1 tbsp soy sauce
1 tbsp vegan Worcestershire sauce (we used Henderson's Relish)

  • Heat oven to 120C/100C fan/gas 1 and line two roasting trays with baking parchment.
  • Mix together the oil, soy sauce, Worcestershire sauce, maple syrup, smoked paprika and ground cumin. Lay the aubergine slices on the roasting trays and brush both sides with the spice mixture.

HOMEMADE VEGAN IMITATION BACON BITS!

Homemade Vegan Imitation Bacon Bits! image

I came across this and wowsa, what a great idea! I no longer have to search for bacon bits that do not contain natrural flavoring! So easy to make at home. You can add the maple extract or not, it's good both ways. I used an idea from a reviewer to tweek the recipe just a little. Thank you Joni Marie Newman. Update: I have added more flavor by using soy sauce and molasses.

Categories     Vegan

Time 20m

Yield 1 cup, about

Number Of Ingredients 9

2 tablespoons liquid smoke (30 ml)
2 tablespoons soy sauce
1 tablespoon molasses
3/4 cup water (about)
1 cup textured vegetable protein, granules (TVP-96 g)
1/4 teaspoon salt
2 -3 drops red food coloring (optional)
3 tablespoons canola oil (or other neutral vegetable oil-45 ml)
2 drops maple extract (optional)

Steps:

  • Add the liquid smoke, soy sauce, molasses to a measuring cup , then fill with water to get one cup.
  • In a microwave safe dish, mix together liquid smoke mixture, TVP and salt.
  • Cover tightly with plastic wrap and microwave on high for five minutes. Carefully remove the wrap.
  • Preheat a skillet with the oil.
  • If using maple extract, add to the reconstituted TVP now and mix well.
  • Add reconstituted TVP to the pan and toss to make sure it all gets coated with oil. Pan fry until desired crispness. Stir often. You don't necessarily want to "brown" them, but dry them out. This should take about ten minutes.
  • Allow to cool completely before transferring to an airtight container.
  • Store in the refrigerator. The bits should last at least a week. Or you can store in the freezer, they will last a long time!

VEGAN TEMPEH BACON

Vegan Tempeh Bacon image

Taken from Vegan With A Vengeance by Isa Chandra Moskowitz. This recipe has been slightly modified to make it sattvic (no garlic and onions.)

Provided by Jeannette 108

Categories     Breakfast

Time 1h50m

Yield 14 strips

Number Of Ingredients 7

3 tablespoons Braggs liquid aminos or 3 tablespoons soy sauce
1/3 cup apple cider
1 teaspoon tomato paste
1/4 teaspoon liquid smoke
1 (8 ounce) package tempeh
hing
2 tablespoons peanut oil or 2 tablespoons vegetable oil

Steps:

  • To make the marinade combine the soy sauce, cider, tomato paste and liquid smoke in a wide, shallow bowl or pan and mix with a fork until the tomato paste is fully dissolved.
  • Cut the tempeh into thin strips (less than 1/4 inch thick) lengthwise. You should be able to get about 12 strips. Rub the strips with the hing. Submerge the tempeh strips in the marinade and let sit, for at least an hour and up to overnight.
  • Heat the oil in an 11 or 12 inch skillet over medium heat. Add the tempeh strips and cook for 4 minutes on one side; the bottom should be nicely browned. Flip the strips over and pour the remainder of the marinade over them. If there isn't much marinade left add a splash of water. Cover and let cook for 3 more minutes, or until the liquid is absorbed. Uncover and check for doneness; if necessary keep cooking uncovered until all sides are nicely browned. Remove from heat and serve. (I recommend doubling the marinade recipe.).

BUBBLE AND SQUEAK WITH VEGGIE BACON AND CELERIAC (VEGAN)

Bubble and Squeak With Veggie Bacon and Celeriac (Vegan) image

It was Paddys Day today. We drank stuff and I made stuff. It was good as per usual. Veganised things to make them more my style/ My husband loved this and he's a die hard meaty man. (Please see adjustments to frying pan method if the handle of pan falls off and makes pan unusable and very annoying) oh and I dunno how much is in a packet of redwoods bacon. I guessed 200g so however much you like I suppose. I think this would go nice with lentils. I had it with a bit of vegan cheese and gravy. Sounds weird tastes nice.

