This is a recipe I made up with all of the wonderful summer vegetables in season. Serve it with chicken or all on its own!

1 zucchini, sliced
1 summer squash, sliced
1 red onion, cut into chunks
1 pound asparagus, cut into 1-inch pieces
1 pound portobello mushrooms, thickly sliced
4 cloves garlic, minced
2 tablespoons olive oil
1 pinch white sugar
salt and black pepper to taste
4 cubes chicken bouillon
¼ cup dry white wine
1 (16 ounce) package orzo pasta
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Place the zucchini, squash, onion, asparagus, and mushrooms in a large bowl; add in garlic, olive oil and sugar, and stir gently to coat vegetables. Spread vegetables in a single layer on a baking sheet, and sprinkle with salt and pepper.
  • Roast vegetables until tender, 20 to 25 minutes.
  • Meanwhile, bring a large pot of lightly salted water to boil. Add bouillon cubes, wine, and orzo, and cook until al dente, about 8 to 10 minutes. Drain. Stir in roasted vegetables and Parmesan cheese, and serve warm.

3 plum tomatoes, chopped
1 cup marinated quartered artichoke hearts, chopped
1 cup coarsely chopped fresh spinach
2 green onions, chopped
1/2 cup crumbled feta cheese
1 tablespoon capers, drained
DRESSING:
1/3 cup olive oil
4 teaspoons lemon juice
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
2 teaspoons grated lemon zest
2 teaspoons rice vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook orzo according to package directions., Meanwhile, in a large bowl, combine the tomatoes, artichokes, spinach, onions, cheese and capers. In a small bowl, whisk the dressing ingredients., Drain orzo and rinse in cold water. Add to vegetable mixture., Pour dressing over salad; toss to coat. Chill until serving.

1 cup orzo pasta
2 tablespoons extra virgin olive oil
½ red onion, chopped
2 cloves garlic, minced
1 cup chopped carrot
1 small zucchini, quartered and sliced
2 tablespoons balsamic vinegar
salt and pepper to taste
1 lemon, juiced

Steps:

  • Bring a large pot of lightly salted water to boil. Add orzo, and cook until al dente, about 8 to 10 minutes. Drain, and set aside.
  • Meanwhile, warm olive oil in a large skillet over medium heat. Stir in onion, garlic, and carrot, and cook for 2 minutes. Stir in zucchini, and cook for 2 minutes more. Pour in 1 tablespoon balsamic vinegar, and deglaze pan. Reduce heat to medium low, and season with salt and pepper. Add orzo to skillet, then stir in remaining 1 tablespoon balsamic vinegar and lemon juice.

  • Cook orzo according to package directions. Place vegetables in a large bowl. In a small bowl, whisk dressing ingredients. Grill asparagus and zucchini, covered, 3-4 minutes or until desired doneness, turning occasionally., When cool enough to handle, cut vegetables into bite-size pieces. 1 (14 ounce) can vegetable broth
1/3 cup white wine
1/4 cup bell pepper, chopped (green or red)
3/4 cup chickpeas (or garbanzo beans)
1/4 cup kalamata olive, chopped
1 tablespoon capers
2 tablespoons parmesan cheese

Steps:

  • In a 10 inches skillet over medium-high heat, heat the olive oil, then stir in the uncooked orzo, and green onion.
  • Cook, stirring frequently, until the orzo is lightly browned, about 3 minutes.
  • Stir in the broth and wine and heat until boiling, then reduce heat, cover and simmer about 6 minutes, stirring occasionally.
  • Stir in the peppers, chickpeas, olives and capers, and cook covered another 6 minutes, stirring occasionally, until most liquid is absorbed.

