Good hearty soup for those cold and rainy days, and so easy to make, just pitch it all in the crock pot! I made the mistake of putting the noodles in and letting it go too long, and they totally dissolved. It still tasted fine, it was just thicker. Make sure you put them in no more than an hour before you're ready to serve. I also use whatever meat is cheap, doesn't have to be sirloin because it's gonna cook all day. From Family Circle 10/7/09

1 1/2 lbs beef sirloin, cut into 1/2 inch pieces
1 1/2 teaspoons salt
1/2 teaspoon black pepper, freshly ground
2 tablespoons vegetable oil
1 medium onion, finely chopped
3 medium carrots, finely chopped
1 (15 ounce) can tomato sauce
3 cups beef broth
2 cups chicken broth
1/4 lb green beans, snipped and cut into 1-inch pieces
2 cups frozen peas, thawed
2 cups frozen corn, thawed
2 cups uncooked alphabet pasta

Steps:

  • Sprinkle beef with salt and pepper.
  • Heat oil in a large nonstick skillet over high heat.
  • add beef, a few pieces at a time, and cook 2 minutes on each side. Transfer to slow cooker.
  • Add onion and carrots to skillet and saute 3 minutes.
  • Transfer contents of skillet to slow cooker and add tomato sauce, beef and chicken broths, and green beans.
  • Cover and cook on LOW for 5 to 6 hours.
  • Remove lid and add the peas, corn, and noodles and stir inches.
  • Cover and cook for an additional 45 minutes to an hour before serving.

This comforting soup is packed with vegetables and pasta with a base of rich beef stock.

Number Of Ingredients 19

3 tablespoons olive oil
6 ounces pearl onions, peeled and cut in half
3 medium cloves garlic, minced
2 stalks celery, cut into 1/2-inch pieces
3 medium carrots, peeled, cut into 1/2-inch pieces
1 medium parsnip, peeled, cut into 1/2-inch pieces
1 large turnip, peeled, cut into 1/2-inch pieces
1 medium baking potato, peeled, cut into 1/2-inch pieces
9 ounces whole canned tomatoes, squeezed of juice, cut into 1/2-inch pieces
3/4 teaspoon dried savory
Salt and freshly ground pepper
2 dried bay leaves
1 tablespoon sherry or red-wine vinegar
10 cups Homemade Beef Stock
3/4 cup dried alphabet noodles
2 medium zucchini, cut into 1/2-inch pieces
1 small head savoy cabbage, cored, cut into 1/2-inch-wide strips
8 ounces green beans, cut into thirds
4 ounces fresh spinach, washed, cut into 1/2-inch-wide strips

Steps:

  • Heat the oil in a stockpot over medium heat. Add the onions, garlic, celery, carrots, parsnip, turnip, potato, and tomatoes. Season with the savory, salt, and pepper. Cook, stirring occasionally, until the vegetables begin to soften and brown slightly, about 30 minutes. Add the bay leaves, sherry, and stock, then bring the mixture to a boil. Reduce heat to simmer, and cook the mixture, partially covered, until vegetables are tender, about 45 minutes.
  • Meanwhile, fill a medium saucepan with water. Add salt. Cook the noodles in the saucepan, just until they are al dente, about 4 minutes. Strain the noodles well under cool running water. Shake out any excess water.
  • About 10 minutes before serving, add zucchini, cabbage, and green beans to the stock. Stir the spinach into the pot, add the noodles, and cook until spinach is wilted. Serve hot.

INSTANT POT ALPHABET VEGETABLE SOUP

This soup is really simple to make. I use it as a side dish for sandwiches often times as we don't eat nearly as many French Fries or Potato Chips these days as we did in our younger years, lol! To make this a main dish, add leftover cooked meat to the pot or a half cup dry beans of choice.

1 pkg knorr vegetable soup mix
1 box (32 oz.) chicken broth (vegetable broth to make vegetarian)
1 can(s) (6 oz.) tomato paste
1 c frozen corn
3 medium carrots, peeled & sliced
2 stalk(s) celery, finely diced
1 1/2 c fresh green beans or 1 can
additional fresh vegetables of your choice (whatever's handy that you need to use up, add more broth if needed)
1/2 c alphabet noodles, uncooked
salt & pepper to taste
fresh parsley (optional)

Steps:

  • 1. Add the chicken or vegetable broth, tomato paste, vegetable soup packet, and all vegetables to Instant pot and cook on high pressure for 3 minutes.
  • 2. Seal lid, make sure valve is set to sealing
  • 3. Use quick release valve to release steam.
  • 4. Remove lid. Salt & Pepper Soup to taste.
  • 5. Ladle into soup bowls and sprinkle with Fresh parsley and a Tbsp Parmesan or Asiago cheese

In my never ending quest to find the clone for Campbells Vegetarian-Alphabet soup, I can honestly say....this is not it! To make this vegetarian-use vegetable bouillon instead of beef/chicken. The serving size is just a guess, makes alot! If desired add cooked ground beef.

46 ounces vegetable juice
46 ounces tomato juice
2 lbs frozen mixed vegetables
1 lb frozen cut green beans
8 ounces frozen lima beans
3 (14 1/2 ounce) cans diced potatoes, undrained
1 chicken bouillon cubes or 1 vegetable bouillon cube
1 teaspoon hot sauce
2 cups water
2 garlic cloves, minced
4 teaspoons sugar
2 teaspoons dried basil
8 ounces alphabet pasta, cooked, rinsed in cold water, and drained

Steps:

  • In a large stockpot (8 quart) place all ingredients(except pasta).
  • Bring to a boil.
  • Reduce heat and simmer for 1 hours Taste occasionally adding additional seasonings if desired.
  • When ready to serve remove from heat and add cooked pasta stirring well.
  • For Vegetarian use only the vegetable bouillon cubes.