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 12

3 small onions
1 tablespoon sunflower oil
1 leek
1/4 savoy cabbage, shredded
1/4 celeriac, chopped
4 garlic cloves
200 g vegan bacon
1 teaspoon rosemary
1 lb potato
2 ounces soya margarine
2 tablespoons soya milk
salt and pepper

Steps:

  • Peel your potato (aka spuds) and peel your quarter or celeriac and cut both into into 1 inch bits. Put in large pan of water with a sprinkle of salt and boil for twenty minutes until tender.
  • Meanwhile shred your cabbage and boil in separate pan for around 5 minutes.
  • Slice your onions and leeks finely and squish your garlic with a a garlic crusher.
  • Slice your veggie bacon into strips or chunks and fry gently about a minute a side in the oil.
  • Add the onions and leeks in a frying pan for a couple of minutes.
  • Next add the garlic and the drained cabbage cook for five minutes.
  • Drain the spuds and celeriac well and mash with the soy spread and spy milk season with a bit of salt.
  • Add the frying pan mix and give a good mash about.
  • Now you can either squish the mixture into an even "patty" in the frying pan and cook for about 5 minutes on a medium heat so it becomes like a cake with a crispy bottom and the grill the top or (if your using a wok because the handle has fallen off your frying pan) put into an oven proof dish and press into a patty. Put in oven on gas mark 8 for twenty minutes until a bit crisp on the top.
  • If you're feeling super flash top with a think layer of vegan mozzarella and sprinkle of vegan parmesan.
  • I used only a little insey weensey bit and served with veggie gravy.
  • Yummy yummy in the tummy.

VEGAN BAKED CARROT BACON RECIPE - (4.5/5)

Vegan Baked Carrot Bacon Recipe - (4.5/5) image

Provided by andreajayros

Number Of Ingredients 7

7 large carrots
1/2 cup vegetable broth
1 teaspoon Bragg's Liquid Amino Acids
2 tablespoons olive oil
1/2 teaspoons liquid smoke
1/2 teaspoon smoked paprika
Salt and pepper to taste

Steps:

  • Preheat your oven to 400 degrees fahrenheit. Slice carrots into thin strips using either a mandolin or food processor to keep them uniform. In a small bowl, whisk together broth, Braggs, olive oil, liquid smoke, and smoked paprika. Then, in a shallow dish, toss sliced carrots with broth combination until carrots are completely coated. Arrange carrot slices on a foil-wrapped baking sheet so that they don't overlap. Put in oven and bake for 7 minutes. Pull baking sheet from the oven and flip carrots. Put baking sheet in the oven to bake for another 7-8 minutes. It might take more or less time depending on how thick or thin you sliced your carrots. You'll know your carrot bacon is done when the edges are crispy and the center of each slice looks dry. Move carrot bacon to a plate with a paper towel to soak up any extra oil. Salt and pepper to taste. Let cool to room temperature before crumbling over a salad or putting in a sandwich. Store in an airtight container in the fridge. *A less healthy version, but also delish, would be to deep fry!

BACON WITH A VEGAN!

Bacon With a Vegan! image

Tastes remarkably like bacon! I tried a recipe on Zaar and tweaked it. This makes great sandwiches and can be used in stir frys, to top salads, anywhere you might use bacon. Enjoy!

Provided by Sharon123

Categories     Breakfast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

1 tablespoon oil, neutral tasting (don't use extra virgin olive oil-too strong)
1 (14 ounce) package firm tofu, cut into strips (to resemble bacon)
2 tablespoons soy sauce (I use Bragg's Aminos)
1 teaspoon liquid smoke
2 teaspoons brown sugar (I might try molasses next time)
2 tablespoons nutritional yeast
fresh ground black pepper (optional)

Steps:

  • Heat oil into large skillet.
  • Fry "bacon" strips on low heat until crispy on the outside. To do this, place them in the pan in the oil and let them simmer for about 10 minutes, without turning. Now they are firm enough to turn easily.
  • Turn them and simmer another 10 minutes on the other side.
  • Mix the soy sauce with the liquid smoke and brown sugar, stirring to disolve sugar.
  • Remove skillet from heat.
  • Pour the liquid smoke mixture into the pan and move the tofu around so all sides are coated. Place back on heat.
  • Sprinkle the nutritional yeast, covering all sides. If you like, sprinkle a little freshly ground black pepper on now. Stir gently until the liquid is gone and the tofu is covered with a crispy coating of yeast. Enjoy!

