1 ⅓ cups rainbow rotini pasta
1 tablespoon olive oil
1 pound ground turkey
½ bell pepper, diced
½ medium yellow onion, diced
2 stalks celery, thinly sliced
3 cloves garlic, minced
1 (24 ounce) jar low-sodium spaghetti sauce
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 small eggplant, peeled and cut into 1/2-inch cubes
1 zucchini, cut in half lengthwise and thinly sliced
1 cup shredded Italian cheese blend

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 7x11-inch baking pan with cooking spray.
  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until cooked but not quite all the way done, about 6 minutes. Drain and set aside.
  • Heat oil in a large deep skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, onion, celery, and garlic and reduce heat to medium-low. Cook until all of the vegetables have softened, about 5 minutes. Stir in spaghetti sauce, Parmesan cheese, and Italian seasoning; remove from heat.
  • Combine drained rotini, sauce mixture, eggplant, and zucchini in the prepared baking pan. Mix well and top with shredded cheese.
  • Bake in the preheated oven until sauce is bubbly and cheese is melted, 30 to 45 minutes.

8 slices smoked back bacon, Cut into slices
2 (400 g) cans chopped tomatoes
1/2 green bell pepper, cut into thick slices

100 g cherry tomatoes, Halved
1 tablespoon tomato puree
2 garlic cloves, crushed

200 g cheddar cheese, Grated
2 tablespoons cornflour

Steps:

  • Place the olive oil in a roasting pan and heat in the oven at 170c until hot.
  • Meanwhile, for the tomato sauce, place the tomatoes, tomato puree, oregano, sugar and ground black pepper into a sucepan and bring to a simmer.
  • Mix the bell pepper, onions, and tomatoes in the roasting pan until coated in the oil.
  • Cook until soft and golden brown, approximately 30 minutes, stir occasionally.
  • The tomato sauce should also be thick by now.
  • Mix the roasted vegetables and tomato sauce into a large, deep oven dish.
  • Fry the bacon until cooked and add the garlic for 30 seconds, add to the mix.
  • Cook the pasta in boiling water until al dente, drain and stir into the mix.
  • Mix together a little of the milk and the cornflour to form a smooth paste, add this to the rest of the milk.
  • Place in a sucepan and cook over a medium heat, stirring constantly until thickened.
  • Add the cheese and black pepper, stir until combined.
  • Pour the cheese sauce over the pasta mix.
  • Cook at 170c for 30 mins or until golden brown on top.

16 ounces small shape noodles (farfalle works well, I used gluten free lasagna corta)
1 (14 ounce) can Italian-style diced tomatoes
1 (14 ounce) jar prepared alfredo sauce
1 cup Italian cheese, mix
1/2 cup grated parmesan cheese (2tb reserved) or 1/2 cup romano cheese (2tb reserved)
2 carrots, sliced diagonally into 3/4-inch thick pieces
1 cup onion, sliced
1 red bell pepper, sliced into 1/2-inch thick pieces
1/2 zucchini, sliced into 1/4-inch thick pieces
1/2 yellow squash, sliced into 1/4-inch thick pieces
1 cup broccoli floret
3 garlic cloves, chopped
2 tablespoons olive oil (enough to coat vegetables)
kosher salt, to taste
black pepper, to taste
red pepper flakes, to taste
1/4 cup fresh parsley (to garnish) (optional)

Steps:

  • 1. Preheat oven to 450 degrees. Cook pasta according to package directions, drain, and return pasta to pot used for boiling. You can chop your vegetables while the oven is preheating and water is boiling. Feel free to use other vegetables that roast well, like fresh green beans or parsnips.
  • 2. Toss vegetables and garlic in olive oil an season with kosher salt, black pepper, and red pepper flakes to taste. Spread in 9x13 pan in single layer for 20 minutes, or until vegetables are slightly charred.
  • 3. Remove vegetables from oven and decrease temperature to 375. In pot used for boiling pasta, toss pasta with can of tomatoes, alfredo sauce, italian cheese, and other cheese (reserving 2tbp for topping). Fold vegetables into mixture, and return mixture to 9x13 pan. Top with additional cheese and parsley for garnish.

Soooo good! I found this in a Sargento Cheese Ad sometime in 1996. It tastes like veggie lasagna, could be a vegetarian main dish or a side for dinner. Or a Lenten specialty. I did have to thin the cream sauce out before I baked it because the dish thickens up quite a lot in the oven. You can use penne or other pasta but the bowties are really pretty. You can find a picture on the Sargento web site.

Easy pasta bake that I often fall back on when I want dinner ready quickly. When in a rush after work I microwave the vegetables to soften but if you have time I think that the end result is better if you sauté them. Sometimes I'll add some Italian Herbs to this. But its really just a lazy dinner.

500 g dry penne pasta
737 g passata (I use the best quality I can)
6 slices bacon, rinds removed
150 g Baby Spinach
250 g button mushrooms, sliced
1 zucchini, trimmed and diced
1 carrot, peeled and diced
2 stalks celery, trimmed and diced
1 red capsicum (bell pepper)
3 cups cheese, grated (I mix 1/2 cup parmesan and one and a bit cups of tasty and cheddar)

Steps:

  • Preheat oven to 200°C (190°C fan forced). Grease a 6cm deep, 28cm x 35cm baking dish.
  • Cook pasta to packet directions in lots of salted water.
  • Meanwhile, cook bacon under grill until brown and almost crispy, chop and set aside.
  • Add zucchini, carrot and celery to a microwave safe bowl with a dash of water, cover and microwave on high for 4 - 5 minutes or until carrot is tender.
  • Drain pasta and return to the pot. Add zucchini, carrot, celery, mushrooms, capsicum, baby spinach, bacon and passata and stir to combine.
  • Add to greased baking dish and top with cheese. Bake for 25-30 minutes or until golden. Serve with salad and garlic bread if you have the time or inclination.

