3 lbs veal shoulder, cubed
1/2 cup flour
1 teaspoon salt
1/2 teaspoon fresh ground pepper
4 tablespoons olive oil
1 large onion, chopped
1 garlic clove, minced
1 cup dry white wine
3 tablespoons brandy
2 large tomatoes, peeled and chopped
1 bay leaf
2 sprigs parsley
1 teaspoon leaves thyme, crumbled
1 lb mushroom
4 ounces chopped truffles
1/4 cup chopped parsley

Steps:

  • Coat veal shoulder with flour mixed with salt and pepper.
  • Brown in hot oil in a large skillet. Remove veal to casserole pot or dish.
  • Saute onion and garlic in the same skillet until it's golden. Deglaxe the pan with white wine and Brandy.
  • Stir in chopped tomatoes and add to casserole with bay leaf, 2 sprigs parsley and thyme.
  • Cover casserole.
  • Bake in moderate oven at 350 degrees for 45 minutes, or until veal is almost tender.
  • Add mushroom caps and bake 10 minutes longer, or until the veal is tender.
  • Garnish with chopped truffles and chopped parsley.

2 1/2 pounds well trimmed veal shoulder, cut in 2-inch pieces
Salt and black pepper
1/2 cup olive oil, or as needed
1/2 pound mushrooms, coarsely chopped
12 to 15 small white onions
4 tablespoons unsalted butter
1 1/2 tablespoons flour
2 cloves garlic, minced
3 shallots, minced
1 cup dry white wine
1 cup hot veal stock or hot water
3 sprigs parsley
1 bay leaf
Pinch of leaf thyme
2 large tomatoes, peeled, seeded and diced, or 2 canned tomatoes, well drained and diced
1 or 2 teaspoons tomato puree (not paste), if needed
About 12 slices toasted round of French bread rubbed with garlic
Minced parsley for garnish

Steps:

  • Dry veal pieces with paper towel, then sprinkle lightly on all sides with salt and pepper.
  • Heat olive oil in heavy Dutch oven or casserole. When it begins to smoke add layer of veal. Pieces should not touch each other. Brown over moderate heat, turning pieces so they brown evenly. When first batch is brown, remove and reserve. Add second batch and continue until brown. Add more oil if needed.
  • Add mushrooms to pan and brown quickly. When juice subsides, remove mushrooms. Add onions to pan and stir in hot fat until golden brown on all sides. Remove from pan.
  • Pour oil from pot leaving about 2 tablespoons. Return veal to pan and add butter. Stir over low heat until butter melts. Sprinkle veal with flour. Saute over moderate heat and stir with wooden spoon until flour is absorbed.
  • Add garlic, shallots, wine, stock or water, parsley, bay leaf, thyme and tomatoes. Bring to boil. Cover pan, reduce heat and simmer gently but steadily for about 45 minutes or until meat is almost entirely tender. Add more wine and stock if needed.
  • Return mushrooms and onions to pan and cook for 30 minutes or until meat and onion are tender. Adjust seasonings, remove bay leaf and parsley, and skim fat from surface of sauce. If sauce seems thin, or if color needs brightening, stir in tomato puree and simmer for 5 minutes.
  • Turn into serving dish and top with minced parsley and toasted French bread. Boiled potatoes, green noodles or rice are optional garnishes.

In the middle of June 1800, Napoleon Bonaparte's troops were engaged in battle with Austrian forces near the small village of Marengo in northern Italy. The battle was fierce, or so the legend has it, and Napoleon, of course, emerged victorious. And hungry. He asked his chef to prepare a meal quickly and the cook scoured the countryside looking for foods to prepare. He scurried around and discovered a chicken, olive oil, tomatoes, herbs, eggs and crawfish. Within minutes, a fire was started and the chef prepared a quick sauté of the chicken with tomatoes, oil and herbs. It is said that he garnished the dish before serving it with a fried egg and crawfish. In my version, the chicken, cut into serving pieces, is simply browned in a little olive oil (I add a touch of butter to give it flavor) on both sides. I then prefer to add sliced mushrooms (there are those who declare that truffles were among the original ingredients), seasonings, wine, tomatoes and parsley and cook covered until done, about 10 minutes longer.

