1/2 cup olive oil
1/3 cup balsamic vinegar
4 teaspoons capers, drained
4 teaspoons lemon juice
2 garlic cloves, minced
3/4 teaspoon Dijon mustard
1-1/4 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1-1/4 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon pepper
SALAD:
1 package (10 ounces) uncooked couscous
2 medium zucchini or yellow summer squash, halved lengthwise
2 medium sweet yellow or red peppers, quartered
1 Japanese eggplant, halved lengthwise
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup grape tomatoes, halved
1/2 cup Greek olives, pitted and sliced
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 tablespoon minced fresh basil or 1 teaspoon dried basil

Steps:

  • In a small bowl, whisk the first 10 ingredients. Refrigerate until serving., Cook couscous according to package directions. Meanwhile, brush the zucchini, yellow peppers and eggplant with oil; sprinkle with salt and pepper. Grill, covered, over medium heat until crisp-tender, 10-12 minutes, turning once., Chop grilled vegetables; place in a large bowl. Add the tomatoes, olives, parsley, basil and couscous. Pour dressing over salad and toss to coat. Serve warm or chilled.

1 small eggplant
2 medium zucchini
1 lb cherry tomatoes, skinned
1 small red pepper, de-seeded and cut into 1 inch (2.5 cm)
1 small fennel bulb, chopped
1 large onion, sliced and cut into 1 inch (2.5 cm)
2 fat garlic cloves, crushed
2 tablespoons fresh basil leaves, torn so that they stay quite visible
3 tablespoons extra virgin olive oil
2 ounces pitted black olives, chopped
1 tablespoon capers, drained
salt & freshly ground black pepper
10 ounces medium couscous
18 fluid ounces vegetable stock
4 ounces firm goat cheese
salt & freshly ground black pepper
3 ounces mixed salad greens or 3 ounces baby greens
4 fluid ounces extra virgin olive oil
1 teaspoon cayenne pepper
2 tablespoons ground cumin
2 tablespoons tomato puree
4 tablespoons lime juice (about 2 limes)
1 tablespoon black onion seeds

Steps:

  • First prepare the roasted vegetables: prepare the eggplant and zucchini ahead of time by cutting them into 1 inch (2.5 cm) dice, leaving the skins on. Then toss the dice in a level teaspoon of salt and pack them into a colander with a plate on top and a heavy weight on top of the plate. Leave them on one side for an hour so that some of the bitter juices drain out. After that, squeeze out any juices left, and dry the dice thoroughly in a clean cloth. Preheat the oven to gas mark 9, 475°F (240°C).
  • Now arrange the eggplant, zucchini, tomatoes, pepper, fennel and onion in the roasting pan or sheet pan, sprinkle with the crushed garlic, basil and olive oil, toss everything around in the oil to get a good coating and season with salt and pepper. Place the pan on the highest shelf of the oven for 30-40 minutes or until the vegetables are toasted brown at the edges.
  • When the vegetables are done, remove them from the oven and stir in the chopped olives and the capers then remove them to a plate to cool.
  • When you're ready to assemble the salad, first place the couscous in a large, heatproof bowl, then pour the boiling stock over it, add some salt and pepper, stir it with a fork, then leave on one side for 5 minutes, by which time it will have absorbed all the stock and softened.
  • Meanwhile cut the cheese into sugar cube-sized pieces. Make up the dressing by whisking all the ingredients together in a bowl, then pour into a serving container. To serve the salad, place the couscous in a large, wide salad bowl and gently fork in the cubes of cheese along with the roasted vegetables. Next arrange the salad leaves on top and, just before serving, drizzle a little of the dressing over the top followed by a sprinkling of onion seeds and pass the rest of the dressing around separately.

