This tasty traditional Arroz con Dulce recipe is made with creamy rice, warm spices, coconut milk, raisins, coconut, and sweet brown sugar! Puerto Rican rice pudding is an amazing way to switch up dessert, this creamy, rich rice is packed with so much flavor!

1 ½ cups medium grain white rice ((see notes))
4 cups water ((+ more to soak the rice))
½ Tbsp ginger ((about 1-inch peeled, sliced fresh ginger))
2 whole cinnamon sticks
6 whole cloves
1 tsp salt
13.5 oz coconut milk
½ cup light brown sugar
½ cup raisins ((or golden raisins, or a combination of both regular and sultanas))
¼ cup shredded sweetened coconut
ground cinnamon ((optional garnish))

Steps:

  • Place the rice in a medium-sized mixing bowl and cover with cool water, leaving about 2 inches of excess water over the rice. Set aside for an hour to soak.
  • Add the 4 cups water to a saucepan with ginger, cinnamon sticks, cloves, and salt then bring to a boil. Reduce heat and simmer for 10-15 minutes then remove from heat and allow to steep while your rice finishes soaking.
  • Once your rice is fully soaked, drain off water and rinse under cool tap water.
  • Use a slotted spoon to remove the ginger and whole spices from the boiled water. Add coconut milk and heat to a boil.
  • When the water reaches a boil, stir in the drained rice, light brown sugar, raisins, and coconut then reduce heat to a simmer. Cover and cook for 15-20 minutes until rice is tender, stirring occasionally to prevent sticking to your pan.
  • Transfer the cooked rice into your 9x13 baking pan and spread in an even layer for quick cooling. Once cooled to room temperature, finish chilling in the refrigerator.
  • Serve cold, topped with a sprinkle of ground cinnamon.

2 cups short-grain rice
13 ounces coconut milk
8 ounces coconut cream
2 cups brown sugar
4 oz raisins
2 inches fresh ginger
1/4 cup clove
3 big cinnamon sticks
1/4 teaspoon salt
6 cups water

Steps:

  • Soak rice for 8 hours.
  • In a medium pot bring water to boil together with ginger cut in pieces, cloves and cinnamon for 10 minutes. Drain.
  • In a large pot, Pour the drained water. Add coconut milk, coconut cream, sugar and salt. Stir.
  • Add rice and raisins. Bring to boil. Stir occasionally until is cooked.
  • Serve hot into mold and allow it to cool to room temperature.
  • Refigerate and enjoy!

2 cups white rice
2 cups water
1 (12 ounce) can evaporated milk
1 (14 ounce) can condensed milk
1 (14 ounce) can coconut milk
1/2 cup shredded coconut
2 tablespoons vanilla extract
1 pinch nutmeg
1 teaspoon ginger
1 pinch salt
1/2 cup raisins
6 cloves
1 pinch cinnamon
1 cinnamon stick

Steps:

  • First it is recommended that you soak the rice in water for at least 3 hours before cooking so that it can soften up. After it has been soaking for a bit remove the water and begin to cook it.
  • In a heavy saucepan over med heat, bring the rice and water to a boil.
  • Lower the heat to simmer (LOW), add the cloves and cinnamon stick. Stir.
  • Let this cook (uncovered) until the water has evaporated ( 8 - 15 minutes ).
  • Add the remaining ingredients (except the pinch of cinnamon), stir gently once, and again let simmer (uncovered) until all liquid has evaporated.
  • Transfer into a casserole or serving dish, garnish with the pinch of cinnamon (sprinkle on top) and refrigerate.
  • Keep refrigerated. May be served at room temperature.

In this recipe, sweetened grains are cooked until creamy with almond milk, raisins, star anise, vanilla and flaky Ceylon cinnamon, which is commonly used in Mexican cooking. (Ceylon cinnamon is preferred to the other varieties for it's sweet, delicate flavor.) This warm and comforting dessert is easily pulled together with ingredients likely already in your pantry.

1 cup white short-grain or arborio rice, rinsed
5 1/2 cups unsweetened almond milk
1/2 cup raw turbinado sugar or light brown sugar
1 Ceylon cinnamon stick, whole
1 star anise
1/4 teaspoon vanilla extract
Pinch of salt
1/3 cup raisins, tightly packed
2 teaspoons ground cinnamon, preferably Ceylon, for garnish

Steps:

  • Add the rice to a small pot with the almond milk, sugar, cinnamon stick, star anise, vanilla and a pinch of salt.
  • Heat over medium until it begins to simmer, then reduce to medium-low, stirring occasionally to make sure the rice does not stick to the bottom of the pot.
  • Cook for a total of 20 to 25 minutes if using short grain white rice, or 35 to 40 minutes if using arborio. The rice should be tender and look creamy and thick.
  • In the last 5 minutes of cooking, when most of the liquid has absorbed, remove the cinnamon stick and star anise, and add the raisins.
  • Garnish with a sprinkle of ground cinnamon, and serve immediately.
