Kasseri cheese is a creamy Greek cheese that is almost similar to a very mild cheddar or mozzarella you may substitute the Kasseri cheese for mild cheddar or mozzarella if desired. A pre-baked focaccia crust will work well with this also in place of the store-bought boboli pizza crust, you can also make this on a pre-baked pizza crust. If the Kasseri cheese has sun-dried tomatoes already added into the cheese, just omit the tomatoes from the recipe. 1/2 cup pizza sauce (or to taste, see Kittencal's Pizza Sauce)

The rice crust is gluten free and healthy. I found a recipe about 20 years ago similar to my recipe, however, I have modified it in order to have it workable and with a nice taste. If desired, you can change the filling to a good old fashioned Italian Style filling.

2 cups long grain white rice or 2 cups brown rice, uncooked
4 cups water or 4 cups vegetable broth
1 large egg, beaten
1/2 cup grated mozzarella cheese
1/16 teaspoon Tabasco sauce or 1/16 teaspoon red hot sauce
1/2 cup tomato sauce
2 cloves garlic, finely chopped
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon Italian herb seasoning
1/4 teaspoon freshly ground black pepper
2 1/2 cups grated mozzarella cheese, , divided
1 cup mushroom, sliced
1 medium green pepper, seeded and sliced
1 medium sweet red pepper, seeded and sliced
1 medium fresh tomatoes, , sliced
1 medium red onion, thinly sliced
1 tablespoon extra virgin olive oil

Steps:

  • RICE CRUST-----------------.
  • Preheat oven to 400 F degrees.
  • In a medium size saucepan, add rice and water or broth.
  • Bring to a boil, reduce heat, cover and simmer for about 20 minutes or until all liquid is absorbed.
  • Fluff rice with a fork and set aside to cool slightly.
  • In a mixing bowl, combine cooked rice, beaten egg, mozzarella cheese and Tabasco sauce and mix well.
  • Press mixture evenly into a lightly greased 12 inch pizza pan, covering bottom and sides.
  • Bake in preheated 400 F oven for 4 minutes or until set.
  • Remove from oven and let cool slightly before adding filling.
  • VEGETARIAN FILLING------------.
  • In a mixing bowl, stir together tomato sauce, garlic, 1/2 cup mozzarella cheese, oregano, basil, Italian herb seasoning and black pepper.
  • Spread sauce mixture over the bottom of the rice crust.
  • Sprinkle over with 1 cup grated mozzarella cheese.
  • Arrange sliced mushrooms, green peppers, red peppers, sliced tomatoes, and sliced red onion in layers.
  • Sprinkle remaining 1 cup of remaining mozzarella cheese over top.
  • Drizzle with 2 tablespoons of olive oil.
  • Bake in preheated 400 F oven for 15 minutes or until cheese bubbles.
  • Remove from oven and let rest for 5 minutes before slicing.
  • You can also use chopped fresh broccoli as another vegetable.

1 cup diced seeded plum tomatoes

Steps:

  • Preheat broiler. Place lavash on large baking sheet; brush with 1 1/2 tablespoons oil. Broil until lavash just begins to crisp, about 1 minute.
  • Reduce oven temperature to 450°F. Turn lavash over on baking sheet, broiled side down. Brush with remaining 1 1/2 tablespoons oil. Spread with olives; sprinkle with Monterey Jack cheese and feta cheese, then mushrooms, onion, bell pepper, and tomatoes. Sprinkle with salt and pepper. Bake until pizza is heated through and cheeses melt, about 10 minutes. Cut into squares.

After trying grilled eggplant on a pizza I was hooked! I changed the recipe so much that I have posted my version. Use more or less sauce, I like mine saucy! My DH, DS and DD all said it's one of the best pizzas they have ever had, and my DH doesn't even like eggplant! Enjoy!

