Cinnamon Cocoa Meringues with Vanilla Ice Cream and Cinnamon Chocolate Sauce image

2 large egg whites
a pinch of cream of tartar
1/2 cup sugar
2 teaspoons unsweetened cocoa powder
1/2 teaspoon cinnamon
vanilla ice cream
cinnamon chocolate sauce
For the sauce:
3/4 cup heavy cream
1/3 cup firmly packed light brown sugar
3 ounces bittersweet chocolate, chopped
3 ounces unsweetened chocolate, chopped
1/2 stick (1/4cup) unsalted butter, softened
1/2 teaspoon cinnamon

Steps:

  • Make the sauce:
  • In a small heavy saucepan combine the cream and the brown sugar, bring the mixture to a boil over moderately high heat, whisking occasionally, and boil it, whisking, until the brown sugar is dissolved. Remove the pan from the heat, add the chocolates, and whisk the mixture until they are melted. Whisk in the butter and the cinnamon, whisking until the sauce is smooth, and let the sauce cool slightly. The sauce may be made 1 week in advance and kept covered and chilled. Reheat the sauce over very low heat, stirring occasionally, until it is warm. Makes about 1 1/2 cups.
  • Make the meringues:
  • In a bowl with an electric mixer beat the egg whites until they are foamy, add the cream of tartar, and beat the whites until they hold soft peaks. Add the sugar, 1 tablespoon at a time, beating, and beat the meringue until it holds stiff peaks. Sift the cocoa powder and the cinnamon over the meringue and fold them in gently but thoroughly. Transfer the mixture to a pastry bag fitted with a 1/2-inch star tip and pipe it into 5-inch rounds on baking sheets lined with parchment paper. Bake the meringues in the middle of a preheated 250°F. oven for 1 1/2 hours and let them cool on the sheets. The meringues may be made 10 days in advance and kept, separated with sheets of wax paper, in an airtight container. Arrange 1 meringue on each of 2 plates and top each meringue with a scoop of the ice cream and some of the cinnamon chocolate sauce.

2 cups plain yogurt
1 cup sugar
2 cups heavy cream
1/2 teaspoon vanilla essence
3 egg whites
Rind of 1 orange, finely julienned and blanched
Meringues
1/2 cups mixed berried
Strawberry Coulis
Mint sprigs (for garnish)

Steps:

  • 1. Line a large colander with several layers of cheesecloth.
  • 2. In a large bowl, mix the yogurt with the sugar.
  • 3. In a separate bowl, beat the cream and the vanilla essence until stiff. Fold the cream into the yogurt.
  • 4. In a large bowl, beat egg whites with an electric mixer until stiff but not dry. With a spatula, carefully fold in the yogurt mixture and the orange rind.
  • 5. Transfer the mousse mixture to the prepared colander and place over a bowl. Cover with plastic wrap and place in the refrigerator to drain for at least 4 hours.
  • 6. When ready to serve, place one meringue on each of the 10 dessert plates. Top with some mousse and a few berries. Top each with a second meringue.
  • 7. Drizzle some strawberry coulis around each meringue and garnish with a few berries and a sprig of mint.

2 pinches cream of tartar
1/8 teaspoon salt
1/2 vanilla bean, seeds scraped from pod; or 1 teaspoon vanilla extract
1/2 cup superfine sugar.

Steps:

  • Heat oven to 200 degrees. Use an electric mixer to beat egg whites with cream of tartar, salt and vanilla. When whites begin to hold stiff peaks, gradually add half the sugar. When peaks become glossy, gently fold in remaining sugar.
  • Line a baking sheet with parchment paper, and use a pastry bag with a star tip or a Ziploc bag with a corner cut out to form small mounds of meringue mixture, each about an inch wide and tall.
  • Bake meringues until hard, about 2 hours. Meringues are ready when they release from parchment paper. Turn oven off, prop door open and allow meringues to sit in oven for another hour or so.

3 egg whites at room temperature (save yolks for another use)
1/8 tsp. salt
1 cup white sugar, added one tablespoon at a time
1/2 tsp. vanilla, clear if you have it

Steps:

  • 1. Line two large cookie sheets with parchment paper. Preheat oven to 250 degrees.
  • 2. Beat 3 egg whites and 1/8 tsp. salt with a hand mixer until foamy. Measure out 1 cup of sugar and add to the egg whites one tablespoon at a time, mixing well at medium speed after each addition.
  • 3. Continue mixing at medium speed until very firm peaks form and sugar has dissolved. (The peaks should hold and not flatten when left alone for a couple of minutes.)
  • 4. Very gently fold in 1/2 tsp vanilla. Drop by rounded teaspoonfuls onto parchment paper. Bake for 40 minutes at 250 degrees. Do not allow to brown. Let cool completely and store in airtight containers or ziplock bags. Will stay fresh for 2-3 weeks at room temperature making them ideal for early holiday baking.

3/4 cup sugar
1 vanilla bean, seeds scraped
large pinch of salt
large pinch of cream of tartar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 200 degrees F. Combine egg whites, sugar and vanilla bean seeds in a heat-proof bowl (I used the metal bowl of my stand mixer). Set bowl over a pot of simmering water and stir until sugar dissolves and mixture is warm (not hot), about three minutes. Add salt, cream of tartar and cinnamon. Beat with a mixer on medium-high speed until stiff, glossy peaks form and meringue is mostly cool. This will take 5-7 minutes depending on your mixer. Fill a pastry bag (fitted with your tip of choice-or you can just cut the end off after filling) with the meringue. Pipe meringues into circular shapes about 1 3/4- to 2-inches in diameter on 2 parchement paper-lined baking sheets. Bake the meringues until crisp on the outside and still slightly soft on the inside, about 1 hour and 15 minutes. Cool completely on a wire rack.
