There are three foods that need to be eaten on New Year's Day for good luck in the coming year: greens, black-eyed peas, and stewed tomatoes. This is a delicious, hearty soup that will fill you up and give you good luck for the new year! It has been adapted from a recipe from vegetarian times.

2 tablespoons olive oil
2 leeks
2 garlic cloves, minced
1 tablespoon poultry seasoning
4 cups kale, chopped
1 (15 ounce) can diced tomatoes
1 (15 ounce) can diced tomatoes with jalapenos
1 (15 ounce) can black-eyed peas
6 cups water
1 cup bow tie pasta

Steps:

  • 1) Place all ingredients except for the pasta in crock pot.
  • 2) Cook on low for 7 hours.
  • 3) Add pasta 1 hour before serving.

I came up with this soup when I was just cleaning out the frig. It's full of vegetables and will leave you filling warm and full on a chilly day.

1 cup diced smoked ham
1 cup cubed chicken breast, cooked in
1 tablespoon olive oil
2 cups celery ribs, chopped
1 medium onion, chopped
1 zucchini, chopped
2 carrots, chopped
2 garlic cloves, minced
2 (15 ounce) cans black-eyed peas, drained
1 (15 ounce) can sweet whole kernel corn, drained
1 red bell pepper, chopped
2 (14 1/2 ounce) cans chicken broth
2 (14 1/2 ounce) cans stewed tomatoes, undrained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
1 1/2 cups of chopped fresh spinach
1/2 cup of chopped fresh parsley
1/2 teaspoon pepper

Steps:

  • Cook the chicken until no longer pink in the olive oil in a heavy stock pot.
  • Add ham, celery, onion, garlic, bell pepper, and carrots. sauté over medium heat until the vegetables are tender.
  • Stir in the black eye peas, corn, chicken broth, stewed tomatoes, diced tomatoes, and tomato sauce. Bring to boil, cover and reduce heat and simmer for 1 hour and 30 minutes.
  • Stir in 1 1/2 cups of spinach, the zucchini, and the parsley. Add the pepper and simmer for 20 minutes more or until the zucchini is tender.
  • Garnish with more chopped fresh spinach, if desired.

1 pound dry black-eyed peas
3 (10.5 ounce) cans beef broth
1 (1 ounce) package dry onion soup mix
1 pound smoked sausage, sliced
1 cup uncooked long grain white rice
1 (4 ounce) can diced green chilies, drained
ground black pepper to taste

Steps:

  • In a large saucepan with enough water to cover, soak the black-eyed peas 8 hours, or overnight.
  • Drain and rinse the soaked black-eyed peas, and return to the saucepan. Mix in the beef broth, dry onion soup mix, sausage, rice, and green chilies. Season with pepper. Bring to a boil, reduce heat, and simmer 1 hour and 30 minutes, or until the beans are tender. Add water as necessary to keep the ingredients covered with liquid.

This easy slow cooker soup combines great flavor with all of the Southern traditions like black-eyed peas and collard greens for New Year's. Serve with cornbread and it's a rounded feast!

1 pound dry black-eyed peas
2 (32 fluid ounce) containers vegetable broth
2 cups cubed ham
1 cup chopped carrots
1 cup chopped celery
1 ham bone
1 medium onion, diced
2 tablespoons Worcestershire sauce
salt and ground black pepper to taste
1 pound collard greens - rinsed, trimmed and chopped

Steps:

  • Sort and rinse peas then place into a slow cooker and cover with 8 to 10 cups of cool water. Let soak, 8 hours to overnight.
  • Drain water from peas and add broth, ham, carrots, celery, ham bone, onion, Worcestershire, salt, and pepper.
  • Cover and cook on High for 5 hours. Stir in collard greens and cook until tender, about 30 minutes more.