1 premade 12-inch pizza crust (I used Mama Mary's)
1 -1 1/2 cup spaghetti sauce (I used Del Monte Green Pepper Mushroom)
2 cups mozzarella cheese (or half provolone)
1 small eggplant, peeled, cut in 1/4-inch rounds
olive oil, to saute
1/2 cup red bell pepper, chopped
2 scallions, chopped
1/4 cup red onion, chopped (optional)
1 cup mushroom, sliced (button and portobello mix is good!)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
olive oil, to drizzle (optional)
salt and pepper

Steps:

  • Place eggplant rounds on a baking sheet, drizzle with olive oil and broil on low about 8" from flame, about 6-8 minutes on each side(or you may grill). Cut rounds in half. Set aside.
  • In a large nonstick pan, lightly saute red bell pepper, scallions, red onion, and mushrooms in olive oil until tender, about 5-10 minutes.
  • Layer pizza crust with spaghetti sauce, mozzarella cheese, eggplant, and scallion-red onion-mushroom mixture. Sprinkle over oregano and basil, lightly drizzle with olive oil and salt and pepper to taste.
  • Bake in a 450*F. oven for 12-14 minutes. Cut into slices and enjoy!

1 (1/4 ounce) package active dry yeast
1 teaspoon sugar
1 cup warm water (110-120 deg. F)
2 1/2 cups white flour
1 ounce fresh basil
4 tablespoons olive oil
3 garlic cloves, crushed
3 tablespoons ketchup
2 tablespoons pine nuts
1 tablespoon lemon juice
3 Italian plum tomatoes, sliced
2 cups mushrooms, thick sliced
1 medium onion, cut in half and sliced

Steps:

  • Mix water, yeast and sugar and let stand 10 minutes to start bubbling.
  • Add flour to yeast mix and blend well.
  • Place in a greased or oiled bowl, and cover with a warm damp cloth.
  • Allow to rise in a warm place until double in bulk, around 1 hour.
  • Punch down dough and pat out onto an oiled (or cornmeal dusted) pizza pan to form the crust.
  • Bake in a preheated 450° F oven for 7 minutes. Crust may be refrigerated or frozen at this point. If using right away, turn oven down to 350°F.
  • Place olive oil, basil, garlic, ketchup, pine nuts, and lemon juice in blender and process until smooth.
  • Spread mixture onto baked pizza crust evenly.
  • Add tomatoes, mushrooms and onions (or whatever you like, really) and bake at 350° for 10 minutes.

2 ready-made whole wheat pizza crusts
1 large can rosarita vegetarian refried beans
1 Tbsp taco seasoning mix
2 Tbsp water
chopped lettuce
chopped tomatoes
sliced black olives
minced green onions
sour cream, ranch dressing or salsa
cheddar and jack cheese (if not desiring vegan)

Steps:

  • 1. Bake pre-made pizza crusts in oven for 10 minutes. (I have recently found a thin whole wheat crust that I like---it does not have to be prebaked.)
  • 2. Meanwhile, in a large saucepan, mix your refried beans with taco seasoning and water and simmer til water is evaporated. If you want to get more veggies in, brown up some diced onions and peppers before adding the beans. I also like to stir in some chopped mild chilies.
  • 3. Remove crusts from oven and spread bean mixture on top of the two crusts. Top with mozzarella cheese.
  • 4. Return to oven and bake til sizzling.
  • 5. Top with diced tomatoes, shredded lettuce, black olives, green onions and a sprinkling of cheddar or jack cheese. Dress with sour cream, ranch dressing or salsa.

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower florets, cover, and steam until tender, 2 to 6 minutes. Allow to cool. Grate cauliflower and measure out 1 cup.
  • Preheat the oven to 450 degrees F (230 degrees C). Spray a circular or rectangular metal baking pan with cooking spray.
  • Combine grated cauliflower, 1/2 cup mozzarella cheese, and egg in a large bowl. Press mixture into the prepared baking pan evenly. Sprinkle with basil, parsley, oregano, fennel, and garlic powder.

