This is a vegan version of an easy family favorite. Always a hit, even with picky eaters. Especially nice with whipped cream, ice cream, or Tofutti®.

4 apples, sliced
¾ cup packed brown sugar
¾ cup self-rising flour
½ cup reduced-fat margarine (such as Light Parkay®)
½ cup rolled oats
½ cup chopped walnuts
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Spread apple slices into an 8-inch square pan.
  • Mix brown sugar, flour, margarine, oats, walnuts, and cinnamon together in a bowl. Sprinkle topping over the apples.
  • Bake in the preheated oven until topping is golden brown and apples are tender, about 30 minutes.

This vegan apple crisp is totally divine served warm with some vegan cream or vegan vanilla ice cream. It's deliciously flavorful and perfect for the holidays.

8 cups Granny Smith Apples ((2.2lb/1kg) Peeled and Cubed )
1/2 cup Light Brown Sugar ((100g))
1/4 cup All Purpose Flour ((31g))
1 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/4 tsp Salt
1 Tbsp Lemon Juice
1 tsp Vanilla Extract
1 cup All Purpose Flour ((125g))
1 1/2 cups Rolled Oats ((150g))
1 cup Light Brown Sugar ((200g))
1 tsp Ground Cinnamon
3/4 cup Vegan Butter ((170g) measured then melted)
1 tsp Vanilla Extract

Steps:

  • Peel and cube the apple and add to a mixing bowl with the brown sugar, all purpose flour, cinnamon, nutmeg, salt, lemon juice and vanilla extract and toss together so that all the apple pieces are coated.
  • Transfer the apple mix to a 9x13 dish sprayed with non-stick spray and smooth down.
  • Preheat the oven to 350°F (180°C).
  • Prepare the topping. Add the all purpose flour, rolled oats, brown sugar and cinnamon to the mixing bowl and mix together. Then add in the melted vegan butter and vanilla and stir in.
  • Use your fingers to spread the topping over the apple layer, crumbling it with your fingers until it is evenly spread across the top.
  • Place into the oven and bake for 50 minutes until the top is nicely golden brown and the apple mix is bubbling up the sides.
  • Remove from the oven and allow to cool for 10 minutes before serving.
  • Serve with vegan ice cream or vegan whipped cream.

Coconut oil stands in for butter to make a vegan version of a classic, comforting apple crisp laced with cinnamon and tart dried cherries.

2 cups old-fashioned rolled oats, divided
1/2 cup light-brown sugar
1/4 teaspoon coarse salt
6 tablespoons extra-virgin coconut oil
2 tablespoons water
2 pounds Granny Smith apples (4-5), peeled, cored, and cut into 1/2-inch slices
1/4 cup light-brown sugar
1/4 cup dried cherries
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. Pulse 1 cup oats in a food processor until coarsely ground. Transfer to a bowl and add remaining 1 cup oats, brown sugar, salt, coconut oil and water. Stir until combined.
  • Toss together all apple filling ingredients in a bowl and transfer to an 8-inch square baking dish. Sprinkle with topping. Cover with parchment-lined foil and bake 30 minutes. Remove foil and continue baking until apples are tender and topping is golden brown, about 30 minutes more. Let cool slightly before serving.
