MIXED VEGGIE TUNA SALAD SANDWICH

- In a large bowl, combine the first five ingredients. Spoon tuna mixture onto bun bottoms; replace tops., Place each sandwich on a piece of heavy-duty foil (about 12 in. square). Fold foil around each sandwich and seal tightly; place packets on a baking sheet. , Bake at 400° for 10-15 minutes or until heated through.

VEGGIE SALAD SANDWICH
This is based off of one of my favorite sandwiches that is sold in a nearby grab 'n go place. Use your favorite tzatziki sauce, if desired.

Steps:
- Split open foccacia bun. Spread tzatziki sauce on top half of bun and cover with provolone slice. Place cheddar slice on bottom half of bun.
- Layer the remaining ingredients over the bottom half of the bun.
- Cover with top half of bun, slice in half, and enjoy!
- For tzatziki sauce: Combine all ingredients and mix well. Allow flavors to blend in fridge overnight. If using the recipe included, it will make more than needed for one sandwich.

VEGGIE SALAD SANDWICH
I found these bolillo rolls at the local marketplace. They were perfect for sandwiches. I had a salad ready for lunch, but didn't have time for both a sandwich and salad. So, I compromised! A veggie salad sandwich!. Great served with a side of potato salad or chips anytime.

- Slice open the bolillo roll, horizontally lengthwise.
- Slather with mayonnaise.
- Add the salad and enjoy.
- You can also add mustard, salad dressing (sparingly) or any other vegetable to the salad that you like. (For people who love their meat, add thin slices of the meat of your choice.)