1 package yeast or 2 teaspoons fresh yeast
2 teaspoons sugar
2 teaspoons salt
1/4 cup warm water
4 cups all-purpose flour
1/4 teaspoon five spice powder
1 1/2 tablespoons canola oil
1/2 tablespoon sesame oil
1 3/4 cups warm water
Canola oil to cook
1 tablespoon minced garlic
1/2 tablespoon minced ginger
2 large red onions
Salt and black pepper to taste
2 cups sliced shiitake mushrooms
1 cup sliced yellow zucchini
1 cup sliced green zucchini
2 tomatoes, thinly sliced
1/3 cup Thai basil chiffonade
2 cups grated mozzarella cheese

Steps:

  • The following recipes are good for 2 pizzas.
  • For the dough: In a small bowl, mix yeast, sugar, salt and 1/4 cup warm water. Let stand 5 minutes until foamy. In a mixer with a dough hook, mix flour and five spice powder. While mixer is running, slowly pour in yeast mixture, oils and the rest of the water; knead on low speed for 8 to 10 minutes. Stop mixer when the dough forms a smooth and firm ball. Divide dough into 6 balls and place on sheet tray lined with parchment paper. Cover with a cloth and place in a warm part of the kitchen; let balls double in size, about 2 hours. Working on a floured surface with floured hands, take one ball and spread out with your fingers to about 5 inches in diameter. Take a floured rolling pin and roll out to a little less than a 1/4-inch thick. The final diameter will be 8 to 10 inches. On a low grill, brush on a little canola oil and mark one side. Brush oil on the raw side and flip. Immediately place toppings and cover with a lid to help retain the heat and assist the cheese melting process. Carefully watch the pizza. If the grill is too hot, the bottom will burn before the pizza is ready. If this occurs, you can place the pizza on a tray and use the broiler of an oven to finish the melting.
  • For the pizza: In a hot wok coated with oil, stir-fry garlic, ginger and onions. Season with salt and pepper and cook until onions are caramelized. Add mushrooms and zucchini and stir-fry until soft. Check for seasoning. Place filling on top of a grilled pizza dough. Cover with tomato slices and basil. Cover with cheese.

1 (32 ounce) jar spaghetti sauce, uncooked
2 cups cooked broccoli florets
1 medium zucchini, sliced thin

Steps:

  • Break spaghetti into 2-inch pieces and cook according to package directions; drain.
  • In a large bowl, beat eggs.
  • Gradually add milk, 1 cup Mozzarella cheese, spinach and garlic powder.
  • Stir in spaghetti pieces.
  • Lightly oil a 13 x 9 baking pan.
  • Spread spaghetti mixture into pan, building up sides slightly.
  • Bake at 425 for 15 minutes.
  • Remove from oven.

1 pizza dough (Boboli or Pillsbury, etc.)
1 (6 ounce) can tomato paste
2 garlic cloves, minced
1 1/2 cups mozzarella cheese, shredded
2 cups spinach leaves (fresh, or 1 cup defrosted frozen)
1/2 cup mushroom
1/2 cup tomatoes, chopped
1/2 cup broccoli floret (small)
1/2 cup bell pepper, chopped (preferably yellow or orange)
1/4 cup onion, chopped
1/4 cup black olives, sliced
1/4 cup sun-dried tomato, slivered
1 tablespoon italian seasoning
salt and pepper, to taste

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Prepare pizza dough according to directions (if using a recipe) and cook for 10 minutes at 400 degrees (if desired, and omit this step entirely if using pre-cooked dough).
  • Mix tomato paste with 1/4 cup water and add a bit more, a little at a time, until desired consistency is reached. Add garlic and mix well.
  • Spread tomato sauce evenly over dough, leaving a half inch or so for crust.
  • Sprinkle toppings over pizza, more or less in order given. (If you prefer to end with the cheese, that's okay too.).
  • Sprinkle with seasonings.
  • Bake at 400 degrees for 15-20 minutes.
  • Slice and eat.