1 3-pound chicken cut into serving pieces
Salt to taste, if desired
Freshly ground pepper, to taste
2 tablespoons butter
2 tablespoons olive oil
1 1/2 cups thinly sliced mushrooms (about 1/2 pound)
1/2 cup finely chopped onion
1/2 teaspoon finely minced garlic
1 bay leaf
2 sprigs fresh thyme or 1/2 teaspoon dried
1/2 cup dry white wine
2 cups cored and cubed red ripe tomatoes, or use canned tomatoes
1/4 cup tomato paste
1/2 cup chicken broth
2 sprigs fresh parsley

Steps:

  • Sprinkle the chicken with salt and pepper to taste.
  • Heat the butter and oil in a heavy skillet over medium-high heat. Add the chicken pieces skin-side down. Cook until golden brown on one side, about five minutes. Turn the pieces and cook on the other side about two minutes. Pour off the fat from the skillet.
  • Scatter the mushrooms over the chicken. Stir to distribute. Add the onion, garlic, bay leaf and thyme and cook about 5 minutes.
  • Add the wine and scrape the bottom of the skillet with a wooden spoon to dissolve the brown particles that cling to the bottom of the pan. Add the tomatoes, tomato paste, chicken broth and parsley. Bring to the boil. Cover and cook 10 minutes. Serve with rice and a tossed green salad.

4 Cornish hens
Flour for dredging
6 tablespoons safflower oil
4 stalks celery, chopped
1 medium onion, quartered
4 carrots, chopped
Cornish hen backs, wing tips and necks
Coarse salt and freshly ground pepper
Bouquet garni (parsley, thyme and bay leaf tied in cheesecloth)
25 pearl onions, peeled
2 tablespoons olive oil
10 strips bacon, chopped
4 tablespoons unsalted butter
1 head savoy cabbage (about 1 1/2 pounds), sliced thinly
4 tablespoons sherry vinegar
4 tablespoons creme fraiche
4 shallots, minced
1/2 pound medium white mushrooms, sliced
8 shiitake mushrooms, sliced
1/2 pound cooked tongue, sliced in strips
3 cups fresh peas
10 baby carrots, parboiled
1 egg yolk
1 1/2 to 2 pounds puff pastry

Steps:

  • Cut the Cornish hens into eight pieces, reserving the wing tips, necks and backs for stock. Pat pieces dry with paper towels and dredge them lightly with flour. Fry them until golden in the oil and set aside.
  • To prepare the stock, combine the celery, onion, carrots, hen backs, wing tips and necks in a stockpot. Add eight cups cold water, salt, pepper and bouquet garni. Bring to a boil, turn down and let simmer while you prepare the remaining ingredients for the pies.
  • Preheat oven to 350 degrees. Roast the pearl onions in a pan with the olive oil until tender (about 20 minutes). Meanwhile, in a large, heavy frying pan, brown the bacon, remove with a slotted spoon and set aside. Pour the fat from the pan. Add two tablespoons of the butter and when it is melted saute the cabbage for a minute or two. Remove from the pan and set aside. Stir in the sherry vinegar and the creme fraiche.
  • Melt the remaining butter in the saucepan and gently saute the shallots and the mushrooms.
  • Line two eight-cup pie dishes or eight two-cup pie dishes with the cabbage. Add hen pieces, tongue, mushrooms, onions, peas and carrots. Season with salt and pepper. Add a quarter-inch of stock. Brush the rims of the pie dishes with the egg yolk. Roll out pastry one-eighth inch thick and place on top, brushing egg yolk. Bake 35 to 40 minutes.