2 cups Israeli couscous
3 small zucchini, sliced lengthwise into planks
1 orange bell pepper, cored and quartered
1 red bell pepper, cored and quartered
1 yellow bell pepper, cored and quartered
2 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
1/4 cup fresh lemon juice
1 1/2 cups crumbled feta
1/2 cup chopped fresh mint

Steps:

  • Heat the 2 tablespoons olive oil in a medium saucepan over medium heat. Add the couscous and toast until golden brown. Add 1 1/2 cups water, bring to a boil, then reduce heat to low and simmer until all of the liquid is absorbed, about 12 minutes. Fluff with a fork to separate the grains. Set aside.
  • Prepare a grill for medium heat. Toss the zucchini and peppers with the vegetable oil and some salt and pepper. Grill the vegetables, flipping occasionally, until just tender and lightly charred, about 20 minutes. Remove from the grill and, when cool enough to handle, cut into 1-inch pieces. Mix the grilled vegetables together with the couscous.
  • In a bowl, whisk together the lemon juice and the remaining 3 tablespoons olive oil. Toss the lemon vinaigrette, feta and mint with the couscous salad. Mix well and season with salt and pepper to taste.

1 small head of cauliflower, cut into 1-inch florets
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons curry powder

1/2 cup couscous
1/2 cup Greek yogurt
1 tablespoon fresh lime juice

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss the carrots and cauliflower with 3 tablespoons of the oil on a rimmed baking sheet. 3 (6 oz.) Bison Sirloin Steaks, cut into 1 inch pieces
1 red pepper, cut into 1 inch pieces
1 yellow pepper, cut into 1 inch pieces
1 green pepper, cut into 1 inch pieces
1 red onion, cut into 1 inch pieces
¼ cup extra-virgin olive oil
¼ cup red wine vinegar
1 tablespoon granulated garlic
1 tablespoon cracked black pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
2 teaspoons sea salt
10-12 wood skewers soaked in water
3 cups cooked couscous, follow package directions and cool
1 small butternut squash, peeled, diced into ½ inch pieces
1 tablespoon extra-virgin olive oil

1 (6 oz.) container of grape tomatoes, de-stemmed
1 cup red, yellow and green bell peppers, diced

Steps:

  • Preheat grill on high for 5-10 minutes.
  • Thaw and cut bison sirloin steaks into 1 inch pieces, place in bowl and set aside.
  • In large bowl combine olive oil, vinegar, garlic, black pepper, oregano, basil, thyme and seal salt to make marinade. Add vegetables to marinade and toss to coat. Assemble vegetable skewers, alternating vegetables. Continue until all vegetables are gone.
  • Add bison sirloin to remaining marinade left over in the mixing bowl and toss to coat. Assemble bison skewers with remaining skewers.
  • Place vegetable skewers on the well-heated grill 2-3 minutes before adding the bison skewers, they will take longer to cook.
  • Turn vegetable skewers over once and then add bison skewers to the grill. Cook for about 3-4 minutes, turn bison skewers and cook an additional 3-4 minutes or until done (8-11 minutes total cooking time).
  • Preheat oven to 400°F.
  • Toss butternut squash with 1 tablespoon olive oil and sprinkle with salt and pepper.
  • Roast in preheated oven for 20 minutes on a sheet pan.
  • Turn squash over, add tomatoes. Continue to roast until soft and golden brown, about 20 minutes more.
  • Combine prepared couscous and remaining ingredients in mixing bowl and toss. Chill for 4 hours and serve.

8 asparagus spears

1 small garlic clove, minced
3 medium carrots, peeled and shredded

3/4 cup couscous
3 ripe plum tomatoes, seeded and diced
2 green onions, finely minced

4 ounces grated parmesan cheese
4 tablespoons fresh lemon juice
2 1/2 tablespoons olive oil
2 teaspoons dried oregano, crushed

1 1/2 cups small carrots, peeled and cut into 2-inch lengths
1 medium onion, peeled and cut into 1/2-inch chunks
4 large cloves garlic, peeled
1 1/4 cups chicken broth
2 teaspoons salt
Freshly ground pepper to taste
1 small butternut squash (about 1 1/2 pounds), peeled, seeded and cut into 1/2-inch cubes
1 15-ounce can chickpeas, drained and rinsed
1 teaspoon ground cumin
1/2 teaspoon turmeric
2 cups cooked couscous
1 tablespoon chopped fresh cilantro