1 tablespoon cornmeal
1 tube (13.8 ounces) refrigerated pizza crust
1-1/2 teaspoons olive oil, divided
11 slices part-skim mozzarella cheese, divided
1 small zucchini, cut into 1/8-inch slices, patted dry, divided
1 small onion, sliced
4 plum tomatoes, cut into 1/4-inch slices
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup torn fresh basil

Steps:

  • Sprinkle cornmeal over a greased baking sheet. Unroll pizza crust; shape into a 12-in. square. Place on the baking sheet. Brush with 1 teaspoon oil. Arrange nine slices of cheese over dough to within 1 in. of edges. Cut each remaining cheese slice into four pieces; set aside. , Place half of the zucchini, about 2 in. apart, around edges of cheese. Fold edges of dough about 1 in. over zucchini. Bake at 400° for 6 minutes. , Layer with onion, remaining zucchini and tomatoes. Sprinkle with salt and pepper. Bake for 16 minutes or until crust is golden brown. , Arrange reserved cheese over the tomatoes; bake 4 minutes longer or until cheese is melted. Drizzle with remaining oil. Sprinkle with basil. Let stand for 10 minutes before slicing.

This is a quick vegetarian breakfast pizza I came up with one morning to feed a hungry crowd!

2 tablespoons olive oil, divided
½ potatoes, peeled and cut into bite-sized pieces
1 pinch garlic powder, or to taste
1 pinch salt and ground black pepper to taste
4 stalks asparagus, cut into bite-sized pieces
½ cup pizza sauce, or as needed
1 (14 ounce) package prebaked pizza crust (such as Boboli®)
½ cup grated Gruyere cheese, or more to taste
4 large eggs
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Remove the middle rack and preheat the oven to 425 degrees F (220 degrees C).
  • Heat 1 tablespoon olive oil in a skillet over medium to medium-high heat. Add potatoes and cook, without turning, until nice and crispy, 5 to 8 minutes. Flip and continue to cook until crispy on the opposite side, 5 to 8 minutes more. Sprinkle with garlic powder, salt, and pepper.
  • Heat remaining oil in a pan over medium-high heat. Saute asparagus until softened, 4 to 5 minutes.
  • Spread some of the sauce on the pizza crust and sprinkle on Gruyere cheese. Top with asparagus and potato. Place the pizza crust on the oven rack. Crack eggs on top. Top with Parmesan cheese.
  • Slide oven rack into the hot oven and bake until egg whites are set and cheese is bubbly, 6 to 8 minutes.

This is from Fast-Scratch Vegetarian by Land O' Lakes, and it was a staple during my veg days. It is quick and easy to throw together and quite a hearty meal! I usually make my own crust, and often make it much larger than 12 inch.

1 (15 ounce) can chili beans, drained (do not rinse)
2 tablespoons canned diced green chiles
12 inches prepared pizza crust
1 (7 ounce) can corn, drained
1 cup reduced-fat cheddar cheese, shredded
3 green onions, sliced
2 roma tomatoes, chopped

Steps:

  • Heat oven to 425.
  • Place drained beans in a small bowl and mash with fork or pastry blender. Stir in chiles.
  • Place crust on baking sheet and spread with bean mixture to 1/4 inch of edge.
  • Top with corn, cheese, green onions, and tomatoes.
  • Bake 10-12 minutes or until cheese is melted and pizza is heated through. Sprinkle with some cilantro if desired.

1 red onion, sliced into thin rings
2 tablespoons chopped cilantro

Steps:

  • Preheat to 425 degrees.
  • Partially mash 3/4 cup beans in small bowl. Add salsa & mix well.
  • Spread mixture evenly over pizza crust. Top with cheese, remaining beans, peppers and onions.
  • Place on baking sheet & bake for 12 minutes or until cheese is melted and crust is golden brown.
  • Top with cilantro & slice into 12 pieces.
