2 cups cold 2% milk
1 package (3.4 ounces) instant vanilla or French vanilla pudding mix
1 cup whipped topping
1 pint fresh raspberries

Steps:

  • In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in 1 cup whipped topping. Spoon a third of the pudding into six parfait glasses. , Set aside six raspberries for garnish; divide half of the remaining berries over pudding. Repeat layers. Top with remaining pudding and garnish with the reserved berries.

5 ounces blueberries
5 ounces blackberries
5 ounces strawberries, chopped
3 tablespoons honey
1 teaspoon vanilla extract
2 cups plain Greek yogurt
3 tablespoons honey
1 vanilla bean, split and "caviar" scraped out

Steps:

  • For the fruit: Combine the blueberries, blackberries, strawberries, honey and vanilla extract in a bowl and stir. Let sit for at least 10 minutes.
  • For the yogurt: Mix up the yogurt, honey and vanilla in a bowl.
  • Layer some of the syrupy fruit on the bottom of 4 small mason jars, then top with a layer of yogurt. Repeat the layers. Serve immediately or chill until ready to serve.

1 1/2 pounds frozen unsweetend cherries, thawed, juices reserved
1/2 cup sugar
For chocolate parfait
7 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2 large eggs
3 large egg yolks
1/3 cup sugar
1 1/2 cups chilled whipping cream
For vanilla parfait
2 large eggs
3 large egg yolks
1/3 cup sugar
1 1/2 cup chilled whipped cream
1 vanilla bean, split lenghtwise

Steps:

  • Make cherry sauce:
  • Stir cheryy juices and sugar in medium saucepan over medium heat until sugar dissolves. Increase heat; boil 5 minutes. Add cherries; return to boil. Refrigerate until cold. (Can be made 3 days ahead. Cover; keep chilled.)
  • Make chocolate parfait:
  • Place chocolate in medium metal bowl set over saucepan of barely simmering water (do not let bottom of bowl touch water). Whisk constantly until very thick and thermometer registers 160°F, about 5 minutes.
  • Beat cream in medium bowl to soft peaks. Gently fold chocolate, then cream into egg mixture. Spoon chocolate parfait into 8 pilsner glasses or goblets. Freeze.
  • Make vanilla parfait:
  • Combine eggs yolk and sugar in small metal bowl. Set over saucepan of barely simmering water (do not allow bottom of bowl to touch water.) Whisk constantly until mixture is very thick and thermometer registers 160°F, about 5 minutes. Transfer mixture to large bowl. Beat with electric mixture until cool and very fluffy, about 5 minutes.
  • Place cream in medium bowl. Scrape seeds from vanilla bean; beat to soft peaks. Fold cream into egg mixture. spoon vanilla parfait atop chocolate parfait. Cover; freeze 4 hours or up to 3 days.
  • Spoon cherry sauce atop parfaits.

These luscious, richly fragrant vanilla pudding custard parfaits are made with real vanilla bean, a hint of brandy, fresh seasonal fruits, lemony herbs from the garden, prepared mini shortcakes and fresh whipped cream--they're extraordinary! And, so simple to make (uses a box of vanilla pudding mix, not instant). If you are a vanilla lover as I am, then this is most definitely for you! Better make extra, as you'll be longing for more! :) These parfaits are best eaten while the pudding custard is still warm, but they're good the next day, too. Tip: I make the fruit salad in the morning or a day ahead, and make the vanilla pudding custard right before serving. Enjoy!!

1 (8 ounce) package vanilla pudding mix (not instant)
3 1/2 cups whole milk
1 vanilla bean, split and scraped
1/2 teaspoon pure vanilla extract
3 tablespoons brandy (or cognac)
about 3 cups fresh fruit (I used blackberries, blueberries, apricots, strawberries, and bananas)
1 tablespoon lemon juice
1/4 cup sugar (to taste)
1 tablespoon finely minced fresh lemon verbena leaf
1 tablespoon finely chopped fresh lemon balm leaves
1/2 pint whipping cream
1/2 teaspoon vanilla extract
3 tablespoons sugar
8 prepared mini shortcakes

Steps:

  • Make the fruit salad: Combine the fresh fruits in a bowl with the sugar, lemon juice, lemon verbena and lemon balm. Cover and refrigerate.
  • Make the Vanilla Pudding Custard, about 1 hour before serving: In a microwave safe 2-quart bowl, whisk together the pudding mix, milk, brandy, vanilla extract and scraped vanilla bean and seeds. Cook in the microwave on high heat for 6-8 minutes, whisking every two minutes, until thickened.
  • Make the Whipped Cream: Whip the cream until soft peaks form; add the vanilla extract and sugar. Whip until stiff peaks form.
  • Assemble the parfaits: Place a mini shortcake in the bottom of each individual dessert or parfait glass (I used mini trifle glasses). Ladle the warm vanilla pudding custard over the shortcakes. Spoon the fruit salad over, and top with whipped cream. Garnish tops of parfaits with fresh sprigs of lemon verbena, lemon balm, or fresh fruit.

1/2 cup MAXWELL HOUSE INTERNATIONAL French Vanilla, divided
1 pkg. (4-serving size) JELL-O Vanilla Flavor Instant Pudding

Steps:

This is something my daughter and greatest inspiration and I created together... this child, adores mocha, as so does mommy!! Something about the flavor of coffee and chocolate!!! This recipe is simple, easy, light, creamy and totally delicious!!! We served them on New Year's Eve and everyone loved them!! My mom had a double portion (shhhh):-). I hope you enjoy them as much as we do!!

6 slice(s) poundcake
1 package(s) vanilla pudding
1/3 cup(s) kahlua *or coffee liquor*
2 cup(s) cool whip, defrosted
3 tablespoon(s) chocolate syrup
2 tablespoon(s) slivered almonds toasted lightly
1/2 tablespoon(s) mini milk chocolate chips
1- 1 1/2 tablespoon(s) confectioners' sugar
2 teaspoon(s) cocoa powder
2 teaspoon(s) espresso powder, instant

Steps:

  • Slice off the required amounts of poundcake and cube small, place on a plate and set aside. In a small bowl, prepare your vanilla pudding using the instructions on the package. Set aside. Using a small saute pan, place on stove at medium high heat. Add your slivered almonds and toast for about 1-2 minutes till edges are lightly starting to toast. Turn off heat and set aside.
  • Layering: Add your cubed cake cubes to the bottom of your parfait glasses. Drizzle with Kahlua, and a drizzle of chocolate syrup. Next add your vanilla pudding to almost to the top of each parfait glass. Set aside.
  • In a bowl add your defrosted cool whip, sprinkle in the confectioner's sugar, the cocoa and the espresso powder. Mix till all thoroughly incorporated. Place in a pastry bag (if desired), or just spoon topping ontop of parfaits. Place a mini chocolate chip in center of each parfaits. Decorate sides with slivered almonds standing on end. When you serve this, whatch the smile of your guests, that is the best thank you, a cook can ever have!!!