2 carrots, peeled and cut up
2 celery, stalks cut up
1/2 yellow onion, cut up
1 garlic clove
8 cups chicken stock, reduced sodium
2 chicken breast halves, about 1 #, boned and skinned, cut into bite-sized pieces
1/3 cup orzo, uncooked
3/4 teaspoon salt
1/2 teaspoon dried thyme
pepper, to taste
1/4 cup parsley, fresh and chopped

Steps:

  • In a food processor: add carrots, celery, onion and garlic. Chop coursely.
  • In a large soup pot over high heat; bring the stock to a boil.
  • Add the vegetables, chicken, orzo and seasonings.
  • Reduce heat to medium-low and simmer, covered until the chicken and vegetables are tender, about 15 -20 minutes.
  • Stir in parsley and serve.

2 (14 ounce) cans italian seasoned chicken broth
1 1/2 cups dried orzo pasta
3 tablespoons butter
1 orange bell pepper, seeded and chopped
1 medium onion, chopped
1 (4 ounce) can sliced mushrooms, drained
1 fresh garlic clove, finely minced
chopped fresh parsley (a generous handful)
salt and pepper
1/2 fresh lemon
parmesan cheese
extra virgin olive oil (I use about a tablespoon)

Steps:

  • Cook orzo in chicken broth until tender (add water if necessary).
  • Sauté the the vegetables in butter until tender adding the garlic near the end to prevent burning.
  • This is where I usually add a little salt and fresh cracked pepper.
  • Drain the orzo and combine with the cooked vegetables and add the chopped parsley.
  • The heat of the other ingredients will wilt the parsley.
  • Stir in the juice of the 1/2 lemon and olive oil if desired.
  • Serve with grated Parmesan.
  • Enjoy.

2 lb beef chuck roast cubed
1/2 c corn starch
3 Tbsp canola oil
1 Tbsp cumin,paprika & onion powder
1 Tbsp sumac, or lemon zest
2 large yellow onions chopped
2 large red onions chopped
1 large green bell pepper, chopped
4 stalk(s) celery chopped
28 oz can crushed tomatoes
1 lb whole carrots peeled & cut up
46 oz vegetable juice
64 oz beef broth
2 c red wine, ( i used sweet)
1 1/4 c orzo pasta
2 bay leaves
1 1/2 Tbsp each garlic powder & steak seasoning

Steps:

  • 1. My husband helped me with this soup because I wasn't feeling well, he seared all of the meat, in 3 different batches, but didn't take any pictures of it being seared. I am sorry. You do not need to over crowd the pot, or the meat will steam instead of sear on all sides. I originally made a crusty bread to serve with this soup but it was all gone before I could take a picture of it with the soup, hence the crackers you see in the picture.
  • 2. Add all the spices to a small bowl.
  • 3. Stir to blend together.
  • 4. Season meat generously with spice blend.
  • 5. Add cornstarch to meat and coat on all sides. Sear meat in batches. By adding canola oil to large pot, then heat till hot, then drop enough of the beef into the pot to cover the bottom, being careful not to overcrowd. Brown on all sides, then remove meat with a slotted spoon to a large platter, and repeat till all the meat has been browned.
  • 6. Wash, peel and chop all of the veggies and leave in pan till needed.
  • 7. Add all of the seared meat back into the large pot.
  • 8. Add the crushed tomatoes, & vegetable juice & bay leaves.
  • 9. Stir to mix together till blended together in pot.
  • 10. Add beef broth.
  • 11. Then add the 2 cups of red wine. LOWER heat and continue to cook for at least 2 to 2 and a half hours till meat becomes very tender.
  • 12. After about 1 and a half hours into cooking time add the chopped vegetables, and continue to cook for an additional half hour, stirring periodically to prevent mixture from sticking to bottom of the pot.
  • 13. After 2 hours add the orzo pasta, and stir to blend, but continue to cook until pasta is tender about 10 to 15 minutes or so.DO NOT FORGET TO STIR TO PREVENT STICKING IN BOTTOM OF POT.
  • 14. Ladle soup into serving bowls.
  • 15. Serve with your favorite crusty bread or crackers as desired.

