1/2 cup shortening
1-2/3 cups sugar
3 large egg yolks, room temperature
1 large egg, room temperature
1/2 teaspoon vanilla extract
2-1/2 cups cake flour
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1-1/4 cups buttermilk
FILLING:
1/2 cup sugar
3 tablespoons cornstarch
1/2 teaspoon salt
1 can (8 ounces) crushed pineapple
1 tablespoon butter
1 teaspoon lemon juice
SEVEN-MINUTE FROSTING:
1-1/2 cups sugar
2 large egg whites, room temperature
1/3 cup water
1/4 teaspoon cream of tartar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add egg yolks and egg, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, salt, baking powder and baking soda; add to the creamed mixture alternately with buttermilk, beating well after each addition. , Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. , In a large saucepan, combine the sugar, cornstarch and salt. Drain pineapple, reserving juice. Add pineapple to pan. Add water to juice to measure 3/4 cup; pour into pan and mix well. Bring to a boil over medium heat; cook and stir for 2 minutes. Remove from the heat. Add butter and lemon juice. Cool completely. , For frosting, in a heavy saucepan, combine the sugar, egg whites, water and cream of tartar over low heat. With a hand mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160°, about 8-10 minutes. , Pour into a large bowl; add vanilla. Beat on high until frosting forms stiff peaks, about 7 minutes; set frosting aside., Set aside a third of the filling. Spread remaining filling between cake layers. Spread reserved filling in a 4-in. circle in the center of top layer. Frost the sides of cake and around the filling on top.

½ cup canola oil ((or neutral tasting vegetable oil))
¼ cup sour cream
1 ½ cups granulated sugar ((300 grams))
3 large eggs
2 teaspoons vanilla extract
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
2 ½ cups all purpose flour ((fluffed -- about 325 grams))
2 cups crushed pineapple with juice ((a 540ml or 19oz can))
sweetened whipped cream for serving

Steps:

  • Preheat oven to 350 degrees F and lightly grease a 9x13" baking dish with non-stick spray.
  • In a large bowl, whisk together the oil, sour cream and sugar.
  • Add eggs and vanilla and stir until smooth.
  • Whisk in baking powder, baking soda and salt until completely combined.
  • Stir in flour until just incorporated, scraping down the sides of the bowl as necessary. Slowly stir in pineapple with a spatula.

2 cups white sugar
2 eggs
2 teaspoons baking soda
1 teaspoon vanilla extract
1 (20 ounce) can crushed pineapple with juice
1 (8 ounce) package cream cheese
½ cup butter
1 ½ cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish.

for the pineapple:
2 ½ cups fresh pineapple - chopped
½ cup flour
1 tsp. cinnamon
for the cake:
2 cups flour
1 ½ tsp. baking powder
¼ tsp. salt
1/3 cup canola oil
1 cup sugar
1 tsp. nielsen massey pure vanilla extract
½ cup milk
2 eggs
for the topping:
1 tsp. madagascar bourbon pure vanilla powder extract
1½ tbs. butter
2 tbs. flour
1 tbs. brown sugar
1 tsp. cinnamon

Steps:

  • 1. For the Pineapple: Place the pineapple in a bowl and add the flour and the cinnamon and toss. Let this set while preparing the cake batter. For the Cake: Combine flour, baking powder and salt in a large bowl; set aside. In a large bowl, using and electric mixer combine the sugar, eggs, Nielsen Massey Vanilla and the canola oil. At low speed, beat in the flour mixture, alternately with the milk. Beat just until smooth. Gently, add the pineapple to the batter and fold over until incorporated. Butter a pie dish. Add the batter. For the Topping: Combine the cinnamon, Madagascar Bourbon Pure Vanilla PowderExtract, butter, flour and brown sugar. Crumble with your fingers and top the cake with the crumble.   • Prepare cake batter according to package directions. Beat in oranges until blended.
