Vegan Hearts of Palm

In traditional ceviche, raw fish is "cooked" with citrus juice. In this vegan version, hearts of palm take the place of the fish-and they don't technically need to get cooked at all! Instead, their creamy, vegetal flavor soaks up the citrus marinade. While ceviche originates in Peru, this flavor profile is more like versions of ceviche you'll find in Mexico.

Two 14-ounce cans whole hearts of palm, drained and sliced into 1/8-inch-thick rounds
2 Roma tomatoes, seeded and diced
1/2 English cucumber, diced (about 1/2 cup)
1/2 small red onion, diced (about 1/2 cup)
1 avocado, diced into 1/4-inch chunks
1 jalapeño, ribs and seeds removed, diced
1/4 cup chopped cilantro leaves and tender stems, plus more leaves for garnish
2 cloves garlic, grated
2 to 3 limes, juiced (about 1/3 cup)
1 to 2 lemons, juiced (about 1/4 cup)
Kosher salt and freshly ground black pepper
Vegan tortilla chips, tostadas or saltine crackers, for serving
Vegan hot sauce, for serving

Steps:

  • Combine the hearts of palm, tomatoes, cucumbers, onions, avocado, jalapeño, cilantro, garlic, lime juice, lemon juice, 1 teaspoon salt and a few grinds of pepper in a medium bowl. Cover and refrigerate until chilled, about 2 hours. Garnish with cilantro leaves and serve with tortilla chips, tostadas or saltine crackers and hot sauce.

1 small garlic clove
1/4 cup fresh coriander
3 tablespoons fresh lemon juice
1/2 teaspoon sugar
1/4 teaspoon salt

For salad
a 14-ounce can hearts of palm, drained
4 California firm-ripe avocados
1 small red onion, sliced thin
Boston lettuce leaves (from about 2 heads)

Steps:

  • Make vinaigrette:
  • In a blender purée garlic and coriander with lemon juice, sugar, and salt. With motor running add oil in a stream, blending until dressing is emulsified.
  • Make salad:
  • Cut hearts of palm and avocado into 3/4-inch cubes and in a large bowl with a rubber spatula gently toss with onion and vinaigrette until combined well.
  • Line 8 salad plates with lettuce leaves and mound avocado mixture on top.

2 (14 oz) cans or 1 large jar (26 oz.) hearts of palm
2 avocados
2 T + 1 T fresh-squeezed lime juice (or more)
1/2 cup finely chopped fresh cilantro
1/4 cup thinly sliced green onion (or chopped red onion)
sea salt to taste for seasoning finished salad

Steps:

  • Drain the hearts of palm into a colander placed in the sink, and let them drain well while you cut the avocado. Dice avocado and toss with the 2 tablespoons of lime juice. (Just use the bowl you're making the salad in. Cut the hearts of palm into slices about 1/2 inch thick, breaking it apart into rings or cutting the larger slices in half if they don't break apart. Chop cilantro and thinly slice green onion. Add the sliced hearts of palm, chopped cilantro, and sliced green onion to the avocado and stir gently to combine. Add the final tablespoon of lime juice (or a bit more if desired) and season the salad well with sea salt. Serve immediately. This would probably keep in the fridge for at least one day, but you probably won't have any left!
