BACON AND EGGS CASSEROLE
Because it's fast to fix and such a great hit with family and friends, this egg casserole with bacon is a favorite of mine to make for brunches. Served with a fruit salad, hot muffins and croissants, it's excellent for an after-church meal. -Deanna Durward-Orr, Windsor, Ontario

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towel to drain. , In a large bowl, beat eggs. Add milk, cheese, sour cream, onions, salt and pepper. , Pour into a greased 13x9-in. baking dish. Crumble bacon and sprinkle on top. Bake, uncovered, at 325° until knife inserted in center comes out clean, 40-45 minutes. Let stand for 5 minutes.

VEGETABLE AND BACON CASSEROLE
A great healthy recipe which works as a winter warmer but also in the summer months. Any variation of vegetables can be used which gives the dish an original taste every time. (All measurements are just suggested amounts, use however much you need to fill your pot)

Steps:
- Line the bottom of a dutch oven with lettuce.
- Prepare raw vegetables and add them to the pot making sure that they are well mixed.
- Season vegetables with a liberal amount of salt,pepper and mixed herbs, mixing them once more to ensure that the seasoning is spread throughout.
- Place rashers of bacon across the top of the vegetables. (If you don't have enough bacon to cover the top of your pot then more can be used, I have calculated for 1 rasher per person but you may prefer more).
- Cook in oven at 200C for 45-50 minutes.

SAUSAGE & VEGETABLE CASSEROLE
An economical casserole for the family. It's quick and easy. I learnt to make this when I was a beginner cook. (I also ate meat and wheat then)

Steps:
- Pre-heat oven to 180°C.
- Fry the sausages until browned. Chop into chunky pieces and set aside.
- Fry the onion and bacon until the onion is soft.
- Into a large casserole combine all of the ingredients and mix until well combined.
- Bake uncovered for 30 minutes.
- Stir in the parsley and serve.
