1 cup white rice
2 cups water
3 cups milk
1 cup sugar (adjust to desired sweetness)
1/4 teaspoon cinnamon, and or 1/4 teaspoon nutmeg, according to taste
1/2 cup raisins (optional)
1 teaspoon rose water (optional) or 1 teaspoon orange blossom water (optional)

Steps:

  • Rinse rice and place in a saucepan with water.
  • Cover and simmer over medium fire for 15-20 minutes.
  • Add milk, stirring constantly.
  • When it begins to thick, add sugar and orange blossom water.
  • Continue stirring constantly until rice is soft or well done.
  • Remove from fire and pour into platter spreading it thinly or in individual bowls.
  • Cool and serveor cool and serve.

The flax is healthy and chock full of fiber, and acts as a stabilizer for the almond milk since vegan milks don't thicken on their own plus it has more nutritional value than cornstarch. I use Sun Crystals to cut down on sugar but stay chemical-free (it is 50% sugar and 50% stevia extract, has 240 calories for 1/4 cup.) so it's sweet but not overpowering the other flavors in it.

1 cup uncooked brown rice
2 cups boiling water
1 dash salt
3 cups plain unsweetened almond milk
2 tablespoons ground flax seeds
1/4 cup blanched slivered almond
1/2 cup sugar (I used 1/4 cup Sun Crystals stevia-sugar blend)
1 tablespoon rose water
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
3 dashes cardamom (just a few shakes)
saffron, powder
chopped pistachios

Steps:

  • Boil 2 cups of lightly salted water in a heavy-bottom saucepan, immerse the brown rice in it. Lower the heat, loosely cover the pot, and let simmer at medium-low heat for 40 minutes or until the rice has absorbed all the water.
  • Add all the other ingredients and mix well, and loosely cover. Let simmer on medium-low heat for 15-20 minutes or until the mixture has thickened and the rice is very tender.
  • Pour into an airtight container and refridgerate for at least 2-3 hours before serving, or overnight. Makes a great breakfast too if made with amaranth or quinoa!

coconut oil, for greasing the dish
1 ½ cups brown rice (We liked short grain best in this recipe.)
3 cups water
2 tablespoons arrowroot powder
1 ½ cups vanilla rice milk (I couldn't find rice milk and used vanilla almond milk instead), divided
¼ cup raisins
¼ cup pure maple syrup
1 teaspoon vanilla powder or vanilla extract
1 tablespoon ground cinnamon (In my 2nd batch I decreased to 2 teaspoons for a slightly lighter color and stronger vanilla flavor.)
½ teaspoon sea salt
pistachios, almonds, or other nuts for garnish

Steps:

  • In a heavy, medium saucepan, place the brown rice and water and bring to a boil.
  • Reduce heat to low, cover, and simmer until very soft, about 40 to 50 minutes.
  • Preheat the oven to 350 degrees. Grease a large baking dish with coconut oil (I used a 9-inch square ceramic dish).
  • In a large bowl dissolve the arrowroot powder in 1 cup of the milk (I used 1 ½ cups milk here to make it extra sweet and creamy). Add the cooked rice, raisins, maple syrup, vanilla, cinnamon, and salt; mix well to combine.
  • Transfer to the baking dish. Cover with foil and bake until browned and bubbly, about 1 hour.
  • Remove from the oven and stir in the remaining ½ cup of milk. Let cool for about 1 hour before serving. Garnish with nuts.

1/3 cup raisins

2 cups water
3 cups whole milk
1 cup granulated sugar
1 tablespoon orange blossom water
1/2 cup dates, diced
3/4 teaspoon ground cinnamon or 3/4 teaspoon cardamom

Steps:

  • In a large saucepan cook rice in water for 15 minutes.
  • Add milk, and stir until the mixture becomes thick.
  • Add orange blossom water and sugar. Continue stirring until rice is well cooked.

100g pudding rice
1 tbsp maple syrup
½ tbsp vanilla bean paste or ½ vanilla pod, seeds scraped out
650ml unsweetened almond milk plus an extra splash to serve (optional)
2 ripe pears, peeled, cored and chopped
250g frozen or fresh mixed berries
1 medium orange, juiced, zest peeled into strips using a vegetable peeler

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Rinse the rice in a sieve under cold running for a few seconds, then tip into an 850ml baking dish. Mix in the maple syrup, vanilla, a strip of orange zest and almond milk. Cook, uncovered, on the middle shelf of the oven for 2 hrs until the rice is tender, most of the milk has been absorbed, and the mixture is creamy.
  • Meanwhile, put the pears, berries and orange juice in a small pan over a medium heat. Cook for 10-15 mins until the berries have broken down and reduced, and the pear is tender. Add a splash of water during cooking, if needed, to create a jammy compote. Leave to cool slightly. Add a splash more almond milk to the rice pudding if you prefer a looser consistency, then serve with the compote.