1 bunch asparagus, about 3 cups diced
1 tablespoon olive oil
2 shallots, minced
2 garlic cloves, minced
12 ounces orzo pasta, cooked to al dente and cooled
15 ounces artichoke hearts (canned)
1 1/2 cups sun-dried tomatoes packed in oil
1 lemon, zested and juiced
1/4 cup white wine vinegar
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/3 cup olive oil

Steps:

  • Bring a medium saucepan full of water to a boil. Turn off the burner, add in asparagus pieces and blanch for 2-3 minutes. While the asparagus is in the water, heat one tablespoon olive oil in a small sauté pan. Add in shallots and garlic and sauté for 1-2 minutes, just until tender. Drain the asparagus and rinse with cool water.
  • In a large bowl add cooked orzo pasta, asparagus pieces and sautéed shallots and garlic. Drain artichoke hearts and quarter them, adding them to the bowl. Add in sun-dried tomatoes with oil and lemon zest. Stir to combine.
  • In a small bowl or container, whisk together lemon juice, white wine vinegar, salt and pepper. While continuously whisking, slowly pour olive oil into the vinegar. Once emulsified, stir the dressing into the salad. Move to the refrigerator for at least 5 hours for flavors to combine. Serve cold.

Got this recipe from my God-Sister on our trip to the beach. It's fabulous. The roasted vegetables gives it a savory taste like you worked all day on it. You can add any vegetable that you like. The mushrooms add something really special and hearty. You can also add sauted chicken or sausage to it. You can also add other spices as well. It looks like rice but it's pasta! I hope you enjoy it as much as we do!

2 medium zucchini
grape tomatoes
baby bella mushroom
1 medium sweet onion
1 medium red pepper

1/4 cup olive oil
1/3 cup Italian dressing
cajun seasoning
salt
pepper

Steps:

  • PreHeat Oven to 350 degrees.
  • Cut up all vegetables and place on baking sheet.
  • Pour Olive Oil and Italian dressing on vegetables (may use more to cover all).
  • Sprinkle veggies with salt and pepper and Cajun Seasoning.
  • Roast in oven until soft, usually 45 mins to an hour and 30 mins depending on your oven.
  • While veggies are roasting follow the package instructions to cook the Orzo and drain (I start by boiling my water, adding salt and Olive Oil to it, and then adding the Orzo - Doesn't take long to cook. No more than 10mins.)
  • When veggies are done remove them from the oven and let them sit to cool off for about 5 minutes.
  • Mix Orzo together with the roasted vegetables in casserole dish.
  • Serves well hot or cold.
  • Enjoy!

2 cups vegetable broth
1 onion, chopped
1 clove garlic, minced
2 stalks celery, chopped

1 cup mushroom, sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 grated lemon, rind of
1 -2 tablespoon fresh herb, chopped (sage, thyme, oregano)
salt and pepper
1 teaspoon red chili pepper flakes (optional)
1 tablespoon olive oil

Steps:

  • Start by heating the oil in a large saucepan/wok on medium heat.
  • Add the onion and garlic and saute for a minute or two.
  • Add the carrot and celery and saute for another 2 minutes.
  • Then add the chopped bell pepper and continue sauteeing for another 2-3 minutes.
  • Add in the mushrooms and the orzo, stirring them into the vegetable mixture.
  • Pour in enough broth to cover, about 1 cup.
  • Let the orzo absorb the broth, adding more as necessary.
  • Add in the grated lemon rind and herbs (and chili pepper flakes, if desired).
  • When the orzo has absorbed all the broth and is plump looking, the meal is ready to serve.
  • Season with salt and pepper and serve with a nice crusty bread.

6 medium tomatoes, cut into 1/2-inch dice

1 tablespoon grated lemon zest
2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 tablespoon kosher salt
Freshly ground pepper to taste

Steps:

  • Blanch the zucchini in salted boiling water for 20 seconds. Drain and refresh under cold running water. Drain well.
  • Put the zucchini in a large bowl and toss with the tomatoes, bell peppers, arugula and lemon zest. Refrigerate until cold.