Steps:

  • Preheat the oven to 425 degrees. Place the carrots, onion and garlic in a shallow roasting pan. Stir in 1/4 cup of broth, 1 teaspoon of salt and pepper. Roast for 15 minutes. Stir in the squash and roast until vegetables are tender, about 30 minutes, stirring twice.
  • Place the pan on top of the stove, over medium-high heat. Pour in 1 cup of chicken broth. Stir, scraping up all of the bits stuck to the bottom of the pan. Lower the heat slightly and stir in 1 teaspoon of salt, pepper, chickpeas, cumin and turmeric. Cook until broth is reduced to a sauce consistency, about 3 minutes more.
  • Remove from heat and stir in the couscous. Divide among 4 plates and garnish with cilantro. Serve immediately.

1 cup Israeli couscous
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1/2 red onion, thinly sliced
2 red bell peppers, halved lengthwise
1 medium zucchini, halved lengthwise
1/2 teaspoon ground cumin
1 15-ounce can chickpeas, drained and rinsed
3/4 cup green goddess dressing (see directions)

Steps:

  • Preheat a grill to medium high. Meanwhile, bring a large pot of salted water to a boil. Add the couscous and cook until just tender, about 8 minutes. Drain and transfer to a large bowl; toss with 1 tablespoon olive oil and season with salt and pepper.
  • Meanwhile, soak the red onion in a small bowl of hot water, 10 minutes. Toss the bell peppers and zucchini in a large bowl with the remaining 2 tablespoons olive oil, the cumin, 1/2 teaspoon salt and a few grinds of pepper. Grill the vegetables, turning once, until well marked and tender, 8 to 10 minutes. Transfer to a plate and let cool to room temperature. Cut the peppers into 1-inch pieces and slice the zucchini into half-moons.
  • Drain the onion and add to the couscous along with the bell peppers, zucchini and chickpeas. Add the dressing and toss; season with salt and pepper.
  • Combine 1/2 cup each mayonnaise and sour cream, 1/3 cup each chopped parsley and chives, and 1/4 cup chopped tarragon in a blender. Add 2 anchovy fillets, 1 minced garlic clove, 1 tablespoon capers, the juice of 1 lemon, 1/2 teaspoon kosher salt and a few grinds of pepper; puree until smooth. (Makes 1 1/2 cups.)

Steps:

  • COUSCOUS: BRING WATER, INSTANT STOCK AND OIL TO A BOIL IN A MEDIUM-SIZES SAUCEPAN. ADD COUSCOUS. STIR AND RETURN TO A BOIL. COVER POT, TURN HEAT DOWN IMMEDIATELY TO SIMMER. SIMMER FOR 2 MINUTES. TAKE OFF BURNER AND STAND FOR 10 MINUTES THEN FLUFF WITH FORK. COOL PLACE ALL VEGETABLES IN LARGE BOWL. IN A GLASS JAR, PLACE ALL INGREDIENTS FOR DRESSING. SHAKE WELL. ADD COUSCOUS TO VEGETABLES AND POUR ALL DRESSING ON TOP. TOSS WELL. REFIGERATE UNTIL READY TO SERVE.

1 c couscous
1/4 medium red onion
coarse salt and pepper to taste
1/2 english cucumber, halved and thinly sliced
1 medium tomato, cut into 1/2 inch wedges
2 Tbsp fresh mint leaves, torn
1 Tbsp extra-virgin olive oil and fresh lemon juice

Steps:

  • 1. Cook 1 cup couscous according to package instructions. I a medium bowl, combine cooked couscous, 1/4 medium red onion, thinly slices, 1/2 English cucumber, halved and thinly sliced, 1 medium tomato, cut into 1/2 inch wedges, 2 tablespoons torn fresh mint leaves, and 1 tablespoon each extra virgin olive oil and fresh lemon juice. season to taste with coarse salt and ground pepper.
  • 2. Can be stored in an airtight container in the refrigerator up to 3 days.