VEGAN BACON

Vegan Bacon image

If you were to use this in a BLT sandwich and replaced the bacon with it, you would never know the difference! My kids are bacon lovers, but now they prefer this. It doesn't look quite like bacon but it tastes the same.

Provided by Elcowgirl

Categories     Breakfast

Time 25m

Yield 3-4 serving(s)

Number Of Ingredients 5

1 lb firm tofu, cut into strips shaped like bacon
2 tablespoons nutritional yeast
2 tablespoons soya sauce
1 teaspoon liquid smoke
1 tablespoon oil, something neutral, not olive oil

Steps:

  • Fry tofu strips on low heat until they are crispy on the outside. The best way to do this is to lay them in the pan in the oil and let them sit for at least 10 minutes, simmering. They should turn easily after that.
  • Turn them and give them another 10 minutes on the other side.
  • Mix the soya sauce with the liquid smoke first, then take the pan off the heat.
  • Pour the liquid smoke/soya sauce into the pan and stir the tofu so all sides are coated.
  • Sprinkle the yeast over all, stir some more, over the heat, until the liquid is gone and the tofu is covered with sticky yeast.

VEGAN COCONUT "BACON"

Vegan Coconut

I'm enjoying trying different kinds of vegan "bacon". Here's one that's just off the beaten path. Make sure to use large pieces of coconut flakes, not shredded coconut, for this soy protein-free vegan bacon recipe.

Provided by Sharon123

Categories     Coconut

Time 1h40m

Yield 2 cups

Number Of Ingredients 7

1 cup dried coconut flakes
1/4 cup soy sauce
2 tablespoons maple syrup
1 teaspoon balsamic vinegar
2 tablespoons canola oil
1 teaspoon pepper, freshly ground
1 teaspoon liquid smoke (or 1/4 tsp hickory smoke powder)

Steps:

  • Mix all ingredients together except coconut.
  • Add coconut and marinate for 1 hour.
  • Heat oven to 350° and bake on a pan lined with parchment paper for about 30-40 minutes, until brown and crispy, stirring every ten minutes to prevent burning.

VEGAN CASSAVA BACON

Vegan Cassava Bacon image

Serve this bacon as part of a vegan brunch feast, or pile onto English muffins with a tofu egg and toppings for the best breakfast sandwich ever.

Provided by Lauren Toyota

Number Of Ingredients 6

1/4 cup low-sodium tamari or soy sauce
2 tablespoons maple syrup
1 tablespoon liquid smoke
1 teaspoon smoked paprika
1 cassava root
1 to 2 tablespoons vegetable oil, for frying

Steps:

  • Combine all of the marinade ingredients together in a bowl or wide dish with a whisk or fork.
  • Peel the tough brown waxy skin from the cassava and discard. Your cassava root should be firm and white, not gray or mushy. That is a sign of spoilage.
  • Using the peeler or a mandolin, shave off thin strips of cassava about 1 1/4 inches wide to resemble strip bacon.
  • Marinate the strips for 15 minutes.
  • Heat a nonstick pan over medium-low heat with a small amount of oil. When the pan is hot, place 4 or 5 strips into the pan. Cook for 3 to 4 minutes on the first side and 2 to 3 minutes after flipped. You may need to lower the heat so the pan doesn't get too hot and burn the bacon. Once or twice while frying a batch, add a little bit of the excess marinade to help caramelize the bacon. Also add more oil to the pan before frying each batch.
  • Remove the fried strips from the pan and set on a plate. Placing the strips on paper towels isn't advised, as they will stick.
  • The bacon lasts up to 2 weeks stored in an airtight container at room temperature or in the fridge. Warm up leftover strips in the oven or in a pan on the stove before serving with recipes.
