Time 1h15m

Yield 12 serving(s)

Number Of Ingredients 16

1 large bell pepper, diced
1 large onion, diced
2 medium tomatoes, diced
2 cups salsa
1/2 bunch fresh cilantro, chopped finely (more or less to taste)
1 bunch fresh chives, chopped
2 garlic cloves, minced
1 teaspoon cumin
4 1/2 ounces black olives, sliced
10 corn tortillas
1 (15 1/4 ounce) can corn, drained
3 (16 ounce) cans refried beans
1 (16 ounce) can black beans, rinsed and drained (can use ranchero or other bean if desired)
1 (15 ounce) can enchilada sauce (optional)
1 teaspoon chili powder (optional)
1/2 jalapeno pepper (finely chopped) (optional)

Steps:

  • Preheat oven to 375°F.
  • In a non-stick pan with a little water (1 tbsp.), sauté the pepper, garlic, and onion for about 5-10 minutes, or until softened (not too long, the onions are SO good crunchy).
  • Place mix in a medium bowl and add diced tomatoes, cilantro (alternately, the cilantro can be sprinkled in as two layers, if easier) and chives. Mix well and set aside.
  • Spray a 9 X 13-inch baking pan with non-stick spray. Line the bottom with a layer of tortillas (cut some of them to fit, if desired). Cover most of the bottom of the pan. For reference: I use four tortillas on the bottom, three for the next layer and three for the final layer.
  • Place 1 ½ cans of the refried beans in a small bowl, stir, and spread evenly over the tortillas.
  • Cover the refried beans with half of the pepper-onion-tomato mixture.
  • Sprinkle entire dish lightly with 1/2 tsp cumin.
  • Cover with half the can of corn.
  • Cover with half the can of beans.
  • Cover with 1/2 THE SALSA, add another layer of tortillas and REPEAT above layers (steps 5-9).
  • Cover with a final layer of tortillas.
  • Sprinkle with black olives.
  • Top with the remaining 1 cup salsa.
  • Bake for about 30 minutes or until hot throughout. If allowed to cool for about 10 minutes, it will be easier to cut.

VEGAN MEXICAN CASSEROLE

Vegan Mexican Casserole image

This is a Mexican casserole recipe from my mother that I translated to vegan. I love this recipe and so does my non-vegan wife. (I add real cheese to her portion and top it with real sour cream.) It is easy to change and transform to make it your own. Enjoy!

VEGAN OVEN-BAKED MEXICAN QUINOA CASSEROLE image

Categories     Bean

Yield 4 servings

Number Of Ingredients 15

1 tbsp vegetable oil
1 onion, chopped
1 clove garlic, minced
1 cup uncooked quinoa
1 28-oz can diced tomatoes, with liquid
½ cup water
1 tbsp tomato paste or ketchup
1 tsp cumin
1 tsp oregano
½ tsp chili powder (more if you like things spicy)
Salt & freshly ground pepper
1 19-oz can black beans, rinsed and drained
1 11-oz can corn kernels, with liquid
3 cups baby spinach
Toppings of choice: sour cream, avocado, cilantro, cheese, etc.

Steps:

  • Preheat oven to 350F. Heat 1 tbsp olive oil in a medium frying pan (or stove-top-safe 2.8 liter/3 quart casserole dish). Add onion and garlic, and saute until translucent, about 8 minutes. Remove from heat; and transfer to oven-safe casserole dish if not already using one. Add quinoa, diced tomatoes (with juice), water, tomato paste (or ketchup), and spices. Season with salt and pepper and stir to combine. COVER and place in oven and set timer for 30 minutes. Carefully remove casserole from oven and stir in drained beans and corn (with liquid). If the mixture looks dry, add a half cup of water. Return to oven WITH LID and set timer for another 30 minutes. Carefully remove casserole from oven and stir in spinach. It will wilt from the heat. Top with desired toppics and serve. IF FREEZING: Make full recipe but leave-out the spinach and toppings. Let cool and freeze in airtight container(s). To serve: defrost fully, lightly reheat (in microwave or on stovetop), stir in spinach and add toppings of choice.
