1 lb ground beef
1/2 cup onion, chopped
3/4 cup bell pepper, chopped
1 tomatoes, diced
1 teaspoon salt
2 tablespoons sugar
2 tablespoons chili powder
2 teaspoons garlic powder
2 teaspoons paprika
2 teaspoons dried cilantro
1/4 teaspoon dried chipotle powder
3/4 cup water

Steps:

  • Brown the ground beef on medium-high heat.
  • Drain beef if needed.
  • Add onions, bell peppers, and tomato (time saver: use a frozen chopped pepper and onion mix).
  • Add salt, sugar, and spices. Stir well.
  • Add water and allow to simmer for flavors to combine. Cook until water evaporates.
  • Serve in tortilla wraps with your favorite toppings.

1 Tbsp olive oil
2 cloves garlic
2 cups black beans
1 tsp chile in adobo
1/2 tsp table salt
3 large sweet red pepper, cored and sliced
2 medium onions, chopped
10 oz mushrooms, quartered
1 Tbsp pickled jalapeno peppers
1/2 tsp dried oregano
1/4 cup fresh lime juice

Steps:

  • Heat one teaspoon oil in heavy pot. Add pressed garlic, saute briefly, then add rinsed black beans, adobo seasoning or chile in adobo, salt and 1/4 cup of water, and cook for 10-15 minutes until beans are soft. Meanwhile, heat remaining 2 tsp oil in large saute pan. Add sliced peppers, onions, mushrooms, jalapenos, oregano and salt to taste. Cook on very high heat, stirring occasionally, until veggies are cooked and slightly blackened, about 10 minutes. Pour lime juice into pan and deglaze, then remove from heat. Combine black beans and vegetables and serve wrapped in a whole wheat tortilla with greek yogurt and cilantro.
