tomatoes
1/2 teaspoon dried thyme leaves
1 (10 ounce) package frozen okra, thawed (NOT breaded okra!)
1 egg, beaten
1/4 cup vegetable oil
1 cup buttermilk
1 1/2 cups self-rising cornmeal (see Self-Rising Cornmeal)
1 teaspoon fresh coarse ground black pepper

Steps:

  • Heat oven to 425ºF. Grease a 9-inch by 13-inch baking pan.
  • In a large skillet, crumble sausage and cook till well browned, about 8 minutes, stirring often. Pour off excess fat, leaving a scant amount (1 teaspoon or so).
  • Add onion, bell pepper and garlic to browned sausage. Cook until tender, stirring often.
  • Stir in peas, tomatoes and thyme. Cook just until heated through, about 2 minutes.
  • Gently stir in okra.
  • Pour into baking pan.
  • Make topping:.
  • Either: Mix up 2 packages of your favorite packaged brand.
  • Or: Combine the listed topping ingredients in a medium boml. Stir until smooth. Don't overbeat.
  • Spoon topping into pan around edges of sausage mixture.
  • Bake for 25-30 minutes or until golden brown.

1 package (16 ounces) ECKRICH
Smoked Sausage, cut into 1/2-inch
slices
2 cups uncooked rotini pasta
1/2 cup chopped (julienne) red pepper
1 cup frozen brocolli, thawed and
drained
16 ounces Cheddar cheese sauce
1 cup shredded sharp Cheddar cheese
Salt and pepper to taste
2 tbsp butter
2 tbsp flour
1/2 tsp dry mustard
1 cup milk
1 1/2 cups shredded Cheddar cheese
Salt to taste

Steps:

  • Preheat the oven to 375F. Lightly butter a 9 X 9 X 2.5-inch baking dish OR a 2-quart casserole dish. Cook the uncooked rotini pasta according to the package directions. Combine the cooked pasta, chopped red pepper, thawed and drained froen broccoli, processed Cheddar cheese sauce, and salt and pepper to taste. Spoon the mixture into the lightly buttered baking dish. Evenly place the ECKRICH Smoked Sausage slices into the mixture and top with the shredded sharp Cheddar cheese. Bake for 20 to 30 minutes or until bubbly and browned on top. SAUCE: Melt butter in saucepan. Blend in flour and dry mustard. Gradually stir in milk. Cook and stir over medium heat until boils and thickens. Remove from heat and add cheese. Stir until melted. Add salt to taste. Makes approximately 1 3/4 cups. Excellent over vegetables (broccoli, cauliflower, etc.).

1 tablespoon olive oil
4 vegetarian sausages (I like cauldron brand)
1 onion, chopped
2 garlic cloves, chopped
1 red chile, chopped
3 stalks celery, finely chopped
1 parsnip, peeled and cubed
2 medium potatoes, cubed
200 g broccoli florets
200 g cauliflower florets
300 g cannellini beans
300 g borlotti beans
1 red chile, crushed (such as dried birds eye)
1 tablespoon miso (optional)
150 ml red wine (vegan fair trade wine can be bought at the Co-Op in the UK)
200 ml stock
1 sprig fresh rosemary
salt and pepper

Steps:

  • heat the oil in a large saucepan and start to fry the sausages for 3-4 minutes.
  • add the onion, garlic and chili and fry until they start to soften.
  • chop the sausages into bite size chunks in the pan.
  • add the vegetables and beans including fluid from tins (others can be substituted depending on your taste or what you have in).
  • stir in the crushed chili, miso paste, red wine, stock and rosemary.
  • season to taste and bring to the boil.
  • leave to simmer for around an hour stirring occasionally.
  • Serve with hot garlic bread if desired.

Steps:

  • Put the potatoes into a pan of water and boil for 5 minutes (they need to be part-cooked only and still quite firm). Keep on one side.
  • Heat the oil in a large pan and fry the onion for 2 minutes. Add the garlic, bay leaf and thyme and fry for a further 2 minutes.
  • Add the apple, carrots and sausages and fry gently until the sausages are cooked.
  • Add the tomatoes, stock, tomato puree and potatoes. Bring to the boil and then simmer for about 15 minutes until the vegetables are cooked. Remember to remove the bay leaf before serving.
  • Season with salt and pepper and serve with crusty bread.
