VEGGIE LASAGNA SALAD

This is a nice, hearty salad that can be served as a main course for dinner or lunch. Recipe is from the Chicago Sun-Times.

4 ounces thin lasagna noodles or 4 ounces mafalda pasta
1 cup broccoli floret
1 clove garlic
2 tablespoons tomato paste
4 tablespoons ricotta cheese
1 tablespoon balsamic vinegar
4 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2 cup shredded carrot
1/2 cup zucchini, quartered and sliced
2 cups spinach leaves, stems removed
4 ounces shredded asiago cheese

Steps:

  • Bring a large pot of water to a boil; add pasta and cook according to package directions- in the last minute of cooking, drop in broccoli to blanch.
  • Drain and rinse pasta and broccoli.
  • In a food processor, puree garlic, add tomato paste, ricotta and balsamic vinegar and process; with machine running, pour in olive oil and process until well mixed.
  • Season with salt and pepper.
  • In a large serving bowl, toss pasta with broccoli, carrots, zucchin, spinach leaves and dressing and top with cheese.

1 (12 ounce) package lasagna noodles
2 eggs, beaten
1 (15 ounce) container part-skim ricotta cheese
2 (10.75 ounce) cans condensed cream of mushroom soup
2 cups shredded Cheddar cheese
1 cup grated Parmesan cheese
1 cup sour cream
1 (1 ounce) package herb and garlic soup mix
1 (10 ounce) package chopped frozen broccoli, thawed
1 (10 ounce) package frozen sliced carrots
1 (10 ounce) package frozen corn kernels

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl combine eggs, ricotta cheese, mushroom soup, Cheddar cheese, Parmesan cheese, sour cream and soup mix.
  • In prepared dish layer noodles, cheese mixture, broccoli, carrots and corn. Repeat layers with remaining ingredients, ending with cheese.
  • Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes.

2 tablespoons olive oil
2 medium zucchini, halved and sliced
1/2 pound sliced fresh mushrooms
1/2 cup chopped onion
2 garlic cloves, minced
1 jar (24 ounces) tomato basil pasta sauce
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
6 no-cook lasagna noodles, broken
1/2 cup shredded mozzarella cheese
OPTIONAL: grated Parmesan cheese and chopped fresh basil leaves

Steps:

  • Heat olive oil in large cast-iron or other ovenproof skillet over medium-high heat. Add zucchini and mushrooms; cook until softened, 2-3 minutes. Add onion and garlic; cook until vegetables are tender, 2-3 minutes. Add pasta sauce, water and seasonings. Stir to combine; add broken noodles. Bring to a boil. Reduce heat; cover and simmer until noodles are tender, 15 minutes. Top with mozzarella and, if desired, Parmesan cheese. Broil until cheese melts and starts to brown. If desired, sprinkle with basil.