1 lb ground sweet Italian sausage
1 onion, chopped
2 garlic cloves, minced
28 ounces canned crushed tomatoes
6 cups water
1/2 cup orzo pasta
2 beef bouillon cubes
1 tablespoon basil
1 teaspoon fennel seed
1 lb green beans, cut into 1 inch lengths
6 carrots, peeled and chopped
2 cups zucchini, chopped
1/4 cup dry white wine

Steps:

  • In a large soup pot, crumble sausage and cook over medium heat, stirring often until browned; about 10 minutes. Drain.
  • Add onion and garlic, and cook, stirring often, until onion is softened.
  • Stir in tomatoes, water, orzo and beef bullion. Heat to boiling. Stir in basil, fennel seeds, green beans and carrots.
  • Bring to a boil, reduce heat to medium-low, and simmer, uncovered for 20 minutes or until beans and carrots are almost tender.
  • Stir in zucchini and wine and cook 5-10 minutes longer or until vegetables are tender.

1 cup panko breadcrumbs
1 tablespoon chopped fresh flat-leaf parsley
10 tablespoons extra-virgin olive oil
1 pound orzo pasta
1 small butternut squash, peeled and cut into 1/2-inch wedges
2 small bulbs fennel, trimmed and cut into 1/2-inch pieces
1 small red onion, julienned
5 large tomatoes, peeled, seeded, and chopped into 1-inch pieces
2 cloves garlic, chopped
2 tablespoons chopped fresh sage
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees.
  • In a medium bowl, mix together panko, 2 tablespoons olive oil, and parsley; season with salt and pepper. Set aside.
  • Divide butternut squash between two baking sheets, spreading in an even layer. Drizzle each baking sheet with 2 tablespoons olive oil; season with salt and pepper. Transfer to oven and roast until tender, 12 to 15 minutes. Transfer to a large bowl.
  • Meanwhile, bring a large pot of salted water to a boil. Add orzo and cook for 5 minutes; drain and transfer to bowl with squash.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add fennel and cook, stirring occasionally, until soft and translucent, about 5 minutes. Transfer fennel to bowl with squash and orzo.
  • Return skillet to medium heat and add onions. Cook, stirring occasionally, until soft and caramelized, 8 to 10 minutes. Stir in tomatoes, garlic, and 1 cup water; let simmer until tomatoes begin to soften, 5 to 8 minutes. Transfer onion mixture to bowl with orzo, squash, and fennel. Fold in sage and season with salt and pepper.
  • Transfer orzo mixture to a 3-quart baking dish; cover with parchment paper-lined aluminum foil. Transfer to oven and bake for 15 minutes; uncover and sprinkle top with panko mixture. Return baking dish to oven and bake, uncovered, until panko is toasted, about 10 minutes more. Drizzle with remaining 2 tablespoons olive oil and serve.

Steps:

  • Melt butter in a large heavy saucepan.

16oz Orzo
1 red pepper, chopped in 1 inch squares
1 medium red onion, roughly chopped
1 eggplant, cubed
1 zucchini or yellow summer squash, cubed
3/4 cup extra virgin olive oil
3/4 cup scallions, thinly sliced
3/4 cup basil chiffonade
1/2 cup mild feta cheese (the freshest possible), crumbled
salt and pepper
Vinaigrette:
1/2 cup lemon juice
3/4 cup extra virgin olive oil
salt and pepper

Steps:

  • Cook orzo according to instructions, drain and let cool. Toss chopped vegetables with olive oil and season with salt and pepper. Place in grill pan or on baking pan in 375 degree oven and cook until tender, stirring once or twice (about 15-20 minutes). While vegetables are cooking, make vinaigrette by whisking lemon juice, olive oil, salt and pepper to taste. When vegetables are done, let cool 5 minutes then toss with orzo and 3/4 of the vinaigrette. Mix well and let sit at room temperature for at least 15 minutes. Before serving, mix in basil, scallions, feta and the remaining vinaigrette. Season with salt and pepper, and serve.
