These vegan oatmeal raisin cookies are the best! They're soft and chewy with slightly crispy edges, and super easy to make without butter or eggs.

Number Of Ingredients 11

1 tablespoon ground flaxseed + 3 tablespoons water
1 cup all-purpose flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon coarse salt
1/2 cup vegan butter, softened
1/3 cup + 2 tablespoons brown sugar
1/3 cup + 2 tablespoons sugar
1 teaspoons vanilla extract
1 1/2 cups old-fashioned oats
3/4 cup raisins

Steps:

  • Preheat oven to 350˚F and line a baking sheet with parchment paper.
  • In a small bowl, mix the flaxseed and water together. Set aside and allow flax seed to absorb the liquid.
  • In a medium bowl, whisk the flour, baking soda, cinnamon, and salt together.
  • In a large bowl with an electric mixer, beat the butter and sugars at a medium speed until light and fluffy.
  • Add vanilla, and the flax mixture to the bowl, and mix until incorporated.
  • Slowly add the flour mixture to the bowl, mixing until each addition has been incorporated, scraping the sides as needed.
  • Mix in oats and raisins until evenly distributed in the dough.
  • Using a cookie scoop, drop 2 tablespoon balls of dough onto a prepared baking sheet. Bake for 10 - 11 minutes, or until the dough has just set on the top.
  • Remove from oven and allow the cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.

Easy and healthy oatmeal cookie bars made with just 5 simple ingredients! Soft, chewy and gooey in one, they are vegan, gluten-free and ready in 12 minutes!

4 cups gluten free rolled oats (can use standard rolled oats, if not gluten-free)
1 cup almond butter (can substitute for any nut or seed butter of choice)
1/4 cup maple syrup (* See notes)
1 1/2 cups mashed bananas (** See notes)
1/2-1 cup chocolate chips (use 1 cup for the full chocolate flavor! )

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch square pan with parchment paper, reserving 1-2 inches of parchment paper over the sides, for easily removal.
  • In a large mixing bowl, add all your ingredients, except for the chocolate chips, and mix well. Using a rubber spatula, fold through the chocolate chips, reserving a few to top the cookie bars with.
  • Transfer the batter into the lined pan, adding extra chocolate chips on top. Bake for 15-17 minutes, or until just beginning to go golden around the pan.
  • Remove from the oven and let sit for 10 minutes, before transferring to a wire rack to cool completely.

¾ cup white sugar
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 cups quick-cooking oats
1 cup dried cherries
½ cup chopped walnuts
½ cup pancake syrup
1 cup applesauce
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix flour, white sugar, salt, baking powder, and baking soda in a large bowl. Stir in oats, cherries, walnuts, and pancake syrup. Make a well in the center; pour in applesauce, vegetable oil, and vanilla extract. Mix until dough comes together. Press dough into a 10x15-inch baking pan.
  • Bake in the preheated oven until lightly browned, 20 to 25 minutes. Cool before cutting into bars.
