As someone who is lactose intolerant and loves Italian cream-based sauces, I have searched high and low for a decent, easy to make recipe for vegan/non-dairy alfredo sauce. I have experimented with as many of the ones I could find on the internet and have finally come close. I have used this on pasta tossed with sauteed veggies, and as a white sauce (bechamel sauce) in lasagna. It doesn't reheat well in the microwave, but will re-heat on the stove on low for 5 minutes. There are many variations out there but I am pretty happy with this one. You can add spices to change the flavor.

1 cup raw, unsalted cashews
1 ½ cups water
1 cup unsweetened almond milk
¼ cup water, or as needed
2 tablespoons minced fresh garlic
2 tablespoons nutritional yeast
1 tablespoon lemon juice, or more to taste
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper

Steps:

  • Soak cashews in 1 1/2 cups water until softened in a bowl, at least 20 minutes.
  • Drain water; add almond milk. Blend mixture in an electric blender or food processor until smooth, 30 seconds to 1 minute. Add water until sauce is slightly thinner than you want it for the final product, as it thickens when heated. Add garlic, nutritional yeast, lemon juice, salt, and pepper; blend until smooth.
  • Pour mixture into a saucepan. Heat on medium-low heat, stirring occasionally until heated through and desired thickness is achieved, about 5 minutes. You can add additional water or almond milk if sauce becomes too thick.

1 small yellow onion, finely chopped
3 cloves garlic, minced
1 head cauliflower, stemmed and chopped
1 ½ cups vegetable stock
2 tablespoons chopped fresh basil
1 teaspoon dried rosemary
1 (16 ounce) package whole wheat rotini pasta
½ cup almond milk
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a deep pan over medium heat. Cook and stir onion until soft, about 5 minutes. Add garlic and cook for 2 minutes more. Add cauliflower, vegetable stock, basil, and rosemary. Cover pan and cook until cauliflower is soft, 15 to 20 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes.
  • Pour cauliflower mixture and almond milk into a food processor. Puree until smooth. Season with salt and pepper. Drain pasta and ladle cauliflower sauce on top to serve.

I got this recipe from "The Vegetarian Low-Carb Diet" book by Rose Elliott. Description from book: Cyndi's Vegan Alfredo Sauce, which I've adapted just slightly by using almonds instead of cashews, is wonderful: really creamy and delicious, and packed with protein. It's great with vegetable 'pasta' and I also like it with Roasted Vegetables and Roasted Cauliflower with Lemon. You can use it whenever you want to add some extra protein to a meal. If you can get daikon (a long, white radish), it makes lovely 'fettuccine' and is very low in carbs - but you can also use courgettes, turnips or kohlrabi, for varying, slightly higher carb counts.

18 ounces daikon radishes
olive oil
9 ounces firm tofu, drained and broken into rough pieces
1 garlic clove, peeled and crushed
2 ounces sliced almonds
4 sprigs basil
2 tablespoons lemon juice
3 1/2-5 fluid ounces water
salt & freshly ground black pepper

Steps:

  • Start with the sauce. Put the tofu and garlic into a food processor and whiz until smooth. Then add the almonds and basil and whiz again until as smooth as possible.
  • Add the lemon juice and enough of the water - or more - to got a creamy consistency. Season to taste with salt and pepper, transfer to a saucepan and set aside.
  • Bring half a saucepan of water to the boil. Meanwhile, cut the daikon into long, thin ribbons by running a swivel potato down the length.
  • Put the ribbons into the boiling water, bring back to the boil and cook for about 4 minutes, or until al dente. Drain immediately and return to the pan.
  • While the daikon is cooking, gently reheat the sauce.
  • To serve, either add the sauce to the daikon and mix well, or toss, the daikon in a little olive oil, serve out onto plates and pour the creamy sauce over the top.

Came by this on veganyumyum.com - and it lives up to the website's name. This really is a quick one, not fancy by any means, but I think it's tastes pretty fantastic. Apart from a bit of fresh lemon juice and garlic, these items are pantry staples for most vegetarians or vegans. You want to be careful not to overcook the sauce. I found the flavours were better raw, much more mellow when I had cooked it with some leftover pasta. So I'd recommend really gently heating the sauce. If you're looking for a really traditional "cheesy" sort of flavour, keep in mind this won't be exactly it, but it is savory and cheese like....I guess as cheesy as you get vegan wise. Well, you know what I mean. Enjoy!