1 package (10oz) Near East couscous original plain
1 medium eggplant peeled and cut into 1-inch cubes (about 3 cups)
2 medium red bell peppers cut into 1-inch pieces
4 tablespoons olive oil, divided
3 cloves of garlic, minced
1/4 cup red wine vinegar
1/4 cup fresh basil, chopped
1/4 teaspoon black pepper
1 cup crumbled feta cheese

Steps:

  • 1-prepare near east couscous according to package directions except omit butter or olive oil. set aside to cool for 10 mins. 2-meanwhile heat oven to broil. In a large bowl toss eggplant and bell peppers with 2 tablespoongs of olive oil and garlic until coated thoroughly. On a cookie sheet with borders spread out vegetables in one layer. Broil on top rack for 4-6 minutes or until eggplant is evenly golden brown, stirring frequently. 3-In a large bowl combine remaining 2 tablespoons olive oil, vinagar, basil and black pepper. Add couscous and roasted vegetables tossing to coat evenly. Chill 2 hours or overnight. Stir in cheese just before serving.

Roasted Vegetable Couscous Salad with Harissa-style Dressing image

This salad is one of the best vegetarian dishes I've ever served. The combination of goats' cheese and roasted vegetables on a cool bed of couscous mixed with salad leaves and a spicy dressing is positively five-star.

1 small aubergine
2 oz (50 g) pitted black olives, chopped
1 heaped tablespoon capers, drained
salt and freshly milled black pepper
2 medium courgettes
1 lb (450 g) cherry tomatoes, skinned
1 small red pepper, de-seeded and cut into 1 inch (2.5 cm) squares
1 small bulb fennel, chopped
1 large onion, sliced and cut into 1 inch (2.5 cm) squares
2 fat cloves garlic, crushed
2 tablespoons fresh basil leaves, torn so that they stay quite visible
3 tablespoons extra virgin olive oil
10 oz (275 g) medium couscous
18 fl oz (500 ml) vegetable stock (or see related recipe below to make your own)
4 oz (110 g) firm goats' cheese
salt and freshly milled black pepper
1 x 3 oz (75 g) packet mixed salad leaves (such as lettuce, coriander leaves, flat-leaf parsley, rocket)
4 fl oz (110 ml) extra virgin olive oil
1 rounded teaspoon cayenne pepper
2 level tablespoons ground cumin
2 heaped tablespoons tomato purée
4 tablespoons lime juice (about 2 limes)
1 level tablespoon black onion seeds

Steps:

  • MethodFirst prepare the roasted vegetables: prepare the aubergine and courgettes ahead of time by cutting them into 1 inch (2.5 cm) dice, leaving the skins on. Then toss the dice in a level dessertspoon of salt and pack them into a colander with a plate on top and a heavy weight on top of the plate. Leave them on one side for an hour so that some of the bitter juices drain out. After that, squeeze out any juices left, and dry the dice thoroughly in a clean cloth. Preheat the oven to gas mark 9, 475°F (240°C). Now arrange the aubergine, courgettes, tomatoes, pepper, fennel and onion in the roasting tin, sprinkle with the crushed garlic, basil and olive oil, toss everything around in the oil to get a good coating and season with salt and pepper. Place the tin on the highest shelf of the oven for 30-40 minutes or until the vegetables are toasted brown at the edges. When the vegetables are done, remove them from the oven and stir in the chopped olives and the capers then remove them to a plate to cool. When you're ready to assemble the salad, first place the couscous in a large, heatproof bowl, then pour the boiling stock over it, add some salt and pepper, stir it with a fork, then leave on one side for 5 minutes, by which time it will have absorbed all the stock and softened. Meanwhile cut the cheese into sugar cube-sized pieces. Make up the dressing by whisking all the ingredients together in a bowl, then pour into a serving jug. To serve the salad, place the couscous in a large, wide salad bowl and gently fork in the cubes of cheese along with the roasted vegetables. Next arrange the salad leaves on top and, just before serving, drizzle a little of the dressing over the top followed by a sprinkling of onion seeds and hand the rest of the dressing around separately.