3 medium zucchini, sliced on the diagonal
1 tablespoon olive oil
375 g egg fettuccine pasta (fresh, such as Latina brand)

425 g alfredo sauce, storebought or home-made
2 eggs, lightly beaten
1/4 cup freshly grated parmesan cheese

  • Preheat the oven to 180 degree C.

It was a cold and raining Saturday afternoon and I could not be bothered going shopping so this is what I came up with. The fresh veggies can easily be subbed with canned or frozen.

500 g penne pasta, cooked
425 g tuna in water, drained
1 onion, finely chopped
1 large carrot, finely chopped
2 stalks celery, finely chopped
1 teaspoon basil
1 teaspoon oregano
1 tablespoon olive oil
1 tablespoon low sodium chicken stock powder
1 (325 g) can corn kernels, drained
2 cups broccoli florets
425 g diced tomatoes
2 tablespoons tomato paste
1/2 teaspoon crushed pepper
2 cups white sauce
1 cup grated cheese

Steps:

  • Heat oil in a non stick fry pan.
  • Sauté the onion, carrot and celery until onion is opaque.
  • Add in the basil, oregano and pepepr and cook for 1 minute.
  • Add the tomato paste and cook one minute.
  • Add the can of diced tomatoes and stock powder, stir well.
  • Half fill the can of tomatoes with water and add to the pan.
  • Cook on low heat for 30 minutes, stirring occasionally.
  • Throw in the corn, tuna and broccoli and mix in the cooked pasta.
  • Transfer to a baking dish, evenly pour over the white sauce and top with grated cheese.
  • Bake in a moderate oven for 20 minutes until cheese is nice and golden brown.

Also a great way to use up leftover cottage cheese. I have used a drained can of corn in this recipe in lieu of the frozen--works just fine!

1/4 cup fresh cilantro (optional)

Steps:

  • Preheat oven to 375.

8 cups cauliflower florets
5 carrots, cut into 1/2-inch-thick slices
1 red onion, cut into 1-inch chunks
2 cloves garlic, minced
2 Tbsp. olive oil
3 cups rigatoni pasta, uncooked
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
1 can (14.5 oz.) diced tomatoes, drained
1/4 cup chopped fresh basil
1 pkg. (8 oz.) KRAFT Shredded Italian* Five Cheese with a TOUCH OF PHILADELPHIA, divided

Steps:

  • Heat oven to 400ºF.
  • Spread cauliflower, carrots, onions and garlic onto foil-covered rimmed baking sheet. Drizzle with oil; stir to evenly coat vegetables. Bake 30 min. or until vegetables are tender and golden brown. Meanwhile, cook pasta in large saucepan as directed on package, omitting salt.
  • Drain pasta; return to pan. Blend chicken broth and half the roasted vegetables in blender until smooth. Add to pasta with remaining roasted vegetables, tomatoes, basil and 1 cup cheese; mix lightly. Spoon into 13x9-inch pan sprayed with cooking spray; sprinkle with remaining cheese.

This pasta bake is really yummy! I got this recipe from the September 2006 issue of Australian Good Taste and decided to try it straight away. It turned out great. It is a great recipe to make and freeze.

300 g dried spiral shaped pasta
2 corn on the cob, husks and silk removed
1 large cooked roasting chicken
750 ml milk
500 ml reduced-sodium chicken broth
2 teaspoons olive oil
1 green capsicum, deseeded, finely chopped
200 g mushrooms, sliced
80 g butter or 80 g margarine
50 g plain flour
3 green shallots, ends trimmed, thinly sliced diagonally
145 g coarsely grated cheddar cheese
275 g fresh breadcrumbs
1/3 cup chopped fresh flat leaf parsley

Steps:

  • Preheat oven to 200 degrees (unless freezing for later use). Cook pasta in a saucepan of salted boiling water following packet directions or until al dente. Drain.
  • Cut down the length of the corn cobs, close to the core, to remove the kernels. Remove the chicken meat from bones. Discard bones, skin and seasoning. Shred the chicken and place in a bowl.
  • Place the milk and stock in a saucepan over medium heat and bring to a simmer. Remove from heat.
  • Heat the oil in a large saucepan over medium heat. Add the corn, capsicum and mushroom and cook, stirring, for 5 minutes or until the mushroom softens. Transfer to a plate. Melt the butter in the pan. Add flour and cook, stirring, for 1 minute. Remove from heat. Gradually whisk in milk mixture. Place over medium heat and cook, stirring, for 2 minutes or until sauce thickens.
  • Add the pasta, corn mixture, chicken, shallots and 40g (1/2cup) of cheddar to the sauce. Spoon pasta mixture into a 3L (12-cup) capacity freezer proof ovenproof dish. Combine breadcrumbs parsley and remaining cheddar in a bowl. Sprinkle over pasta mixture.
  • To freeze, set aside for 10 minutes to cool. Cover with plastic wrap and place in fridge for 30 minutes. Cover with several layers of plastic wrap, label, date and freeze for up to 3 months. To cook, place in fridge for 8 hours or until thawed. Then follow step below.
  • Bake for 40 minutes or until golden.