1 cup soymilk (I have subbed almond milk with no problems)
1/2 cup raw cashews, unsalted
1/4 cup nutritional yeast
3 tablespoons Braggs liquid aminos (or tamari or soy sauce)
2 tablespoons Earth Balance margarine

1 tablespoon fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon paprika (smoked is recommended if you have some)

Steps:

  • Add all the ingredients to a blender and blend until smooth. I used my "Magic Bullet" and it worked just fine. Depending on your blender or processor, you might have some cashew lumps, which you can always strain out if you want to.
  • Heat gently and toss with steamed broccoli or cooked pasta -- or anything you like!

1 tablespoon mellow white vegan miso

1 pinch ground nutmeg
1 teaspoon olive oil
5 cloves garlic, minced
3 pounds sliced fresh mushrooms
1 tablespoon water, or more as needed
1 teaspoon soy sauce
1 pound fettucine pasta, uncooked

Steps:

  • Combine cashews and 1 cup soy milk in a blender; blend until smooth. Add remaining soy milk, 1 cup water, parsley, nutritional yeast, miso, lemon juice, garlic powder, and nutmeg; blend until smooth. Set sauce aside.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
  • While the pasta is cooking, heat oil in a large skillet over medium heat. Add mushrooms and garlic; saute until mushrooms are soft and golden brown, 8 to 10 minutes, adding small amounts of water if necessary to keep mushrooms from sticking. Stir in soy sauce.
  • Drain pasta and return it to the pot. Add sauce and heat over low heat until sauce is heated through, 2 to 3 minutes. Serve topped with mushrooms.

Steps:

  • Place cashews, 1/2 cup water, garlic, nutritional yeast, onion powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper into the pitcher of a high-speed blender. Puree until completely blended, 1-2 minutes. The sauce should be the consistency of eggnog, buttermilk, or a thick heavy whipping cream. Healthiest alternative to alfredo and it's easy to make. Just blend ingredients together and heat. I adapted this from my Creamy Vegan Pesto Pasta with Broccoli (Recipe #241451) to a simpler recipe. Tried it today with my Walnut Meatballs (Recipe #239125) and it tasted terrific! My husband has always been an alfredo lover and we both love the added taste of pesto in this creamy sauce (I don't think it would taste as good without the pesto). Hard to believe it's as good for you as it is! My husband also likes to sprinkle some parmesean cheese in the sauce. Though not vegan anymore it does taste great with it still being much healthier than most creamy sauces.

  • Add all ingredients except Soy Milk in a blender and mix until smooth.

VEGAN TARRAGON ALFREDO SAUCE

This is quite different from regular Alfredo sauces because it has no dairy in it. I added some fresh tarragon right out of my garden into this sauce and it really gave it a wonderful flavor.

1 pound(s) fettucini or other long noodle pasta
1 cup(s) ground raw cashews
1 cup(s) non-dairy unsweetened milk
2/3 cup(s) vegan sour cream
1/2 cup(s) vegan cream cheese
1/2 cup(s) nutritional yeast
1 teaspoon(s) garlic powder
1/2 teaspoon(s) sea salt
- fresh ground pepper to taste
4-6 - sprigs of fresh tarragon, cut up small
4-8 large button mushrooms, medium chopped

Steps:

  • Get a large pot of water boiling for the Pasta.
  • Grind up your cashews until fine. In a blender add the cashews , milk, sour cream, cream cheese, nutritional yeast, garlic powder, salt, pepper and tarragon.
  • Process and put in a sauce pan. Cut up the mushrooms and saute in some oil with some more tarragon. Set aside.
  • Heat up the Tarragon Alfredo sauce on low. Cook your pasta according to the directions.
  • Put the pasta in a large bowl, pour some of the Alfredo sauce over it. Sprinkle with a little more fresh ground black pepper. Top with the mushrooms and sprinkle with a little tarragon for garnish.
  • Add some of your favourite hard cheese on top. Serve with garlic bread and a glass of white wine.
  • Enjoy
