JUICE PULP VEGGIE BURGERS



Juice Pulp Veggie Burgers image

These veggie burgers are not only packed with a lot of flavor and nutrients, but they're also very economical because they're made with leftover pulp from juicing.

3 cups pulp from juicing such as carrots, celery, beet, spinach, cucumber, etc
1 small onion, finely minced
2 garlic cloves, finely minced
1 teaspoon dried oregano
1/2 teaspoon cumin
1 teaspoon salt
2 teaspoons chili powder
1 large egg
3/4 cup plain breadcrumbs
2 tablespoons coconut oil, for frying
6 whole grain buns
2 tablespoons mayonnaise or 2 tablespoons mustard
6 lettuce leaves
2 medium tomatoes, sliced

Steps:

  • In a large bowl, combine the juice pulp, onion, garlic, oregano, cumin, salt, chili powder, egg and breadcrumbs until well incorporated. The mixture should stay together when squeezed. If it's too wet, or is falling apart, try mixing in a bit more breadcrumbs as needed. Portion out into 6 equal mounds, and then shape into patties using your hands. Place on a baking sheet or plate and continue shaping each one.
  • Place a griddle pan over medium-high heat. Once hot, grease with 1 tablespoon coconut oil and fry 3 patties at a time. Cook for about 2 to 4 minutes on the first side, or until golden brown, and then flip over and cook for 1 to 2 minutes longer. Return to plate. Grease the griddle once more with the remaining coconut oil and cook the remaining 3 patties in the same way.
  • To assemble the burgers, split the buns open, and toast, then spread with mayo or mustard if you wish and fill with a patty, lettuce and slice of tomato. Sandwich together and serve immediately.

1 (540 ml) can black beans
1/3 cup onion, coarsely chopped
1 garlic clove, minced
1 egg
3 tablespoons barbecue sauce or 3 tablespoons ketchup, divided
1 tablespoon Worcestershire sauce
1 teaspoon vegetable oil
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/3 cup all-purpose flour
1/2 cup dry breadcrumbs
1/2 cup cheddar cheese, shredded

Steps:

  • Drain beans, then rinse with cold water. Drain well, then pat dry with paper towels. Place in a food processor fitted with a metal blade. Add onion, garlic, egg, 2 tbsp (30 mL) of the barbecue sauce, Worcestershire, oil, salt and pepper. Pulse just until beans are about the size of peas. Don't purée. Turn into a large bowl.
  • 2. Stir in flour with a spatula until evenly mixed. Sprinkle with bread crumbs. (Only store-bought bread crumbs or crackers ground in a processor until very fine will work.) Stir inches Mixture will be very thick. Scatter with cheese and work in with your hands. Divide mixture into 6 portions. Using well-floured hands, shape into burgers, about 1/2 in (1 cm) thick. If making ahead, refrigerate in a sealed container up to 1 day or freeze.
  • 3. Cook burgers in a well-oiled frying pan over medium heat for 5 minutes, or until browned on the bottom. Turn over and spoon the remaining barbecue sauce on top. Cover and continue cooking until heated through, about 5 minutes more.

19 ounces black beans
1/3 cup onion, coarsely chopped
1 garlic clove, minced
1 egg
3 tablespoons barbecue sauce or 3 tablespoons ketchup
1 tablespoon soya sauce or 1 1/2 teaspoons HP steak sauce
1 teaspoon canola oil
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/3 cup all-purpose flour
1/2 cup dry breadcrumbs (must be store bought to work) or 1/2 cup cracker crumb, ground in processor until very fine (must be store bought to work)
1/2 cup old cheddar cheese, shredded
6 crusty bread rolls

Steps:

  • Drain and rinse beans with cold water.
  • Drain again and pat dry with paper towels.
  • Add beans, onions, garlic, egg, 2 tbsp barbecue sauce, Worcestershire sauce, oil, salt and pepper to food processor.
  • Pulse until beans are the size of peas.
  • Place pulsed mixture into a large bowl.
  • Add flour and stir until evenly mixed.
  • Add bread crumbs and mix well.
  • Add cheese and mix with your hands (mixture is thick).
  • Divide mixture into six portions.
  • Flour your hands and shape into 1/2-inch thick burgers (if you don't flour your hands the mixture will stick to them).
  • The burgers may be refrigerated in a sealed container for 1 day or frozen until ready to grill.
  • Oil your grill and preheat grill to medium-high.
  • Place burgers on grill.
  • Brush with remaining barbecue sauce.
  • Barbecue with lid down until hot, turning once, for 8 to 10 minutes.
  • Serve on buns with desired toppings i.e. pickles, onions, tomatoes, salsa.
  • For vegetarian make sure you use either a vegetarian Worcestershire sauce or the soy sauce.

VEGAN NUTRITIONAL YEAST AND TVP VEGGIE BURGERS



Vegan Nutritional Yeast and Tvp Veggie Burgers image

From the Red Star Nutritional Yeast cookbook, these look yummy and use ingredients I have around my house that are cheap! (Even though the nutritional yeast isn't the main star in this!) I didn't know what granules were, so I used onion and garlic powders in 1/2 tsp each and they turned out fine. Because these patties use flour and oats, they are not gluten-free but they do lack eggs and dairy and are purely vegan. TVP and nutritional yeast are wonderful sources of protein and are inexpensive with long shelf life, making them perfect vegan staples! Us veg-heads shall not be left out during BBQ season!

1 cup textured vegetable protein
1/4 cup quick-cooking rolled oats (NOT instant according to the cookbook)
1/2 teaspoon dried oregano
1/2 teaspoon dried basil, flakes
1/2 teaspoon dried parsley flakes
1/2 teaspoon onion, granules
1/2 teaspoon garlic granules
1/4 teaspoon mustard powder
3/4 cup water (almost-boiling)
2 tablespoons organic ketchup
2 tablespoons soy sauce (or tamari or Bragg's)
1 tablespoon creamy peanut butter (can also use tahini, or any other nut or seed butter)
1/4 cup whole wheat pastry flour
1 tablespoon nutritional yeast

Steps:

  • Place the water into a bowl and add the oregano, basil, parsley flakes, onion, garlic granules (or powders), and mustard powder with the oats and TVP chunks, and mix well.
  • Add the ketchup and soy sauce to the mixture, and let rest for 5 minutes so the TVP can soak up the flavors.
  • Add the nut/seed butter and incorporate.
  • Add the whole-wheat pastry flour and nutritional yeast, and mix thoroughly.
  • Form about 4-6 flat patties by hand (or about 8-10 if you want slider size!).
  • Put a heavy-bottom skillet on medium heat and add a light coating of high-smoke point oil like grapeseed, canola, or olive oil and cook each patty for about 5-8 minutes on each side or until golden brown.
